 Sev Puri :

Sev Puri is one of my all time favorite evening time chaat. This is very quick to make at home.

As the name indicates, this delicious snack is prepared by topping Sev on puris or papdi’s, along with a  wonderful combo of ingredients.  It is a speciality street snack of Mumbai.

I am sure you will all love this delectable yummy chat recipe..!

Ingredients:

To Make Puri’s:

·         Sooji / Rava                - ½ cup
·         Maida / All purpose flour  - ¼  cup
·         Warm water                   - as needed
·         Salt to taste

To make Sev Puri Chat:

·         Sliced onion               - ¼ cup
·         Sliced tomato             - ¼ cup
·         Chopped coriander     - 2 tbsp
·         Sweet chutney            - 1 to 2 tsp
·         Green chutney             - 1 to 2 tsp
·         Cumin pwd                 - ¼ tsp

·         Chat masala pwd        - 1 tsp
·         Lemon juice                - few drops
·         Sev                             - ½ cup

Method:

To make Crispy Puri:

1.     In a mixing bowl, take sooji / rava and maida.
2.     Add salt, mix well.

3.     Sprinkle warm water and knead it to soft smooth dough.

4.     Cover it with a damp cloth and keep aside for 10 miins.

The dough should have soft & smooth texture.

5.     Divide it to equal sized balls.

6.     Dust it with maida flour and roll it to very thin shape.  ( I have cut the edges with cutter to get perfect round shape )

7.     Now cut into small round shapes with the help of any lid, as shown in the pic.

8.     Heat oil in a frypan.
9.     Drop the pooris in the hot oil gently in batches.

10.  Keep the flame in  low medium, and fry till the puri’s are crisp and golden on both sides.

11.  Yummy poori’s are ready.

To make Sev Puri Chat:

1.     Crush the puri’s and arrange them on a plate.

2.     Top it with sliced potato, onion, tomato and chopped fresh coriander leaves.

3.     Add about 1 tsp of sweet and green chutneys on top of them.

Wow! I can actually make this! I used to have a small brass device for pressing out different types of sev, and I sold it at a garage sale. I've been regretting it ever since, but your recipe gives me hope!
