Looking for a quick, simple recipe to make traditional Adhirasam sweet? Here you go with it. This South Indian sweet is prepared using rice flour and jaggery. The secret to make perfect Adhirasam lies in the timing and accuracy of addition of ingredients. Its an all time favorite of everyone with sweet tooth and plays an important role in Diwali sweets. Almost every house in Tamil Nadu prepare this healthy sweet during Diwali Festival. Lets see the failproof recipe.

  • Raw rice   - 2 cups
  • Jaggery powdered - 1 & 1/2 cups
  • Water to make sugar syrup - 1 cup
  • Elaichi pwd     - 1/2 tsp
  • Sukku / dry ginger pwd - 1/2 tsp
  • Oil to deep fry


To prepare rice flour:

  1. Wash and soak raw rice for 2 hours.
  2. Drain water completely.
  3. Spread the rice in a white cotton cloth and allow to dry.
  4. Let it dry for 15 mins.
  5. Once the rice is half dried, transfer to blender and grind to smooth pwd.
  6. Seive the rice flour to remove any lumps.
  7. Now the rice flour to prepare Adhirasam is ready.
  8. Set it aside.

To make jaggery syrup:

  1. Break the jaggery to coarse pwd.
  2. Take it in a bowl and add 1/2 cup of water.
  3. Turn on heat and stir to dissolve the jaggery in water.
  4. Once it is dissolved, strain to remove impurities.
  5. Again boil the jaggery water with stirring.
  6. Add coarsely powdered cardamom pwd and sukku (dry ginger) pwd.
  7. Continue stirring the jaggery water until it reaches thick (kambi paagu) consistency.
  8. This can be checked by adding few drops of jaggery paste in water, if the lump doesnt dissolve (as shown in video) then, the jaggery syrup reached the right consistency.
  9. Turn off the flame and remove the bowl.
  10. Now the jaggery syrup to prepare adhirasam is also ready.

To make Adhirasam:

  1. Immediately, while the jaggery syrup is still hot, add the freshly prepared rice flour.
  2. Stir continously with the addition of rice flour.
  3. Once the dough reaches thick consistency, stop adding rice flour.
  4. Now the dough required to make adhirasam is ready.
  5. Heat oil in a frypan.
  6. Take a small ball out of the dough.
  7. Grease the banana leaf or plastic sheet with oil.
  8. Grease your hands also with oil and place the ball in the greased leaf.
  9. Pat it flat.
  10. Drop it carefully in hot oil.
  11. Turn the flame to low and deep fry until it is golden brown on both sides.
  12. Drain from oil.
  13. Place it in the mould and press gently to remove the excess oil.
  14. That's it lipsmacking authentic delicious Adhirasam is ready.
  15. Repeat the same procedure for the remaining dough.
  16. Enjoy warm.
  17. It can be stored in air tight container for a week.

Here comes the true authentic Chettinad Meen Kuzhambu / fish curry recipe. This is my mom's signature recipe and one of the most sought dish at my house. This curry is lipsmackingly delicious and pairs up excellent with steamed rice or roti dishes.

Video Recipe                            


  • Fish     - 10
  • Gingely or cooking oil   - 2 tbsp
  • Tamarind                     - small ball
  • Cumin seeds               - 1/2 tsp
  • Vendayam / fenugreek pwd - 1 tsp
  • Vadagam                     - 1 tsp
  • Onions sliced               - 1 cup
  • Tomatoes sliced           - 1 & 1/2 cup
  • Red chilly pwd              - 3 tsp
  • Turmeric pwd                - 1/4 tsp
  • Pepper pwd                  - 1/2 to 1 tsp
  • Salt to taste
  • Fresh coriander leaves 


  1. Clean and wash the fishes.
  2. Drain the water completely and set aside.
  3. Wash and soak tamarind in warm water for 20 mins.
  4. Squeeze and extract tamarind juice from it.
  5. Heat oil in a pan.
  6. Add cumin seeds.
  7. Wait to splutter.
  8. Add fenugreek (vendayam pwd) and toss.
  9. Add vadagam or mustard, urad dal and curry leaves.
  10. Stir fry for a minute.
  11. Add finely sliced onions. 
  12. Saute till transculent.
  13. Add turmeric pwd and salt.
  14. Add tamarind juice and mix.
  15. Add red chilly pwd, coriander pwd and pepper pwd.
  16. Stir well and allow to cook covered for 5 to 7 mins in medium flame.
  17. Taste and adjust salt and seasonings.
  18. Once the curry thickens, add the fish.
  19. Allow to cook for few minutes. ( take care the fishes are not overcooked, so that it would break)
  20. Turn off flame.
  21. Garnish with freshly chopped coriander leaves.
  22. Lipsmacking delicious spicy fish curry is ready.
  23. Serve hot with steamed rice and fish fry.

  • Prawns   - 1/2 kg
  • Oil           - 2 tbsp
  • Onions    - 2
  • Tomato    - 2
  • Ginger garlic paste  - 1 tbsp
  • Turmeric pwd  - 1/4 tsp
  • Red chilly pwd  - 1 and 1/2 tsp
  • Pepper pwd      - 1/2 tsp
  • Coriander pwd  - 1 tsp
  • Salt to taste
  • Fresh coriander leaves


  1. Clean, wash and devein the prawns.
  2. Drain water thoroughly and set aside.
  3. Slice onions, tomatoes and fresh coriander leaves.
  4. Keep ginger garlic paste ready.
  5. Heat oil in a frypan.
  6. Add onions and fry until golden.
  7. Add ginger garlic paste and saute for a minute or two.
  8. Add finely sliced coriander leaves.
  9. Saute well.
  10. Add sliced tomatoes and cook until it is mashed.
  11. Add turmeric pwd and salt.
  12. Mix and add the cleaned prawns.
  13. Stir fry until the prawns are curled.
  14. Add red chilly pwd, coriander pwd and pepper pwd.
  15. Mix well.
  16. Cover and cook for 5 minutes in low medium flame. (no need to add water)
  17. Once the masala thickens, drizzle few drops of oil to the sides and fry for few more minutes.
  18. Stir once in a while to ensure the masala doesn't stick to the bottom of the pan.
  19. That's it ....lipsmacking delicious Prawn masala curry is ready.

  • Vanjaram / Seer fish slices  - 10 
  • Turmeric pwd    - 1/4 tsp
  • Red chilly pwd  - 2 tsp
  • Pepper pwd      - 1/4 tsp
  • Ginger garlic paste - 1 tsp
  • Lemon juice         - few drops
  • Thick tamarind juice - 1/4 cup
  • Salt to taste
  • OIl to shallow fry


  1. Clean and wash the fish slices thoroughly.
  2. Drain the water.
  3. In a mixing bowl, add turmeric pwd, red chilly pwd, pepper pwd, ginger garlic paste, salt, lemon juice, thick tamarind juice.
  4. Mix well.
  5. Now add the fish slices and coat with the masala prepared.
  6. Let it marinate overnight or atleast for 3 hours.
  7. Heat oil in a frypan.
  8. Place the fish slices carefully in the hot oil.
  9. Let it shallow fry for few minutes.
  10. Flip it to other side and fry.
  11. Once it turns crispy and golden, remove from flame.
  12. Transfer to serving bowl.
  13. Yummilicious Vanjaram fish fry is ready.
  14. Enjoy hot with steamed rice and fish curry or sambar.

To cook Mutton: 

  • Mutton                 - 1/2 kg
  • Turmeric pwd      - 1/4 tsp
  • Red chilly pwd    - 2 tsp
  • Yoghurt                - 3 to 4 tbsp
  • Ginger garlic paste - 1 tbsp
  • Salt                         - 1 tsp

To cook Basmati Rice

  • Basmati rice      - 2 cups
  • Oil                     - 1 tsp
  • Salt                    - 1/2 tsp
  • Water                - 5 to 6 cups

To make Biryani

  • Onions sliced            - 2 cups
  • Green chilly              - 4
  • Tomato sliced           - 1 cup
  • Coriander & mint leaves - 1 cup
  • Ginger garlic paste     - 1 tbsp
  • OIl                              - 4 tbsp
  • Ghee                           - 1 tbsp
  • Cumin seeds               - 1/2 tsp
  • Cloves                         - 4
  • Cinnamon                   - 1
  • Bay leaf                      - 2
  • Star anise                    - 2
  • Javithri                        - 1
  • Saunf                          - 1/2 tsp
  • Fresh lemon juice       - few drops
  • Salt to taste            


To cook Mutton:

  1. Wash and clean the mutton pieces.
  2. Chop it to bite-sized pieces.
  3. Pressure cook in cooker, by adding turmeric pwd, red chilly pwd, yoghurt, salt and ginger garlic paste.
  4. Once the mutton is cooked tender, set it aside.

To cook Basmati Rice

  1. Wash and soak basmati rice in water for 5 mins.
  2. Heat water in a vessel. Add oil and salt.
  3. Add the soaked rice and cook it until it is three-fourth done.
  4. Drain the water and set the rice aside.
  5. Take care not to break the rice grains.

To make Biryani:

  1. Finely chop onion, tomato, green chilly slit lengthwise, coriander and mint leaves.
  2. Make a fine paste of ginger and garlic separately.
  3. Heat oil and ghee in the thick bottomed vessel.
  4. Add cumin seeds, wait to splutter.
  5. Add saunf, bay leaf, cloves, cinnamon, cardamom, star anise and javithri.
  6. Saute well.
  7. Add finely chopped onions and green chilly.
  8. Fry well to golden brown.
  9. Add ginger garlic paste and fry until raw smell disappears.
  10. Add tomato and freshly chopped coriander & mint leaves.
  11. stir well for a minute.
  12. Add cooked mutton pieces along with its masala.
  13. Combine well.
  14. Add cooked basmati rice and stir.
  15. Add freshly squeezed lemon juice and 1/2 cup of water.
  16. Cover the vessel with damp cloth and close with lid.
  17. Place hot water in a vessel over it.
  18. Keep the whole set up over a dosa pan and turn the heat to medium flame.
  19. Let the biryani cook in dum for 5 mins.
  20. Now open the lid, give a good stir so that the masala combines well with the rice.
  21. Again cover and dum cook the biryani for 5 more mins.
  22. That's it...lipsmacking yummy Mutton dum biryani is ready.
  23. Enjoy hot with onion raitha.
