Parotta Recipe / Indian Layered Bread Recipe / Tasty Dinner Ideas

Parotta / Indian Layered Bread: The very thought of soft,  flaky parotta with hot & spicy salna gives waterymouth. It’s a gem among South Indian dinner recipes. The popular street food can be prepared at home easily. The main ingredients are maida flour, milk, sugar and bread slices to enhance the taste. Give a try and you will enjoy this scrumptiously tasty Indian bread.
·         Maida flour / all purpose flour  - 2 cups
·         Bread slices                     - 3 to 4
·         Milk                                  - ½ cup
·         Sugar                               - 1 tsp
·         Cooking soda                  - a pinch
·         Salt to taste
·         Oil to cook
1.       Take the bread and tear it to pieces.
2.      Add milk and knead it to smooth paste.
3.      Keep it aside.
4.      In a mixing bowl, add maida, salt, sugar, cooking soda.
5.      Mix well.
6.      Add the bread milk mixture and combine well.
7.      Add water little by little and knead it to smooth soft dough.
8.      Knead it gently for about 10 to 15 mins.
9.      Roll it to round ball and apply oil on the surface.
10.   Cover it with a lid and allow the dough to rest for ½ an hour.
11.    Divide the dough into equal sized balls.
12.   Take one ball dust it with flour and roll it to flat circle discs.
13.   Spray or apply a tsp of cooking oil over it.
14.   Now fold like fleats from one end to another.
15.   Hold the ends firmly and roll it to small circle.
16.   Now dust the rolling pin with flour and gently press it to slightly thicker shape.
17.   Take care not to merge the layers.
18.   Heat a skillet and drizzle few drops of oil to it.
19.   Place the parotta carefully and roast it by applying oil on both the sides.
20.  Once the parotta turns crisp and golden on both sides, remove from flame.
21.   Repeat the same for all the parottas.
22.  Stack 2 or 3 parottas together and gently beat them on sides to make it super flaky.
23.  Soft and delicious parottas are ready.
24.  It makes an unbeatable combo with salna and raitha.

Chilli Chicken Dry - Indian Style Recipe

Indian style Chinese Chilly chicken tastes simply scrumptious and makes an unbeatable combo with fried rice, roti and naan. It is one of the most favorite dish of almost all non-veg lovers. This restaurant style starter recipe can be prepared easily at home. The marinated and fried chicken is drenched with mouth-watering sweet-spicy-salty  flavored sauces and garnished with spring onions. 
Similar Recipes:
·         Chicken boneless            - ½ kg
·         Red chilly pwd                - ½ tsp
·         Turmeric pwd                 - a pinch
·         Lemon juice                    - ½ tsp
·         Ginger garlic paste         - ½ tsp
·         Corn flour                        - 2 tbsp
·         Red chilly sauce              - 1 tbsp
·         Soy sauce                         - ½ tbsp
·         Tomato ketchup              - 2 tbsp
·         White vinegar                 - ½ tbsp
·         Oil                                    - to deep fry
·         Ginger garlic paste         - ½ tsp
·         Curry leaves                    - 1 twig
·         Slit green chilly               - 1
·         Onion       sliced              - 1 cup
·         Capsicum sliced              -  ½ cup
·         Sliced spring onions       - ½ cup
·         Salt to taste
·         Fresh coriander leaves
1.       Wash and slice chicken to bite-sized pieces.
2.      Drain the water and take it in a mixing bowl.
3.      Add red chilly pwd, turmeric pwd, salt, lemon juice and ginger garlic paste.
4.      Mix well.
5.      Add corn flour to the mixture and allow to marinate for 1 hour.
6.      In a bowl, mix red chilly sauce, soy sauce, tomato ketchup and white vinegar.
7.      Keep it aside.
8.      Heat oil in a wok / kadai.
9.      Drop the chicken pieces one by one carefully in hot oil.
10.   Deep fry until the chicken pieces  turns crisp and golden.
11.    Drain it in kichen tissue.
12.   In a separate pan, heat 2 tbsp of oil.
13.   Add ginger garlic paste, curry leaves, slit green chilly and saute.
14.   Fry for a minute.
15.   Add sliced onion and capsicum cubes.
16.   Stir fry on high flame for 2 – 3 minutes.
17.   Take care the vegetables are not overcooked and it should be crunchy.
18.   Now turn the flame to low and add the sauce mixture ( step 6) and ½ cup of water.
19.   Taste and adjust salt carefully as the soy sauce also has salt.
20.  When the sauce turns thick and dry, add the fried chicken pieces and sliced spring onions.
21.   Mix well.
22.  Turn off the flame.
23.  Transfer to serving bowl and garnish with finely chopped coriander leaves.
24.  We enjoyed hot with soft phulkas.

Veg Burger Recipe / Quick & Tasty Veggie Burger

Veg Burger Recipe:
Vegetable burgers are an all time hit menu at home. It can be prepared healthy at home and tastes great by using our own wholesome ingredients. In this recipe the burger buns are shallow fried in butter and stuffed with potato masala, onion, cucumber, tomato, salad and capsicum.Here is the wholesome filling snack & everybody’s favorite Veggie burger recipe.
Ingredients :
For the Burgers
· Burger buns - 5 to 6
For the Filling
· Capsicum slices
· Onion slices
· Cucumber slices
· Tomato slices
· Cheese slices
· Chopped coriander leaves
· Tomato ketchup
For the Veggie Mixture
· Oil - 2 tbsp
· Chilli ginger paste - 1 tbsp
· Lemon juice - 1 tbsp
· Garam masala pwd - ½ tbsp
· Potatoes - 2
· Carrot - 2
· Onion - 2
· Beans diced - ½ cup
· Wheat flour - 2 tbsp
· Cheese - ¼ cup
· Pepper pwd - 1 tsp
· Red chilli pwd - 1 tsp
· Salt to taste

Method :

Heat oil in a pan, add chopped onions and chilli ginger paste to it.
Sauté for 3 to 5 mins. Add salt, pepper pwd, red chilly pwd , vegetables and mix well.
Add little water and allow to cook.
Once it is done, smash the contents.
Add cheese , wheat flour, garam masala, lemon juice and combine.
Allow to cook in low flame, until the mixture turns thick.
Turn off the flame, and allow to cool.
Now, cut each bun horizontally into two and toast them lightly in an oven or on a griddle.
Spread a little tomato ketchup on the lower half.
Place the veggie mixture on top.
Then place a capsicum slice, onion slice, cucumber slice, tomato slice, cheese slice and chopped coriander leaves.
Spread some fresh cream on top and then cover with the remaining half of the bun.
Repeat with the remaining ingredients to make more burgers.
Veggie burger is ready to eat. Serve hot with Tomato Ketchup.
