Here comes the unique crispy savory snack, carrot pakora recipe. This healthy delicious pakora is prepared with grated carrots and less onion. It tastes absolutely mind blowing with mild spicy and sweet touch to it. This amazing snacks has a crispy texture on the outside and soft chewy inside. Kids love this colorful appetizer snack and tastes ideal for tea time munch.

Ingredients

Grated carrot - 1 cup

Rice flour - 2 tbsp

Gram flour / besan flour (kadala maavu) - 4 tbsp

Sliced onion - 1/2 cup

Green chilli - 1

Red chilli pwd - 1/2 tsp

Ginger garlic paste - 1 tsp

Grated ginger - 1 tsp

Cashewnuts - 7

Ghee - 1 tsp

Curry leaves

Coriander leaves

Salt to taste

Oil to deep fry

Instructions

1.

Wash and peel off the skin of carrots.

2.

Grate to fine shreds.

3.

Add grated carrot to mixing bowl.

4.

Add sliced green chilli, onion, grated ginger, curry, coriander leaves, cashewnuts and mix.

5.

Add ginger garlic paste, salt, red chilli pwd and mix.

6.

Add rice flour, besan flour (kadala maavu), ghee and mix.

7.

Knead to thick mixture without sprinkling water. The moisture in the carrot and onion are enough to bind the mixture.

8.

Knead to thick dough.

9.

Heat oil in frypan.

10.

Take a small ball out of the dough and drop it in batches in hot oil as shown in video.

11.

Deep fry in medium flame.

12.

Once the pakoras turn crispy, drain in kitchen tissue.

13.

Repeat the same for the remaining dough.

14.

Yummilicious crispy carrot pakoras are ready.

15.

Enjoy hot with garam garam coffee/ tea.
