Today's recipe is a flavorful, delicious and colorful mutton biryani recipe. The homemade biryani always has its unique fragrant and taste. This biryani recipe has its perfect fusion of aroma and spice level. Try this hearty mutton biryani recipe that will amaze your family & guests.

Mutton Biryani Recipe

Ingredients

  • Grated coconut - 1 cup
  • Garlic or poondu - 3 to 4
  • Red chilli - 4 to 5
  • Gingely oil (nallennai) - 2 tsp
  • Salt to taste

Method

To start with..wash and soak basmati rice in water for 5 mins. Drain water and set aside.


Lets cook mutton first..

  1. Clean and wash mutton pieces.
  2. Drain water and set aside.
  3. Heat 1 tbsp of oil in pressure cooker pan.
  4. Add saunf (sombu pwd) and saute.
  5. Add sliced onions, salt and green chiili.
  6. Toss until it turns light brown.
  7. Add ginger garlic paste and toss.
  8. Add sliced tomato and saute until cooked.
  9. Add mutton pieces and saute in high flame.
  10. Add turmeric pwd and red chilli pwd.
  11. Combine the masala.
  12. Add 1/2 cup of water and allow to boil.
  13. Cover the lid and pressure cook until the mutton is 3/4th cooked. (cook in high flame for 4 whistles and simmer flame for 5 minutes)
  14. Once the pressure goes off, open the lid.
  15. You can see the mutton is 3/4 th done. Set it aside along with masala water.

Lets prepare biryani gravy

  1. Heat 2 tbsp of oil and 1 tbsp of ghee in a frypan.
  2. Add cumin seeds, cloves, bay leaf, javithri, cinnamon, cardamom, star anise and saute.
  3. Add sliced onions, green chilli, salt and saute until transculent.
  4. Add ginger garlic paste and toss.
  5. Add sliced tomato and allow to cook.
  6. Add freshly chopped mint and coriander leaves.
  7. Fry for a minute.
  8. Add yoghurt, red chilli pwd and saute.
  9. Add cooked mutton along with masala water.
  10. Mix and allow to boil.
  11. Add the basmati rice and stir.
  12. Add water. (I took 3 cups of basmati rice. For that 5 and 1/2 cups of water to be added including mutton masala water) 
  13. Taste and adjust salt and seasonings.
  14. Transfer the contents to pressure cooker.
  15. Cook for 1 whistle in high flame and simmer flame for 5 mins.
  16. Delicious flavorful homemade mutton biryani is ready.
  17. Serve hot with onion raitha or cucumber raitha.

Garlic Chutney 

Garlic chutney also known as poondu chutney or lahsun chutney or bellulli chutney is a speciality of Indian cuisine. Its a divine recipe for garlic and spice lovers. It tastes flavorful delicious with spicy tangy taste. Its one of my favorite recipe! The combo of garlic and red chilli enhances the taste and combines excellent with idli, dosa and all other Indian breakfast recipes.

Method

  1. Grate coconut to fine slices.
  2. Add grated coconut to blender.
  3. Add garlic, red chilli and salt.
  4. Grind to coarse paste.
  5. Add little water and grind to smooth consistency.
  6. Flavorful delicious garlic chutney is ready!
  7. Transfer to serving bowl.
  8. Add 2 tsp of gingely oil and mix.
  9. It makes a lipsmacking combo with idli, dosa, pongal, vada, kichdi & all other healthy South Indian breakfast recipes!

Method

  1. Clean and wash mutton liver pieces.
  2. Drain water completely.
  3. Heat oil in frypan.
  4. Add saunf pwd and saute.
  5. Add sliced onions and fry until light brown.
  6. Add ginger garlic paste and saute.
  7. Add slieed tomato, green chilli, coriander leaves and cook for a minute.
  8. Add mutton liver pieces and toss in high flame.
  9. Add turmeric pwd, pepper pwd and red chilli pwd.
  10. Add salt and toss.
  11. Add 1/2 cup of water and cook covered.
  12. Let it cook in high flame for 2 to 3 mins.
  13. Cook in simmer for 5 mins.
  14. Open the lid and roast until the curry thickens.
  15. Turn off flame.
  16. Garnish with fresh coriander leaves.
  17. Delicious Mutton liver fry is ready.
  18. Serve hot and enjoy!

Pudina Chutney 


Here comes the South Indian style healthy pudina chutney or mint chutney / green chutney recipe. It tastes heavenly delicious with spicy condiment flavor from fresh mint, coriander, curry leaves. It makes an ideal pair with idli, dosa, vada, masala vada, pongal, kichdi or any other delicious Indian breakfast. Try & enjoy this easy recipe at home and let me know how it turned out!

  • Salt to taste

Method
  1. Clean and wash mint leaves,coriander leaves and curry leaves.
  2. Drain water completely.
  3. Set it aside.
  4. Heat 1 tbsp of oil in frypan.
  5. Add urad dal and saute to golden.
  6. Add red chilli, tamarind, ginger and salt.
  7. Fry for a minute.
  8. Add mint leaves, coriander leaves and curry leaves.
  9. Saute for 2 to 3 minutes.
  10. Turn off flame.
  11. Add grated coconut and toss.
  12. Allow to cool.
  13. Transfer the contents to blender.
  14. Add little water and grind to smooth paste.
  15. Lipsmacking healthy delicious pudina chutney is ready.
  16. It makes a best combo along with soft idli, crispy dosa, etc.
