A quick and easy recipe to prepare yummy vada pav at home. The spicy potato vada stuffed inside pav buns along with green chutney and garlic chutney tastes divine and makes a filling snack for evening tea time or a meal. Check out the easy video recipe.

Ingredients

To prepare vada

Potato - 3

Oil - 1 tbsp

Mustard - 1/4 tsp

Cumin - 1/2 tsp

Split urad dal - 1/2 tsp

Green chilli - 2

Curry leaves

Ginger garlic paste - 1 tsp

Turmeric pwd - 1/4 tsp

Red chilli pwd - 1/2 tsp

Coriander leaves

Salt to taste

Gram flour / kadalai maavu - 1 cup

Rice flour - 2 tbsp

Turmeric pwd - 1/4 tsp

Oil to deep fry

To prepare garlic pwd

Garlic - 5

Red chilli - 4 or 5

Dried coconut pwd - 2 tbsp

Roasted peanuts - 1 tbsp

Salt - 1/2 tsp

To Arrange Vada pav

Pav buns - 4 to 5

Green chutney - 3 to 4 tbsp

Green chilli to garnish

Instructions

To Prepare Vada

Wash and cook potatoes.

3.

Peel off the skin and mash the potatoes.

4.

Set aside.

Heat 1 tbsp of oil in frypan.

6.

Add mustard, cumin, split urad dal, sliced green chilli and curry leaves.

Wait to splutter.

8.

Add ginger garlic paste and saute.

9.

Add turmeric pwd, red chilli pwd and salt.

Add mashed potatoes and give a quick stir.

Add freshly chopped coriander leaves and turn off flame.

Spicy aloo masala is ready to prepare vada.

Let the masala cool.

Make small balls out of potato masala.

Arrange in plate.

In a mixing bowl, add gram flour (kadala maavu), rice flour, salt, turmeric pwd and mix well.

Add water little by little and mix to thick smooth batter.

Heat oil in frypan.

Dip the potato balls in batter and drop in hot oil.

Fry 4 to 5 batata vada at a batch.

Deep fry in medium flame until the vadas are golden and crispy.

Drain in kitchen tissue.

Crispy vada pavs / batata vada are ready.

Slit green chillies and deseed them.

Fry the green chillies in hot oil just for few seconds and drain from oil.

Set aside.

Lets Prepare Garlic Powder For Stuffing

Heat a pan.

Add garlic and red chilli.

Roast for a minute in low flame.

Remove from heat.

Add dried coconut and saute.

Turn off flame.

Add to blender. Add peanuts and salt.

Grind to coarse powder as shown in video.

Transfer to plate and set aside.

Spicy garlic powder is ready.

Slit pav buns as shown in video.

Stuff spicy garlic powder.

Stuff batata vada (step 22) and close the pav/bun.

Garnish with fried green chilli and coriander leaves.
