In this recipe, the mutton is cooked on low heat to retain its juicy, soft and tenderness. Ingredients

To Marinate:

Mutton pieces - 1/2 kg

Turmeric pwd - 1/4 tsp

Red chilli pwd - 1/2 tsp

Ginger garlic paste - 1 tsp

Garam masala pwd - 1/2 tsp

Yoghurt - 1 tbsp

Salt - 1/2 tsp

To make Mutton Curry:

Oil - 2 tbsp

Cumin - 1/2 tsp

Pepper - 1/2 tsp

Bay leaf - 1

Cinnamon - small stick

Cloves - 4

Green chilli - 1

Red chillil - 2

Onion - 2

Tomato - 2

Ginger garlic paste - 1 tbsp

Turmeric pwd - 1/4 tsp

Red chilli pwd - 1 tsp

Coriander pwd - 2 tsp

Pepper pwd - 1/2 tsp

Saunf pwd - 1/2 tsp

Garam masala pwd - 1/2 tsp

Mutton masala pwd (optional) - 1/2 tsp

Dried fenugreek leaves - 1/2 tsp

Fresh coriander leaves

Fresh curry leaves

Salt to taste

Instructions

1.

Clean and wash mutton pieces.

2.

Drain water thoroughly.

3.

Marinate with turmeric pwd, salt, red chilli pwd, ginger garlic paste, garam masala pwd and yoghurt.

Mix well and allow to marinate for 30 mins minimum.

5.

Heat cooker pan.

6.

Add oil and heat it.

7.

Add cumin, pepper, bay leaf, cinnamon and cloves.

Wait to splutter.

9.

Add curry leaves, red chilli, green chilli and toss.

10.

Add sliced onions, salt and toss until light brown.

11.

Add ginger garlic paste and saute further.

12.

Add sliced tomatoes and cook till soft.

13.

Add marinated mutton and mix well with masala.

Allow to cook for 5 mins in low medium flame.

Add turmeric pwd, red chilli pwd, coriander pwd, pepper pwd and saunf pwd.

Combine the masala well.

Add finely sliced mint & coriander leaves.

18.

Add 1/2 cup of water and mix.

Close the cooker and cook until the mutton is tender and done. (I usually cook for 4 whistles in high flame and simmer flame for 10 more mins)

Once the pressure goes off, open the lid and stir the mutton curry.

Add garam masala pwd, mutton masala pwd and dried fenugreek leaves.

22.

Taste and adjust salt.

23.

Allow the curry to cook until it reaches thick desired consistency.

24.

Turn off flame.

25.

Sprinkle curry and coriander leaves.

That's it flavorful delicious mutton curry is ready.

Transfer to serving bowl.
