How to make Egg Paratha / Spicy Andda Parantha / Step by Step:

Egg Paratha:

Parathas are whole-what Indian flat-bread, a staple bread in North Inda. It can be made plain or stuffed with different nutritious fillings. 

Egg  Paratha  is one of the wonderful recipe for Breakfast.  It is a favorite at our home and I make very frequently. The hot Parathas just off the stove top with a light smeading of ghee on top, tastes heavenly with raitha, pickles or sauces.

It is prepared with the combination of beaten egg, wheat flour, salt and spices. 







Prepare authentic  Egg  Paratha  by following this easy recipe and enjoy for breakfast/ brunch or any time you wish..:)




Ingredients:


For Dough:


·         Whole wheat flour                   - 1 cup
·         Ajwain seeds                          - ½ tsp
·         Cumin seeds                          - ½ tsp
·         Turmeric pwd                         - ¼ tsp
·         Red chilly pwd                       - 1 tsp
·         Chopped coriander leaves
·         Salt to taste


For Stuffing:






·         Eggs                                     - 2 or 3
·         Oil                                          - 2 tsp
·         Cumin seeds                          - ½ tsp
·         Onion                                     - 1
·         Ginger garlic paste                 - 1 tsp
·         Green chilly                            - 1
·         Turmeric pwd                         - a pinch
·         Coriander pwd                        - ½ tsp
·         Garam masala pwd                 - ½ tsp
·         Lime juice                              - few drops
·         Chopped coriander leaves
·         Salt to taste





Method:









To make Dough:



1.     In a mixing bowl, add whole wheat flour, salt, ajwain or carom seeds, cumin seeds, turmeric pwd, red chilly pwd and chopped coriander leaves.



2.     Mix well.



3.     Add small amount of water and knead it to smooth non-sticky dough.
4.     Wrap it with plastic paper and keep aside for 20 mins & roll it to balls.







To Prepare Stuffing:




5.     Heat oil in a non stick pan.
6.     Add cumin seeds, chopped onion and sauté till it becomes transculent.


7.     Add ginger garlic paste and sauté till raw smell disappears.
8.     Add finely sliced green chilly and sauté further.

9.     Add turmeric pwd, red chilly pwd, coriander pwd and fry for 2 minutes.


10.  Break egg and add directly to the pan.
11.  Mix it quickly and scramble well.

12.  Add salt and chopped coriander leaves and sauté further.
13.  Add garam masala pwd and lime juice.


14.  Mix well.
15.  Turn off flame.



16.  Stuffing for egg paratha is ready.





To make Parathas:  




17.  Take the dough from the wrap, add 2 tsp of oil and knead well for two more minutes.
18.  Divide it into equal sized balls.


19.  Take one ball, flatten it and dip it in flour and roll it into round disc.



20.  Apply little oil and flour on it.
21.  Add 2 tbsp of egg stuffing inside.


22.  Close the edges and make it to ball shape.



23.  Sprinkle some flour and roll out again carefully into roti shape.





24.  Heat a skillet / tawa.
25.  Add the paratha and cook it from one side.




26.  Drizzle oil to the sides and flip over both the sides, till golden brown spots appear on both the sides.





27.  Yummy egg paratha is ready.





28.  Repeat the same to make more Parathas.







29.  Serve hot with raitha, sauce or with pickle.

Looks soo good Jay. One of my sister's cook used to do the stuffing in a different way. He would do it between two chapathi, I have tried that, but this one looks nice. Stuffing and cooking..

We enjoy a lot of stuffed parathas at home what with my husband being a Punjabi :D But never tried an egg stuffed paratha... though I have had variations like the bengali egg rolls and the south indian maida paratha that is dipped in egg and fried! your recipe looks far healthier and yummier!
