Here goes yet another famous Indian dessert Rava Kesari sweet to celebrate the festival season. It is prepared with rava ( sooji or semolina) ghee, sugar and dry fruits. It is the easiest sweet recipe that can be prepared in few minutes. Also this sweet makes a quick fix dessert when you have surprise guests at home. Try this fail proof recipe and enjoy the lump free melt in your mouth Rava kesari dessert.

  • Rava / sooji - 1 cup
  • Sugar - 1 & 1/4 cup
  • Ghee - 3 tbsp
  • Cashew - 8 to 10
  • Raisins - 8
  • Cardamom pwd - a pinch
  • Vanilla essence - 1/4 tsp
  • Orange food color - a pinch
  • Saffron strands & almond pieces to garnish


  1. Heat ghee in frypan.
  2. Add cashewnuts and raisins, roast to golden.
  3. Drain and reserve.
  4. Add rava / sooji.
  5. Roast in low flame for few minutes.
  6. Add hot water and allow the rava to cook.
  7. Once the rava is cooked, add sugar and combine.
  8. Wait till the kesari thickens.
  9. Now add kesari pwd (orange food color)
  10. Add cardamom pwd and stir.
  11. Add golden roasted cashew and raisins.
  12. Add vanilla essence and combine.
  13. Stir good.
  14. Once the kesari thickens & come to halwa consistency, turn off flame. ( take care the kesari thickens on cooling)
  15. Garnish with saffron strands and grated almond.
  16. Lipsmacking authentic delicious Rava Kesari is ready.
  17. Enjoy warm or chilled.

    Luv yr recipes. Pls help me by mentioning the amount of water to be added to the rava as I don't want to add too much or too little.
    Also would u add a conversion to help people like me who cook in gms and ml bec there is mo much variables in flour and liquid.

      For 1 cup of Rava = 3 & 1/2 cups of hot water is needed.
