Today's recipe is a popular Indian chicken starter / appetizer dish tandoori grilled chicken tikka. It is absolutely simple to make and tastes out of this world delicious. In this easy-to-cook recipe, the chicken chunks are marinated in special spices and then grilled on skewers. They make great party food and pairs up excellent with hot naan or any Indian breads. ·         Boneless chicken            - 300 g
·         Yoghurt                          -2 tbsp
·         Turmeric pwd                 - ¼ tsp
·         Kashmiri red chilly pwd - 1 tsp
·         Ginger garlic paste         - 2 tsp
·         Cumin pwd                      - ¼ tsp
·         Coriander crushed         - ½ tsp
·         Black pepper pwd           - ¼ tsp
·         Garam masala pwd        - ½ tsp
·         BBQ sauce (optional)  -  1 tsp
·         Lemon juice                    - 1 tsp
·         Coriander leaves chopped  - 3 tsp
·         Salt to taste
·         Oil for basting
Chicken Tikka
1.       Clean, wash and chop the boneless chicken to pieces.
2.      In a mixing bowl, add yoghurt, turmeric pwd, kashmiri red chilly pwd, ginger garlic paste, cumin pwd, crushed coriander, pepper pwd, salt and lemon juice.
3.      Add 3 tsp of oil and mix well.
4.      Stir in the finely chopped coriander leaves.
5.      Add the chicken pieces to the mixing bowl.
6.      Toss to coat the chicken with the masala well.
7.      Cover and marinate for minimum 6 hours or preferably overnight.
8.      Preheat oven to 180 degree celcius.
9.      Either thread the marinated chicken pieces onto greased skewers or place on a greased tray.
10.   Baste with oil.
11.    Slightly grease the grill tray with oil.
12.   Grill it for 6 minutes approximately.
13.   Turn it to other side, baste oil and grill the chicken pieces for 5 to 7 minutes or until the chicken is charred at the edges. (cooking time depends on how  hot your grill is and how big the chicken chunks are)
14.   Transfer to serving plate.
15.   Garnish with onions, lemon wedges, coriander leaves and serve with naan, pitta bread or on its own.

 Similar Recipes:
·         Whole wheat flour          - 1 cup
·         All purpose flour             - ½ cup
·         Baking pwd                     - a pinch
·         Baking soda                    - a pinch
·         Butter                              - 2 tbsp
·         Honey                              - 2 to 3 tbsp
·         Butter milk                      - 1 cup
·         Salt                                   - ½ tsp or as needed
·         Milk                                  - ¾ cup
·         Egg                                   - 1
·         Oil                                    - as needed
1.       Take whole wheat flour and maida flour in a mixing bowl.
2.      Add baking pwd and baking soda.
3.      Mix well and set aside.
4.      In another bowl take butter.
5.      Add honey, sugar (optional) to it and mix.
6.      Add buttermilk, salt and stir good.
7.      Next add the milk and mix.
8.      Beat egg in a small bowl.
9.      Add it to the bowl and give a good mix.
10.   Ensure the mixture is well stirred.  Wet ingredients bowl is ready. Set aside.
11.    Now make a well in the bowl of the dry ingredients mixture. ( step 3)
12.   Pour in the buttermilk, egg and honey mixture. 
13.   Combine gently until smooth. Take care not to overmix.
14.   Heat a dosa tawa / gridle.
15.   The consistency of the batter should be semi- thick. ( if required add little milk to get the desired consistency as shown in pic)
16.   Grease the tawa with oil.
17.   Pour or scoop ¼ cup of batter and spread on hot tawa in concentric circles.
18.   Drizzle oil to sides.
19.   When the surface is bubbly all over, flip it to other side and cook both the sides to golden brown.
20.  Once it is done, take in serving plate.

To marinate:
·         Boneless chicken            - ½ kg
·         Turmeric pwd                 - a pinch
·         Red chilly pwd                - ½ tsp
·         Lemon juice                    - few drops
·         Salt                                   - ½ tsp
To make gravy:
·         Butter                              - 2 tbsp
·         Sliced onions                   -1 cup
·         Minced ginger                 - 1 tsp
·         Minced garlic                  - 1 tsp
·         Turmeric pwd                 - a pinch
·         Kashmiri red chilly pwd - 1 tsp
·         Coriander pwd                - 2 tsp
·         Cumin pwd                      - ¼ tsp
·         Garam masala pwd        - ½ tsp
·         Tomato sauce / paste     - 1 tbsp
·         Pureed tomato                - 2 to 3 tbsp
·         Kasuri methi / dried fenugreek leaves -  ¼ tsp
·         Whole milk                      - ½ cup
·         Chicken masala pwd      - ½ tsp
·         Fresh cream                    - 2 to 3 tbsp
·         Salt to taste
·         Fresh coriander leaves

1.       Wash and chop the chicken to bite-sized pieces.
2.      Marinate with turmeric pwd, red chilly pwd, lemon juice and salt.
3.      Allow the chicken to marinate for 30 mins.
4.      Heat butter in a fry pan.
5.      Add the sliced onions.
6.      Saute until golden brown.
7.      Add the grated ginger and garlic.
8.      Give a toss and add turmeric pwd, kashmiri red chilly pwd, coriander pwd, cumin pwd, garam masala pwd and salt.
9.      Saute for a minute until fragrant.
10.   Add the tomato paste and pureed tomato.
11.    Stir and cook for 2 to 3 minutes.
12.   Throw in the kasuri methi, milk and the marinated chicken.
13.   Mix well.
14.   Cover it with a lid and cook in low medium flame for 8 to 10 mins.
15.   Stir once  in a while to avoid masala sticking to the bottom of the pan.
16.   No need to add water, as the moisture in the chicken is enough to get cooked tender.
17.   Keep the flame on sim and cook until the chicken is done.
18.   Adjust the gravy consistency by adding little water if required.
19.   Add chicken masala pwd and fresh cream.
20.  That’s it flavorful, aromatic butter chicken masala is ready.
21.   Transfer to serving bowl.

22.  Garnish with freshly chopped coriander leaves and grated ginger.
