Masala Dosa 

Here is the easy recipe of restaurant style crispy masala dosa that tastes lipsmacking delicious along with a stuffing of flavorful potato masala. It is a very popular breakfast recipe of South Indian cuisine. It is a favorite option of everyone in restaurants all over the world. Its quite easy to prepare this stuffed dosa at home. The fermented crepe is made from batter prepared out of rice and lentils and stuffed with potato masala made of fried onions and spices.

To prepare dosa batter

  • Idli rice or parboiled rice - 2 cups
  • Poha - 2 tbsp
  • Urad dal - 1/2 cup
  • Methi / fenugreek / vendayam - 1 tsp
  • Salt to taste

To make masala:

  • Potato - 2 to 3
  • Oil - 1 tbsp
  • Mustard - 1/4 tsp
  • Cumin - 1/2 tsp
  • Split urad dal - 1/2 tsp
  • Hing / asafoetida - a pinch
  • Red chilli - 1
  • Curry leaves - a few
  • Ginger - a small piece
  • Garlic - 3 to 4
  • Onion - 1
  • Green chilli - 2
  • Turmeric pwd - 1/4 tsp
  • Fresh lemon juice - a few drops
  • Coriander leaves
  • Salt to taste

Lets prepare dosa batter

  1. Wash and soak idli rice / parboiled rice in water. Add 2 tbsp of poha to it. 
  2. Wash and soak urad dal and methi seeds in water in separate bowl.
  3. Let it soak overnight or minimum 6 hours.
  4. Drain water and add to blender.
  5. Grind both rice and dal separately to smooth batter.
  6. Add it to mixing bowl, add salt and mix well. (mixing with hands enhances the fermentation process quickly)
  7. Allow the batter to ferment for 7 to 8 hours.
  8. Homemade dosa batter is ready to prepare crispy dosa.

To make masala :

  1. Wash and cook potatoes until soft.
  2. Peel off skin and mash them.
  3. Set it aside.
  4. Heat 1 tbsp of oil in frypan.
  5. Add mustard, cumin, split urad dal and hing.
  6. Wait to splutter.
  7. Add red chilli and curry leaves.
  8. Add grated ginger, garlic, green chilli and saute.
  9. Add finely sliced onions, salt and saute until light brown.
  10. Add turmeric pwd and mix.
  11. Add mashed potatoes and stir in high flame.
  12. Turn off flame.
  13. Add few drops of fresh lemon juice.
  14. Garnish with coriander leaves.
  15. Yummilicious potato masala is ready.

To make Masala Dosa

  1. Heat a dosa pan.
  2. Grease with oil.
  3. Take a ladle full of dosa batter and spread it in concentric circles as shown in video.
  4. Drizzle oil to sides.
  5. Cover and cook in medium flame.
  6. Once the dosa is cooked golden and crispy, stuff 2 to 3 tbsp of potato masala and fold the dosa.
  7. Transfer to serving plate.
  8. Homemade flavorful delicious masala dosa is ready.
  9. Enjoy hot with chutney and sambar.
