Egg Fried Rice - Restaurant Style Fried Rice Recipe / Quick & Easy Fried Rice Recipe

Egg Fried Rice is a classic Indo-Chinese dish made with lots of veggies & scrambled eggs. Its absolutely most adorable by kids & adults coz of its colour & tempting aroma.  
It can be prepared in a jiffy and has a special place in my home. Also this easy meal is a great way to use up left over rice..& vegetables.
Try this quick & easy recipe which can surely make your dining table more appealing & attractive..!
Ingredients
·       Basmati rice / long grained rice - 1 ½  cup
·       Pepper pwd              - ½ tsp
·       Eggs                        - 3
·       Grated ginger & garlic           - 1 tbsp
·       Onion                       - 1
·       Chopped carrot, capsicum, cabbage  - 1 cup
·       (you can use any veggies like French beans, celery, peas, spring onions, cauliflower, etc)
·       Green chilly              - 1
·       Vinegar                    - 1 tsp
·       Chilly paste              - 1 tsp
·       Soya sauce              - 2 tsp
·       White pepper pwd     - 1 tsp
·       Salt to taste
·       Fresh coriander leaves
Method:
1.         Wash and soak basmati rice in water for 20 mins.
2.         Drain the water and cook the basmati rice by adding ½ cup of water and 1 tsp of oil.
3.         Spread the cooked basmati rice in a wide bowl and allow to cool.
       Chop all the veggies and keep ready.
4.         Add salt and pepper pwd to a small mixing bowl.
5.         Add 2 tsp of water and mix well.
6.         Beat the eggs and pour into the bowl.
7.         Whisk well until it is mixed.
8.         Heat 1 tsp of oil in a pan.
9.         Add the egg mixture and keep tossing until is scrambled.


10.       Keep the scrambled eggs aside.
11.       Now heat 1 tbsp of oil in the same pan.
12.       Add grated ginger and garlic and saute for a minute. Add onions and toss well.
13.       Add finely chopped veggies, salt and toss further for 2 minutes in medium flame.
14.       Add vinegar, chilly paste, soya sauce and white pepper pwd.
15.       Mix well.
16.       Add cooked basmati rice.
17.       Add scrambled eggs.
18.       Fluff gently. Take care not to break the rice grains.
19.       Sprinkle freshly chopped coriander leaves and turn off the flame.
20.      That's it!! Delicious restaurant style Egg fried rice is ready. It tastes great as a meal on its own.
21.       We had it with spicy chole masala.
