Here comes the chilled delicious ever popular South Indian style Thayir Vadai recpe. It is absolutely easy to prepare curd vadai at home just like restaurant style. This makes a divine recipe during hot summer days. I used to prepare at home frequently as its a favorite dish of everyone. In this recipe, the deep fried crispy vadai are immersed in warm water and then soaked in spicy flavored thick curd and garnished with grated carrot and boondhi. Kids will love this colourful attractive snack and it makes a filling snack too. Check out this easy video recipe and prepare yummy thayir vadai at home.

Ingredients

To Make Vada:

Urad dal - 1 & 1/2 cups

Green chilli - 1 or 2

Grated ginger - 1 tsp

Onion - 1

Curry & coriander leaves

Salt to taste

Oil to deep fry

To Make Spiced Curd:

Thick curd or yoghurt - 2 cups

Green chilli - 1

Grated ginger - 1 tsp

Cumin - 1/2 tsp

Salt to taste

Instructions

To Make Vada

Wash & soak urad dal in water for minimum 1 hour.

Drain water completely.

4.

Add to blender and add salt.

5.

Sprinkle few tsps of water and grind completely to smooth batter.

Transfer to bowl.

7.

Add finely sliced onions, green chilli, coriander and curry leaves.

8.

Mix well.

9.

Vada batter is ready.

10.

Heat oil in fry pan.

11.

Wet your hands in water.

Take a small ball of batter and pat it flat.

Make a small dent in the centre as shown in video.

14.

Drop them carefully in hot oil.

15.

Deep fry in medium flame.

16.

Fry until the vadas are crispy and golden on both the sides.

Drain from oil.

18.

Crispy delicious vadais are ready.

In a small bowl, add warm water.

Add the crispy vadas to the water and let them soak in water for 5 mins.(this enhances the vada to turn spongy and soft)

Squeeze the excess water and set the vadais in serving plate.

To Prepare Spicy Curd:

In a blender, add green chilli, grated ginger and cumin.

Add thick yoghurt or curd, salt to blender.

25.

Grind to smooth consistency.

In a small pan, add 1 tsp of oil.

Add mustard, cumin, split urad dal, hing/asafoetida pwd, curry leaves and wait to splutter.

Add this to curd and mix.

Spicy Curd is ready.

To Make Thayir Vadai:

Take the soaked soft vadais in serving plate.

32.

Add spiced curd over the vadas.

33.

Add enough curd so that the vadas are soaked completely.

Sprinkle finely chopped coriander leaves.

35.

Garnish with grated carrots and karaboondhi snack.

36.
