Healthy grilling methods you should try this season


It is a perplexing subject to think that you have to change all your eating habits in order to remain healthy and physically fit. If you are a lover of grilled meat, then you know that there comes a time that you need to think about your eating habits. The most worrisome bit in this whole thing is keeping up with the latest information on what is right and what is not.


Go lean on your meats


Like the deliberation of choosing between gas vs. charcoal grill, the line between leaving the fat on your meat and removing it is a thin one. Ideally, the fat on meat adds to the flavor of the result after smoking. However, if you are looking to get a healthier way to get your grilling going, then you need to consider going lean on your meats. Trim off any excess fats that are visible on your meats. This will reduce fats dripping on your grill that cause flare-ups, which will also save you from the unhealthy grilling of eating charred meat. While at it, remove the skin from poultry before hitting your smoker.


Always marinate


Marinating, to most people, seems like a way to get more flavors and seasoning on food. However, there is more to marinating than meets the eye. When you soak your meat a couple of minutes before grilling it, you reduce the formation of HCAs. The marinade forms sort of a protective layer on the meet that acts as a barrier, which is health-promoting in grilling meats.
For your marinade, ensure you have:
  • An acid – to encourage enzyme action and to tenderize meat. These can be found in juices like apple juice, lime and lemons, and also in wines and yogurts.
  • Oil – usually for moisture. try oils like olive oils, canola, among others
  • Herbs and spices – as per your preferences


Pro tip: refrigerate any foods you plan to marinate for more than 30 minutes. This way, you prevent the formation of bacteria on your meat.


Pick the healthier proteins


All meat can be smoked, but not all of it is fit as a healthy grilling option. Fishes like salmon, fillets, skinless chicken and other lean poultry, are the best choices. Opt for grilling recipes like chicken kebabs, turkey burgers, mushrooms, round cuts for other meat like pork and beef. 


Grill fruits for dessert


Fruits are always a healthier option than doing meats alone. The natural sugars in fruits caramelize amazingly in the high grill heat. Try fruits like apples, pears, and pineapples, which are great served with smoked meats.

While at it, toss in some vegetable in the heat. The best bit about grilling vegetables, other than being a healthy option, it does not form HCAs. You can grill them on their own or along with your meats. However, while possible, try to separate your meat from veggies. This way, you can set your heat and time appropriate to the food type you are grilling.


Flip doesn’t fork


Most people feel like using a fork to turn the meat on the grill is easier and faster. However, you stand to lose a lot of juices on your meat as you poke holes on the skin through to the meat. The juices you release from the meat may drip on your smoker, which contributes to the production of FCA which is also unhealthy. Instead, use a pair of tongs or a spatula to flip your steak a from side to side. You will also achieve the grill marks which makes your meat appear like one grilled by a pro.


Keep your grill clean


Over and above, the healthiest way to grill your food is by keeping your smoker clean at all times. After cooking your food the charred bits of the food stick on the grill. If left, they encourage bacteria to grow, which is unhealthy. Instead, always clean your grill immediately after grilling, when the grill is hot.

  • Raw mango - 2
  • Oil - 1 tbsp
  • Turmeric pwd - 1/4 tsp
  • Green chilli - 1
  • Jaggery - 1 cup
  • Salt - 1/2 tsp
  • Mustard - 1/4 tsp
  • Cumin - 1/2 tsp
  • Split urad dal - 1/2 tsp
  • Red chilli - 1 or 2
  • Curry leaves - a few

Method


  1. Take raw mangoes.
  2. Peel off the skin.
  3. Grate to fine shreds as shown in video.
  4. Soak jaggery in water for 10 mins.
  5. Take thick jaggery water out of it by filtering the impurities at the bottom.
  6. Heat oil in frypan.
  7. Add grated mango, salt, turmeric pwd and green chilli.
  8. Saute for a minute.
  9. Add 1/4 cup of water and cook in medium flame by covering with lid.
  10. Once the mango is cooked soft, add thick jaggery water.
  11. Heat in high flame until the pachadi thickens.
  12. Turn off flame.
  13. Heat a tsp of oil for tempering.
  14. Add mustard, cumin, split urad dal, red chilli, curry leaves and neem flowers (optional)
  15. Wait to splutter.
  16. Add to pachadi and mix.
  17. Healthy and traditional Mango pachadi is ready.
  18. Enjoy..!

Method

  1. Slice paneer to fine cubes.
  2. Add to bowl.
  3. Add maida flour, corn flour, ginger garlic paste, salt, raw sugar, pepper pwd, red chilli pwd, oregano, coriander leaves, lemon juice and mix.
  4. Add little water and mix to thick paste.
  5. Add the paneer slices and coat with the marinade.
  6. Let it marinate for 5 mins.
  7. Take the marinated paneer slices and coat with bread crumbs.
  8. Arrange all the coated paneer slices in plate as shown in video.
  9. Heat oil in fry pan.
  10. Deep fry the paneer cubes in medium flame until both sides are golden brown and crispy.
  11. Drain in kitchen tissue.
  12. Lipsmacking delicious paneer nuggets are ready.
  13. Enjoy hot with tomato ketchup or any dip of your choice.

  4. Add soaked almonds, cashew nuts, pistachio nuts, walnuts and poppy seeds along with soaked milk to blender.
  5. Add pepper pwd, fennel pwd, cardamom pwd and cinnamon pwd.
  6. Grind to smooth paste.
  7. Heat 600 ml of milk.
  8. Add few saffron strands and sugar.
  9. Stir good.
  10. Add the nuts paste and stir well.
  11. Turn off flame.
  12. Allow to cool.
  13. Transfer to serving cups.
  14. Garnish with chopped nuts and serve chilled.
  15. Lipsmacking delicious Shahi thandai is ready.

Method

  1. Wash and slice cucumber to small pieces.
  2. Add to blender.
  3. Add green chilli, grated ginger, mint and coriander leaves.
  4. Add 1/2 cup of water and grind to smooth paste.
  5. Transfer the cucumber paste to mixing bowl.
  6. Add salt, cumin pwd, turmeric pwd, ajwain pwd, sugar (optional) and stir well.
  7. Add besan flour.
  8. Add wheat flour little by little and knead.
  9. Add oil and knead to smooth dough.
  10. Let the dough rest for 5 mins.
  11. Divide into equal sized balls.
  12. Take a dough ball, dust with flour and roll it to round discs as shown in video.
  13. Heat a frypan.
  14. Place the roti on hot pan.
  15. Drizzle butter or oil and fry on both sides until the roti is cooked to golden brown.
  16. Remove from pan.
  17. Healthy and yummy cucumber roti is ready.
  18. Serve hot with any curry or yoghurt or pickle.

  • Kambu / pearl millet or bajra - 1 cup
  • Idli dosa - 1 cup

Method

  1. Add idli rice, kambu and urad dal in a mixing bowl.
  2. Add water and wash well.
  3. Drain water and add 2 cups of water and soak it.
  4. Let it soak for 3 to 4 hours.
  5. Drain water.
  6. Add to blender and grind to smooth batter.
  7. Transfer batter to mixing bowl.
  8. Add salt and vendayam (fenugreek pwd) to the batter.
  9. Mix well with hands and close with lid.
  10. Let the batter ferment for 6 to 7 hours.
  11. Once the batter is fermented, stir the batter good.
  12. Heat a dosa pan.
  13. Add a ladle full of batter in the hot pan, and spread in concentric circles as shown in video.
  14. Drizzle oil to the sides.
  15. Cook dosa on both sides until crispy and golden.
  16. Remove from pan.
  17. Healthy and delicious kambu dosai is ready.
  18. It combines excellent with chutney and sambar.
  19. My favorite combo is kambu dosa and kara chutney.

  6. Stir good.
  7. Allow to boil for a minute.
  8. Turn off flame.
  9. Add tulsi leaves and close the lid.
  10. Wait for 2 - 3 minutes for the flavors to infuse in the coffee.
  11. Filter and serve hot.
  12. Also you can add hot milk and enjoy the sukku coffee.

  • Milk - 2 cups

Method

  1. Heat 1 cup of water in a pan.
  2. Add grated ginger and allow to boil.
  3. Add cardamom pwd and stir.
  4. Add cinnamon pwd, pepper pwd, cloves and mint leaves.
  5. Allow to boil for few minutes.
  6. Add tea pwd and allow to boil.
  7. Once the dicotion thickens, add milk and sugar as shown in video.
  8. Let it boil for few minutes.
  9. Turn off flame.
  10. Filter the masala tea.
  11. Serve in cups.
  12. Irresistably flavorful delicious masala tea is ready.
  13. Enjoy hot..!

Beetroot Roti | Beetroot Paratha Recipe

Ingredients

  • Beetroot slices - 1 cup
  • Green chilli - 2
  • Ginger garlic paste - 1 tsp
  • Wheat flour - 2 cups
  • Cumin pwd - 1/2 tsp
  • Garam masala pwd - 1/2 tsp
  • Amchoor pwd - 1/2 tsp
  • Ajwain pwd (omam) - 1/2 tsp
  • Fresh coriander leaves
  • Salt to taste

Method

  1. Wash the beetroot and peel off the skin.
  2. Slice to small pieces.
  3. Add to blender. Add green chiili and ginger garlic paste.
  4. Add 1/4 cup water and grind to smooth paste.
  5. Transfer the beetroot paste to mixing bowl.
  6. Add salt, cumin pwd, garam masala pwd, amchur pwd, ajwain (omam) pwd and mix.
  7. Add wheat flour little by little and knead to soft dough.
  8. Add 2 tbsp of oil, fresh coriander leaves and knead.
  9. Let the dough rest for 5 minutes.
  10. Divide it to equal sized balls.
  11. Take a dough ball and dust with flour.
  12. Roll to flat disc as shown in video.
  13. Heat a frypan.
  14. Drizzle oil or butter to the pan.
  15. Place the paratha in fry pan, and fry to both sides until golden brown spots appear.
  16. Remove from hot pan.
  17. Colorful, healthy delicious beetroot paratha/ roti is ready.
  18. We love to taste beetroot paratha along with cucumber raitha.
  19. kids love this paratha due to its vibrant colour and mild sweet taste.

Method

  1. Heat a frypan.
  2. Add butter and melt.
  3. Add sliced paneer cubes and roast to golden.
  4. Set it aside.
  5. Add grated garlic and saute until light brown.
  6. Add sliced onion, spring onions, green chilli and saute.
  7. Add sliced veggies (carrot, beans and capsicum) and toss in high flame.
  8. Add salt, pepper pwd, soy sauce, vinegar, red chilli sauce, red chilli flakes and toss.
  9. Add sauted paneer cubes.
  10. Give a quick stir.
  11. Add cooked basmati rice and stir.
  12. Add finely chopped spring onions green.
  13. Toss in high flame.
  14. Turn off flame.
  15. Garnish with more spring onions.
  16. Lipsmacking flavorful delicious paneer fried rice is ready.
  17. Enjoy hot with tomato ketchup or any gravy of your choice.

Chana Dal Payasam

Here comes the festival special kheer recipe kadalai paruppu payasam or chana dal payasam. (also known as senaga pappu payasam). This is a very delicious and quick to prepare kheer recipe. Its perfect for festive moments like navratri, krishna jayanthi, vinayagar chaturthi, tamil new year, etc. Its prepared with coconut milk, jaggery, chana dal along with rich aroma of ghee, cardamom and coconut.

Ingredients

  • Chana dal (kadalai paruppu) - 1 cup
  • Ghee - 2 tbsp
  • Cashew nuts - 8
  • Coconut pieces - 2 tbsp
  • Cardamom pwd - 1/4 tsp
  • Thick coconut milk - 1 cup
  • Jaggery - 300 g

Method

  1. Heat 2 tbsp of ghee in fry pan.
  2. Add cashewnuts and sliced coconut pieces and roast.
  3. Roast until golden. Take it aside.
  4. Grate coconut to fine pieces.
  5. Add to blender and add 1/2 cup of water.
  6. Grind to smooth paste.
  7. Strain thick coconut milk out of it.
  8. Set it aside.
  9. Heat a dry pan.
  10. Add chana dal and roast for few minutes in low flame.
  11. Turn off flame.
  12. Add water and wash the chana dal.
  13. Add chana dal to pressure cooker and add 1 cup of water.
  14. Pressure cook for 3 to 4 whistles or until soft.
  15. Once the pressure goes off, open the lid and take the cooked chana dal.
  16. Add to blender (leaving behind few chana dal) and grind to smooth paste.
  17. Add chana dal paste to the pan.
  18. Heat with stirring.
  19. Add thick jaggery water and mix.
  20. Add elaichi powder and stir.
  21. Add thick coconut milk and allow to boil.
  22. Once it starts boiling, turn off flame.
  23. Add roasted cashewnuts and coconut bits.
  24. That's it ...flavorful healthy delicious chana dal payasam is ready.
  25. Enjoy warm or chilled.
