Ingredients
- Paneer - 200 g
- Onion - 2
- Tomato - 3
- Oil - 1 tbsp
- Butter - 2 tbsp
- Sliced ginger & garlic - 1 tbsp
- Green chilly - 2
- Bay leaf - 1
- Cloves - 4
- Cinnamon - 1
- Cardamom - 1
- Star anise - 1
- Cubed red & green bell peppers (capsicum) - 1/2 cup
- Turmeric pwd - 1/4 tsp
- Red chilly pwd - 1 & 1/2 tsp
- Coriander pwd - 2 tsp
- Cumin pwd - 1/4 tsp
- Garam masala pwd - 1/2 tsp
- Salt to taste
- Fresh coriander leaves
Method
- Wash and slice paneer to fine cubes.
- Heat oil in a frypan.
- Add onions and toss till golden.
- Add tomatoes and cook to soft.
- Add sliced ginger and garlic and saute for a minute.
- Turn off flame and allow to cool.
- Add to blender and grind to fine paste.
- Set it aside.
- Melt butter in pan.
- Add the sliced paneer cubes and saute to golden.
- Remove and set aside.
- Heat oil / butter in frypan.
- Add bay leaf, cloves, cinnamon, cardamom and star anise.
- Wait to splutter.
- Add green chilly and cubed onions.
- Toss for a minute.
- Now add cubed red and green bell peppers / capsicum.
- Stir for few seconds and add the freshly ground masala paste. (step 8)
- Mix well.
- Add turmeric pwd, red chilly pwd and salt.
- Add coriander pwd, cumin pwd and garam masala pwd.
- Add little water and allow the masala to cook.
- Once the curry reaches the desired consistency, add the paneer cubes.
- Sprinkle dried kasoori methi leaves.
- Turn off flame.
- Garnish with freshly chopped coriander leaves.
- Lipsmacking colorful delicious Kadai Paneer is ready.
Enjoy hot with biryani, fried rice or any Indian breads.
