Ingredients

Mutton - 1/2 kg

Ginger garlic paste - 1 tbsp

Oil - 2 to 3 tbsp

Onion - 2

Tomato - 2

Turmeric pwd - 1/4 tsp

Red chilli pwd - 1 tsp

Coriander pwd - 1 tsp

Cumin - 1/2 tsp

Green chilli - 1 or 2

Pepper pwd - 3/4 tsp

Garam masala pwd - 1/2 tsp

Mint & coriander leaves - handful

Fresh lemon juice - few drops

Salt to taste

Instructions

1.

Clean & wash mutton pieces.

2.

Chop to bite sized pieces.

3.

Heat oil in pressure cooker.

4.

Add 1 tbsp ginger garlic paste and saute.

5.

Add mutton pieces and toss.

6.

Add salt, 1/4 tsp turmeric pwd, 1/2 tsp red chilli pwd, coriander leaves, mint leaves, green chilli & 1 cup of water.

7.

Mix well.

8.

Pressure cook for 5 to 6 whistles or until the mutton is cooked soft.

9.

Drain the cooked water and set aside the mutton pieces.

10.

Heat oil in frypan.

11.

Add cumin and wait to splutter.

12.

Add sliced onions and saute until transculent.

13.

Add tomatoes and cook until oil separates.

14.

Add turmeric pwd, red chilli pwd, coriander pwd, saunf pwd, yoghurt and mix.

15.

Cook for 2 minutes.

16.

Add the drained water from mutton and stir.

17.

Allow to cook until the masala thickens.

18.

Taste & adjust salt and seasonings.

19.

Once the masala reaches thick gravy consistency, add the cooked mutton.

20.

Combine well with masala.

21.

Roast it in high flame.

22.

Add garam masala pwd, pepper pwd and mix.

23.

Turn off flame.

24.

Squeeze few drops of lemon juice and combine.

25.

Garnish with freshly sliced coriander leaves.

Lipsmacking delicious Mutton Pepper Roast is ready!

Serve hot with roti, chapati, naan or even with rice dishes.
