Ingredients

Potato - 3

Oil - 2 to 3 tbsp

Cloves - 3

Cinnamon - 1

Cardamom - 1

Javithri - 1

star anise - 1

Cumin seeds - 1/2 tsp

Onion - 2

green chilli - 2

Ginger garlic paste - 1 tsp

Tomato - 1 big

Turmeric pwd - 1/4 tsp

Red chilli pwd - 1 tsp

Pepper pwd - 1/2 tsp

Coriander pwd - 1 tsp

Saunf pwd - 1/2 tsp

Cumin pwd - 1/2 tsp

Butter - 1 tbsp

Red chillil - 1

Curry leaves

Fresh coriander leaves

Salt to taste

Instructions

1.

Cook potatoes, peel the skin and slice to bite sized pieces.

2.

Heat oil in frypan.

3.

Add cloves, cinnamon, cardamom, javithri, star anise and cumin.

4.

Wait to crackle.

5.

Add green chilli, curry leaves, sliced onion and fry until transculent.

6.

Add salt, ginger garlic paste and saute.

7.

Add sliced tomatoes and cook until oil separates.

8.

Add turmeric pwd, red chilli pwd, coriander pwd, cumin pwd, pepper pwd, saunf pwd and mix.

9.

Add 1/4 cup of water and cook the masala.

10.

Once the masala thickens, add the potato.

11.

Combine well with masala.

Cover and cook in low flame for 5 mins.

Now drizzle oil and roast the potatoes in low flame for another 5 to 7 mins.

Meanwhile heat butter in small fry pan.

15.

Season with curry leaves and red chilli.

16.

Add the seasonings to potato fry and turn off flame.

17.

Garnish with freshly chopped coriander leaves.

18.

Flavorful, hot and delicious potato fry is ready.
