Nothing can beat delicious, flavorful, creamy and grainy kulfi icecream during the summer season. That too...if its homemade..then the enjoyment is doubled. Making perfect kulfi at home is very easy. This malai kulfi recipe does save lot of time and tastes heavenly with a light hint of cardamom flavor. Try delightful Indian dessert malai kulfi wtih this easy video recipe.

Ingredients

Whole milk - 1 l

Koya / Mava or fresh cream - 1 cup

Saffron strands - a few

Sugar - 1/2 cup

Cardamom pwd - 1/4 tsp

Sliced badam & pistachio nuts - 1/4 cup

Instructions

1.

Soak few saffron strands in 2 tbsp of milk.

2.

Add thick whole milk to pan.

3.

Keep the flame in low and boil milk with constant stirring.

4.

Keep boiling until the milk reaches half its volume (approx. 30 mins) as shown in video.

5.

Now add koya (mava) or fresh cream or evaporated milk and stir the thick milk.

6.

Keep stirring for another 5 to 10 mins or until the milk reaches creamy consistency.

7.

Add sugar and stir well.

8.

Add cardamom pwd and saffron infused milk.

9.

Add finely sliced badam and pistachio nuts.

10.

Stir well and boil for 2 more mins.

11.

Turn off flame and allow to cool.

12.

In kulfi mould or in serving bowl or tray add few sliced nuts to the bottom.

13.

Fill the kulfi mould with kulfi mixture.

14.

Seal the kulfi mould and freeze it for minimum 6 to 7 hours or preferably overnight.

15.

Once the kulfi is well set, show the mould in running water, so that the kulfi unmoulds easily. Also you can remove by sliding a knife at the edges of the kulfi.

16.

Yummy & creamy delicious homemade malai kulfi is ready.
