If you like spicy non-veg curries to mop up with chapatis or parathas for dinner…then this recipe is for you. Chettinad cuisine is very famous for its fiery hot, lipsmacking spicy dishes. This mutton curry recipe is very very tasty and the best part is preparation is amazingly simple. This thick mutton curry requires very few ingredients to prepare. Ingredients

Mutton - 1/2 kg

Turmeric pwd - 1/4 tsp

Red chilli pwd - 1/2 tsp

Salt to taste

To Prepare Masala

Oil - 1 tsp

Cumin - 1/2 tsp

Pepper - 3/4 tsp

Red chilli - 5 to 6

Coriander seeds - 2 tsp

Cinnamon - 2

Cloves - 4

Cardamom - 2

Star anise - 1

Curry leaves

To Make Mutton Curry

Oil - 1 tbsp

Cumin seeds - 1/2 tsp

Bay leaf - 1

Onion - 2

Ginger garlic paste - 1 tbsp

Tomato - 2

Saunf pwd - 1/2 tsp

Curry & coriander leaves

Instructions

1.

Wash and chop mutton to bite sized pieces

2.

Add mutton to mixing bowl, add turmeric pwd, red chilli pwd and salt.

3.

Combine well and allow to marinate for minimum 20 mins.

4.

Add marinated mutton to cooker and add 1/2 cup of water.

5.

Combine and pressure cook for 5 whistles or until tender.

6.

Set it aside.

To Prepare Masala

Heat 1 tsp of oil.

9.

Add pepper, cumin, coriander, curry leaves, cinnamon, cloves, star anise, cardamom and red chilli.

Saute for few minutes.

11.

Turn off flame.

Add to blender.

13.

Add 1/4 cup of water and grind to smooth paste.

Set it aside.

To Make Mutton Curry

Heat 1 tbsp of oil in frypan.

17.

Add cumin seeds and wait to splutter.

18.

Add sliced onions and saute until light brown.

19.

Add ginger garlic paste and toss.

20.

Add sliced tomato and cook until soft.

21.

Add masala paste and combine.

22.

Cover and cook for few minutes.

23.

Add the water (that is along with cooked mutton) and cook.

24.

Cook in high flame until masala thickens.

25.

Add cooked mutton and cook for few more mins.

26.

Add saunf pwd and taste & adjust salt and seasonings.

27.

Turn off flame.

28.

Sprinkle freshly chopped curry & coriander leaves.

29.

Lipsmacking flavorful delicious mutton curry is ready.

30.

It pairs up excellent with roti, chapathi, puri & rice dishes.
