Coriander Chicken Recipe / How to make Coriander Chicken?

Here goes the vibrant delicious Indian-influenced Coriander chicken recipe. This curry is so simple to prepare yet incredibly flavorful with spiced masala. If you’re a lover of fresh coriander leaves aroma, then this recipe is for you. In this recipe the chicken is marinated in exotic masala paste and cooked delicately.  This gravy has a gentle spice to it, but if you want a bit more hot, just increase the green chillies. This North Indian favorite dish will go well with naan bread, basmati rice, noodles etc.
Similar Recipes:
·         Chicken boneless            - ½ kg
·         Fresh coriander leaves  - 1 bunch
·         Mint leaves chopped      -  3 tbsp
·         Green chilly                     - 3 to 5
·         Cashewnuts                    - 8
·         Ginger garlic paste         -1 tbsp
·         Turmeric pwd                 - ¼ tsp
·         Yoghurt                            - 1 small cup
·         Oil                                     -2 to 3 tbsp
·         Cumin seeds                   - ½ tsp
·         Saunf                               - ½ tsp
·         Cinnamon                       - 1
·         Onions sliced                  - 1 cup
·         Tomato puree                 - ½ cup
·         Lemon juice                    - few drops
·         Salt to taste
1.       Clean, wash and chop the chicken to bite sized pieces.
2.      Wash and chop fresh coriander leaves, mint leaves and green chilly.
3.      Add it to blender.
4.      Add few cashewnuts and little water and grind it to fine smooth paste.
5.      Transfer the paste in a mixing bowl.
6.      To it add ginger garlic paste, salt, turmeric pwd, yoghurt and mix well.
7.      Add the chicken and coat well with the masala paste.
8.      Allow to marinate for 2 hours.
9.      Heat oil in a fry pan.
10.   Add cumin seeds, saunf and cinnamon.
11.    Wait to splutter.
12.   Add finely sliced onions and fry till golden.
13.   Add the marinated chicken and saute in high flame for few minutes.
14.   Add tomato puree and cook for a minute.
15.   Add ¼ cup of water and turn the flame to low medium.
16.   Cover and cook the chicken for 7 to 10 mins.
17.   Once the chicken is cooked tender, squeeze few drops of lemon juice.
18.   Taste and adjust salt and seasonings.
19.   Transfer to serving bowl.
20.  Garnish with grated cheese.
21.   Healthy delicious coriander chicken with tempting aroma is ready.
22.   Enjoy hot with naan, paratha, roti or rice.

Chettinad Vanjaram Meen Varuval / Chettinad Seer Fish Fry / Spicy Vanjaram Fish Fry

Last weekend, I bought Vanjaram fish and prepared this spicy dish, by adapting the recipe from popular South Indian Chettinad cuisine. It turned out lipsmacking good and paired best with garma garam onion sambar and steamed rice. This yummy fish fry requires very few ingredients and can be prepared in a jiffy. Seer fish fry also known as king fish, vanjaram meen is one of the most famous and popular among fish fries in Indian restaurants. Lets see how to prepare this with this stepwise recipe..
Similar Recipes:
·         Vanjaram meen / Seer fish / King fish  -  ½ kg
·         Red chilly pwd                - 1 ½ tsp
·         Turmeric pwd                 - ¼ tsp
·         Ginger garlic paste         - 1 tsp
·         Coriander pwd                - 2 tsp
·         Cumin pwd                      - ½ tsp
·         Pepper pwd                     - ½ tsp
·         Lemon juice                    - 1 tsp
·         Thick tamarind paste -  2 to 3 tbsp
·         Fresh coriander leaves chopped -  2 tsp
·         Salt to taste
·         Oil to fry

1.       Clean, wash and chop Vanjaram meen to thin slices.
2.      In a mixing bowl, make a paste of red chilly pwd, turmeric pwd, ginger garlic paste, salt, coriander pwd,cumin pwd, pepper pwd, lemon juice, thick tamarind paste and finely chopped coriander leaves.
3.      Add 1 tbsp of water and mix it to masala paste.
4.      Add the fish slices and coat it thoroughly.
5.      Allow to marinate for 2 hours or overnight.
6.      Heat oil in a frypan.
7.      When hot, place the marinated fish slices carefully and shallow fry.
8.      Drizzle oil to the sides.
9.      Once fish turns golden brown and crisp of edges, remove in kitchen tissue.
10.   Lipsmacking restaurant style vanjaram fish fry is ready.

Chicken Lollypop Gravy / Schezwan Chicken Lollypop / Chicken Lollypop with Sauce

Today’s special post is the winning recipe of Schezwan style chicken lollypop. Kids & adults alike love this crunchy chicken lollypops coated with sweet and sour sauce. Chicken drummettes or whole chicken wings are needed to prepare this chicken lollypop. The chicken is marinated on spicy sauce and deep fried to crisp and then dipped on prepared schezwan sauce and spread well on it. Try this easy, make-at-home, hot and spicy chicken lollypop recipe  and enjoy the scrumptious taste.

For Marination:
1.       Chicken wings                 - 6 to 8
2.      Soya sauce                      - 2 tbsp
3.      Chilly garlic sauce           - 1 tbsp
4.      Ginger garlic paste         - 1 tbsp
5.      Corn flour                        -1 tbsp
6.      Salt to taste
To make Lollypop:
7.      Eggs                                 - 1
8.      Red chilly pwd                - 1 tsp
9.      Corn flour                        - 2 tbsp
10.   Oil                                    - to deep fry
To make Gravy:
11.    Oil                                   - 1 tbsp
12.   Cumin seeds                   - ½ tsp
13.   Soya sauce                      - 1 tbsp
14.   Vinegar                            - ½ tsp
15.   Chilly sauce                     - 1 tsp
16.   Tomato ketchup              -2 tbsp
17.   Green chilly                     - 1
18.   Fresh coriander leaves
19.   Salt to taste
To make Lollypop:
1.       Wash and clean the chicken wings thoroughly.
2.      Cut the wings into two.
3.      Chop the end bone and pull the flesh up along with the skin.
4.      Now remove the thin bone attached to it.
5.      Mould the flesh into a lollypop. (check out here to see stepwise recipe)
6.      Prepare a marinade with soya sauce, chilly garlic sauce, salt, ginger garlic paste and corn flour.
7.      Add the chicken lollypop to the marinade, coat it completely.
8.      Let it rest for overnight or preferably for 2 hours.
9.      In a bowl, beat the egg.
10.   Add red chilly pwd, salt and corn flour.
11.    Mix it well.
12.   Make a smooth batter.
13.   Heat oil in a frypan.
14.   Roll the lollypop in the batter and drop carefully in the hot oil.
15.   Turn the flame to medium hot.
16.   Deep fry the chicken lollypops until they turn crispy and golden brown.
17.   Take care the chicken to be cooked completely inside also and adjust the flame accordingly.
18.   Drain the chicken lollypop in kitchen towel.
19.   Lipsmacking tasty chicken lollypop is ready.
To make Gravy:
20.  To prepare the sauce, heat 1 tbsp of oil in a small frying pan.
21.   Add cumin seeds and ginger garlic paste.
22.  Saute for a minute.
23.  Add soya sauce, vinegar, chilly sauce, tomato ketchup, salt, green chilly and finely chopped coriander leaves.
24.  Add little water and stir in low flame for 2 mins.
25.  Toss the chicken lollypop in the sauce.
26.  Turn off the flame.
27.  Transfer the chicken lollypop along with sauce to serving plate.
28.  Serve immediately.
29.  Pairs up excellent with fried rice, noodles, biryani, naan etc.
