Veppam poo rasam is one of the healthy & famous Rasam recipe of Indian cuisine. Its extremely easy to prepare and I learnt it from my MIL. Usually the neem tree flowers during April month. We used to collect and dry it to crisp. It can be powdered and used in various dishes like pachadi, rasam etc. We know Veppam poo is loaded with healthy nutrients & medicinal properties. It is very good for digestion and stomach cleaning. Try to include this healthy soup in your diet atleast once in a week. Since the dried neem flowers are fried in ghee/ oil, you wont feel the bitterness and the rasam tastes absolutely addictive! Lets see how to prepare this flavorful rasam in this easy video recipe!

Ingredients

Neem flowers dried - handful

Thick tamarind juice - 1 cup

Tomato - 1

Garlic - 4

Red chilli - 1 or 2

Pepper - 1/2 tsp

Cumin - 1/2 tsp

Curry leaves - a few

Jaggery - 1 tsp

Hing / asafetida pwd - 1/2 tsp

Ghee - 1 tsp

Fresh coriander leaves

Salt to taste

To Temper:

Oil - 1/2 tsp

Mustard - 1/4 tsp

Cumin - 1/2 tsp

Split urad dal - 1/2 tsp

Curry leaves - a few

Instructions

1.

Clean and dry the neem flowers until they're crispy and done.

2.

You can store this dried neem flowers in air tight container. It has a long shelf life.

To start with, soak a ball of tamarind in warm water for 20 mins and extract thick tamarind juice out of it.

In a blender, add tomato, garlic, red chilli, pepper, cumin and curry leaves.

5.

Grind to coarse paste.

6.

Transfer to mixing bowl.

7.

Add tamarind juice and 3 cups of water.

8.

Add turmeric pwd, hing, jaggery and salt.

9.

Stir well.

10.

Keep in flame and allow to boil.

11.

Meanwhile heat ghee in small frypan.

12.

Add dried neem flowers and saute in low flame until golden. (be careful not to burn it)

13.

Turn off flame.

14.

Wait for the rasam to boil. (stop the flame, once the first bubble appears. If its overboiled the rasam turns bitter)

Now add the ghee fried neem flowers to hot rasam and turn off flame. Enjoy the visual treat of neem flowers floats beautifully on top of the rasam & its tempting aroma.

16.

Heat 1 tsp of oil in small frypan.

17.

Temper with mustard, cumin, split urad dal and curry leaves.

18.

Pour it over hot rasam.

19.

Sprinkle freshly chopped coriander leaves.

20.

Healthy flavorful delicious Veppam poo rasam is ready.

Enjoy hot with steamed rice or serves best as healthy soup.
