Then, here goes the colorful and filling omelette recipe that is packed with flavors and can be prepared just in few minutes. This Spanish potato omelette or “tortilla” also makes a perfect dish for picnics and get-together parties. This tasty dish is made with eggs and just lots of hearty goodness from crispy fried potatoes and crunchy veggies.

Ingredients

Eggs - 2

Onion - 1

Tomato - 1

Capsicum - ½

Potato - ½

Pepper pwd - ½ tsp

Oil - 2 to 3 tsp

Salt to taste

Instructions

1.

Beat egg in a small bowl and keep ready

2.

Slice onion, tomato and capsicum to fine cubes

3.

Wash and clean the potatoes

4.

Peel the potatoes and slice it to thin pieces

5.

Heat oil in a fry pan

6.

Place them in the frypan gently

7.

Shallow fry the potatoes for 2 mins each side or until browned

8.

Add onion, capsicum slices and toss well

9.

Add tomato slices and cook for a minute

Add salt and pepper pwd

11.

Stir well

12.

Add the beaten egg and spread completely over the veggies

Drizzle oil to the sides of the omelette

Sprinkle crushed pepper pwd

15.

Cover and cook in low medium flame for few minutes until almost set and golden brown underneath

Turn off flame

Healthy egg omelette in Spanish style is ready
