Ambur biryani is an authentic traditional biryani recipe which is famous for its unique taste and tempting aroma. This is one of my most favorite mutton biryani recipe…its just amazing in taste. It can be easily prepared at home with pressure cooker and the preparation is not at all complicated. The secret of the recipe lies in the right proportion of ingredients. Try this mouth-watering biryani at your home with this easy video recipe.

Ingredients

Mutton - 1/2 kg

Seeraga samba rice - 1/2 kg

Oil or ghee - 4 tbsp

Turmeric pwd - 1/4 tsp

Red chilly pwd - 1 tsp

Yoghurt (curd) - 2 tbsp

Cumin seeds - 1/2 tsp

Bay leaf - 2

Cinnamon - 2

Cloves - 4

Cardamom - 2

Star anise - 1

Saunf - 1/4 tsp

Onion sliced - 2 cups

Tomato sliced - 1 cup

Ginger garlic paste - 1 tbsp

Green chilly - 4

Chopped mint & coriander leaves - 1/2 cup

Fresh lemon juice - few drops

Salt to taste

Instructions

1.

Wash & soak seeraga samba rice in water for 10 mins.

2.

Drain water and set aside.

3.

Wash and clean mutton pieces.

4.

Add to pressure cooker.

5.

Cook it along with turmeric pwd, red chilly pwd, yoghurt, salt and 1 cup of water.

6.

Cook for 4 whistles and turn off flame.

7.

The mutton should be half-cooked.

8.

Set it aside.

9.

Heat oil/ghee in cooker.

10.

Add cumin seeds and wait to splutter.

11.

Add bay leaf, saunf, cloves, cinnamon, cardamom, star anise and saute.

12.

Allow to crackle.

13.

Now add sliced onions and green chilly.

14.

Add salt and saute till onions turn light brown in colour.

15.

keep the flame in low medium and stir once in a while to ensure the onions doesn't stick to bottom.

16.

Add ginger garlic paste and toss till raw smell disappears.

17.

Add freshly chopped coriander and mint leaves.

18.

Saute for a minute.

19.

Add half cooked mutton along with its masala.

20.

Mix well and cook till masala thickens.

21.

Add soaked & drained rice and combine.

22.

Add 4 cups of water and stir.

23.

Taste and adjust salt and seasonings.

24.

Squeeze fresh drops of lemon.

25.

Cover and cook in pressure cooker for 1 whistle in medium flame and simmer the flame for another 7 mins.

26.

Turn off flame.

27.

Once the pressure goes off, open the cooker.

28.

Fluff the biryani gently.

29.

Enjoy the rich aroma of mutton biryani.

30.

Serve hot with boiled egg & spicy curry along with onion raitha.
