Today's recipe is a flavorful, delicious and colorful mutton biryani recipe. The homemade biryani always has its unique fragrant and taste. This biryani recipe has its perfect fusion of aroma and spice level. Try this hearty mutton biryani recipe that will amaze your family & guests.

Preparation Time - 10 Minutes

Cooking Time - 15 Minutes

Yield - 4 servings

Ingredients

Grated coconut - 1 cup

Garlic or poondu - 3 to 4

Red chilli - 4 to 5

Gingely oil (nallennai) - 2 tsp

Salt to taste

Instructions

1.

To start with..wash and soak basmati rice in water for 5 mins. Drain water and set aside.

Lets Cook Mutton First..

Clean and wash mutton pieces.

4.

Drain water and set aside.

5.

Heat 1 tbsp of oil in pressure cooker pan.

6.

Add saunf (sombu pwd) and saute.

7.

Add sliced onions, salt and green chiili.

8.

Toss until it turns light brown.

9.

Add ginger garlic paste and toss.

10.

Add sliced tomato and saute until cooked.

11.

Add mutton pieces and saute in high flame.

12.

Add turmeric pwd and red chilli pwd.

13.

Combine the masala.

14.

Add 1/2 cup of water and allow to boil.

15.

Cover the lid and pressure cook until the mutton is 3/4th cooked. (cook in high flame for 4 whistles and simmer flame for 5 minutes)

Once the pressure goes off, open the lid.

You can see the mutton is 3/4 th done. Set it aside along with masala water.

Lets Prepare Biryani Gravy

Heat 2 tbsp of oil and 1 tbsp of ghee in a frypan.

20.

Add cumin seeds, cloves, bay leaf, javithri, cinnamon, cardamom, star anise and saute.

21.

Add sliced onions, green chilli, salt and saute until transculent.

22.

Add ginger garlic paste and toss.

23.

Add sliced tomato and allow to cook.

24.

Add freshly chopped mint and coriander leaves.

25.

Fry for a minute.

26.

Add yoghurt, red chilli pwd and saute.

27.

Add cooked mutton along with masala water.

28.

Mix and allow to boil.

29.

Add the basmati rice and stir.

30.

Add water. (I took 3 cups of basmati rice. For that 5 and 1/2 cups of water to be added including mutton masala water)

31.

Taste and adjust salt and seasonings.

32.

Transfer the contents to pressure cooker.

33.

Cook for 1 whistle in high flame and simmer flame for 5 mins.

34.

Delicious flavorful homemade mutton biryani is ready.

35.

Serve hot with onion raitha or cucumber raitha.
