Today's recipe is restaurant style flavorful & irresistably delicious vegetable biryani. It is one of the most easiest & healthy nutritious dish of Indian cuisine. This popular dish makes a perfect main course for any special get-together parties. In this recipe, the long grain basmati rice is cooked with assorted vegetables & aromatic spicy masala in a single pot. It combines awesome with onion raitha & spicy curry. Ingredients

Basmati Rice - 1 & 1/2 cup

Ghee / oil - 3 tbsp

Onions sliced - 1 cup

Tomato sliced - 1 cup

Vegetables sliced - 2 cups( carrot, beans, potato, cauliflower, capsicum, peas, etc)

Cumin seeds - 1/2 tsp

Bay leaf - 2

Cloves - 4

Cinnamon - 2

Cardamom - 1

Star anise - 1

Green chilly - 2

Ginger garlic paste - 1 tbsp

Yoghurt - 2 tbsp

Turmeric pwd - 1/4 tsp

Red chilly pwd - 1 tsp

coriander pwd - 1/2 tsp

Saunf pwd - 1/4 tsp

Garam masala pwd - 1/2 tsp

Biryani masala pwd - 1/2 tsp

Fresh mint & coriander leaves - 1/2 cup

Lemon juice - few drops

Salt to taste

Instructions

1.

Wash and slice all the veggies like carrot, potato, cauliflower, onion, tomato, green chillies, etc.

2.

Wash and soak basmati rice in water for 5 mins.

3.

Drain water and set aside.

4.

Heat oil / ghee in pan.

5.

Add cumin seeds and wait to splutter.

6.

Add bay leaf, cinnamon, cardamom, star anise, cloves and allow to crackle.

7.

Add sliced onions, green chilly and salt.

8.

Saute till light brown.

9.

Add ginger garlic paster and saute.

10.

Add sliced tomatoes and cook.

11.

Add yoghurt and mix.

12.

Add all the veggies and combine.

Allow to cook for a minute.

14.

Add turmeric pwd, red chilly pwd, coriander pwd, saunf pwd, biryani masala pwd and garam masala pwd.

15.

Mix well.

16.

Add washed and soaked basmati rice.

17.

Combine gently with the masala.

18.

Add 2 & 1/2 cups of water.

19.

Squeeze few drops of fresh lemon juice.

20.

Mix well.

21.

Taste and adjust salt & seasonings.

22.

Close the lid and pressure cook for 1 whistle in high flame.

23.

Simmer the flame and cook for 5 more mins.

24.

Turn off flame.

25.

Once the pressure goes off, open the cooker.

26.

Fluff the biryani gently.

27.

Add ghee roasted paneer and bread cubes. (optional)

28.

Garnish with freshly chopped coriander leaves.

29.

Lipsmacking delicious Vegetable biryani is ready.
