Ingredients
- Rice - 1 cup
- Yoghurt - 2 cup
- Milk - 1 cup
- Oil - 1 tsp
- Mustard - 1/4 tsp
- Cumin - 1/2 tsp
- Split urad dal - 1/2 tsp
- Cashew - 4 to 5
- Green chilli - 1
- Grated ginger - 1 tsp
- Curry leaves
- Hing / asafoetida pwd - a pinch
- Salt to taste
- Fresh coriander leaves
Method
- Wash and soak rice in water for 5 mins.
- Drain water and add to bowl.
- Add 3 cups of water and pressure cook until the rice is cooked soft.
- Once the pressure turns off, mash the rice well.
- Add salt, 1/2 cup of water, yoghurt, milk and mix.
To Temper
- Heat 2 tsp of oil in small frypan.
- Add mustard, cumin, split urad dal, cashew, sliced green chilli, grated ginger, curry leaves and saute.
- Wait until crackles.
- Add hing and turn off flame.
- Add the seasoning to the curd rice and mix.
- Garnish with freshly sliced coriander leaves, pomegranate seeds, grapes, grated carrot, mango etc.
- Flavorful delicious south Indian style curd rice is ready.
