Hy Friends,
Its Women’s Day ! Every year,  8 th march is celebrated around the world as  International  Women’s  Day..!!
It is an occasion to honour and praise women for their efforts and accomplishments.  It is meant to appreciate those who have the biggest but quietest influence in our lives.
I wish all my dear friends a very  Happy  Women’s  day..:)
On this special day, I am very glad to share an all time favorite sweet recipe “ Rava Ladoo “.
Rava  Ladoo  is one of the wonderful delectable Indian dessert and it tastes absolutely delicious. This popular sweet is prepared from rava / sooji or semolina, ghee, little milk, sugar, dry fruits & cardamom.
Also it is one of the common sweet prepared in almost every household during festivals like Krishna Jayanthi, Ganesh chaturthi and Diwali.  The gracious addition of nice aromatic  home  made  ghee  makes the ladoos scrumptious.
Try this simple and exotic sweet recipe & flare up your tastebuds..;)

Ingredients:
·         Rava / Sooji               - 1 cup
·         Sugar                        - ¾ cup
·         Ghee                         - ¼ cup
·         Milk                           - 2 to 3 tbsp
·         Cardamom pwd           - ¼ tsp
·         Cashew nuts & raisins - ¼ cup
Method:
1.     Heat ½ tsp ghee in a kadai.
2.     Add rava / sooji to it and roast continuously in low flame , till the rava releases a nice aroma all over the house.
3.     Take care not to brown the rava.
4.     Remove from heat and cool completely.
5.     Meanwhile add sugar in the dry mixer and grind it to smooth pwd.
6.     Take it aside.
7.     Now grind the roasted rava to a fine pwd.
8.     Take a mixing bowl and add powdered rava and sugar.
9.     Mix them thoroughly.
10.  Heat 2 tsp ghee in a small pan.
11.  Roast cashew nuts and raisin to golden.
12.  Add  the ghee roasted cashews, cardamom pwd and raisins to the rava mixture.
13.  Heat up remaining ghee and add slowly to the mixture with continuous mixing with a laddle.
14.  Once the mixture looks like bread crumbs, sprinkle few tsp of milk and continue to mix until the ladoo mixture comes together .
15.  When the ladoo mixture is slightly warm enough to handle, quickly form them into balls ( don’t let the mixture to get dry. If its dried , add few drops of ghee or milk , mix well and press into balls )
16.  Make into lemon-sized balls. And set aside in a plate to cool.
17.Melt-in-the mouth   Rava Ladoos  are ready..:)
18. It stays fresh for couple of days, when stored in air tight containers. You can refrigerate it for longer shelf life.

My Notes:
·            While roasting the rava, make sure the flame is in low mdium or else there are chances for the rava to get burnt at the bottom.
·         The sweetness can be either more or less, as per your taste and choice. This recipe gives you a mildly sweet  rava ladoo.
·            If you prefer your ladoos little firmer and not very soft, decrease the amount of ghee/ milk while adding to the rava mixture.
