Thalapakattu Mutton Biryani:  Searching for a lipsmacking spicy biryani recipe for a special day? Check out this traditional style of making the biryani with irresistible flavors. In this recipe, the raw meat is marinated and cooked with spices and then mixed with rice and kept on dum. The soft and mouth melting mutton chunks in biryani tickles the tastebuds of the non-veg lovers. Thespicy biryani has the prefect taste, texture and colour and pairs up excellent with onion raitha.
For Marinating:
·         Mutton pieces     - 350 g
·         Lemon juice        - 1 tsp
·         Red chilly pwd    - ½ tsp
·         Ginger garlic paste- 1 tsp
·         Turmeric pwd     - a pinch
·         Salt to taste

To prepare biryani:
·         Basmati rice/ biryani rice- 2 cups
·         Onion                               - 2
·         Tomato                            - 2
·         Ginger garlic paste         - 1 tsp
·         Chopped mint and coriander leaves - 1 cup
·         Oil /ghee                         - 2 tbsp
·         Cumin seeds                   - ½ tsp
·         Bay leaf                            - 1
·         Cloves                              - 3
·         Cardamom                      - 2
·         Cinnamon                       - 1
·         Black pepper                   - 5
·         Red chilly pwd                - 1 tsp
·         Biryani masala pwd        - ½ tsp
·         Garam masala pwd        - 1 tsp
·         Yoghurt                            - 3 tbsp
·         Coconut milk                   - ½ cup
·         Salt to taste
1.       Wash and chop mutton to desired size pieces.
2.      Marinate with lemon juice, turmeric pwd, red chilly pwd, ginger garlic paste and salt.
3.      Allow to marinate for 1 hour.
4.      Transfer the marinated mutton to cooker, add ½ cup water and cook for4 whistles or until the mutton pieces are three-fourth cooked.
5.      Meanwhile wash and soak basmati rice in water for 10 mins and drain water.
6.      Cook the rice by adding 3 ½ cups of water.
7.      Once the rice is done, drain the excess water.
8.      Transfer to another vessel. The rice grains should be separable and not sticky.
9.      Slice onion, tomato, ginger, garlic and keep ready.
10.   Chop fresh mint and coriander leaves.
11.    Heat oil/ghee in a frypan.
12.   Add cumin seeds.
13.   Wait to splutter.
14.   Add bay leaf, cloves, cardamom, cinnamon, black peppercorns and saute.
15.   Add onions and saute till golden.
16.   Add ginger garlic paste and fry for a minute.
17.   Add sliced tomatoes and green chilly.
18.   Add half of the finely chopped mint and coriander leaves.
19.   Cook further till oil separates.
20.  Add red chilly pwd, biryani masala pwd, garam masala pwd and salt.
21.   Mix well.
22.  Add yoghurt and stir.
23.  Add mutton pieces (half-cooked) and combine well with the masala.
24.  Fry for 5 minutes.
25.  Add coconut milk, cover with lid and cook.
26.  Check and adjust salt.
27.  Add cooked basmati rice to the masala, add lemon juice.
28.  Add the remaining mint coriander leaves.
29.  Mix gently.
30.  Cover the vessel with a lid and cook on low medium flame for 10 mins.
31.   Turn off the flame.
32.  Lipsmacking Biryani is ready.
33.  Serve hot with onion raitha and spicy non-veg masala.

Want to make a wholesome, delicious and healthy snack for evening snacks? Here comes the lipsmacking Kala Chana chaat with a blend of little veggies and a little bit of spice powders. It tastes tangy and spicy too. It makes a very nutritious snack idea as kala chana has low glycemic index and is full of dietary fibre. It is also a rich source of zinc, folate and  protein. It makes a healthy salad option for weight watchers. Try this simple recipe and enjoy the flavorful snack..!

Similar Recipes:
·         Kala chana                      - 1  cup
·         Green moong dal            - ½ cup
·         Potato boiled and chopped        -  ½ cup
·         Onion sliced                    - ¼ cup
·         Tomato  sliced                - ¼ cup
·         Cucumber sliced             - ½ cup
·         Green chilly                     -1
·         Coriander leaves             - handful
·         Lemon juice                    - 1 tsp
·         Roasted cumin pwd       - ½ tsp
·         Chat masala pwd           - ½ tsp
·         Sev / gram flour noodles  -  ½ cup
·         Tamarind chutney          -  2 tsp
·         Salt to taste
1.       Wash and soak kala chana and green moong dal overnight or for minimum 6 to 8 hrs.
2.      Drain the water and pressure cook the kala chana and green moong dal by adding 1 cup water, little salt until done.
3.      Drain the water and keep aside the cooked dals.
4.      Pressure cook potato, peel and slice to small pieces.
5.      Slice onion, tomato, cucumber, green chilly and coriander leaves.
6.      In a mixing bowl, add cooked kala chana dal, moong dal, finely sliced onion, tomato, potato, cucumber, green chilly, coriander leaves.
7.      Squeeze few drops of lemon juice.
8.      Add salt, roasted cumin pwd and chat masala pwd.
9.      Mix well.
10.   Transfer to serving plate.
11.    Add 2 tsp of tamarind chutney and sprinkle sev and amchur pwd.
12.   Garnish with pomegranate.
13.   Healthy & lipsmacking chana chat is ready.
14.   Serve immediately.
15.   It makes a colourful nutritious snack for the kids when  they’re back from school.

Crispy crunchy Urad dal vada is a savory fritter-type snack that makes an excellent combo with piping hot cup of coffee or tea. The secret of crispiness of this vada lies in the batter consistency. The batter shouldn’t be tight or runny. It indeed needs some practice and advise to
make this crispy delicious. I learnt it from my mil and here goes the traditional favorite recipe..!
Similar Recipes:

·         Urad dal              -  1 cup
·         Onion slices         - ½ cup
·         Green chilly         - 1
·         Ginger                  - small piece
·         Chopped curry & coriander leaves  - handful
·         Rava / sooji         - ½ tsp
·         Rice flour             - 1 tsp
·         Oil to deep fry
·         Salt to taste
1.       Wash and soak urad dal in water for 30 mins.
2.      Drain water completely and add it to blender.
3.      Add salt, hing and grind it to coarse batter.( sprinkle very less water if needed)
4.      Transfer it to mixing bowl.
5.      Slice onion, green chilly and ginger.
6.      Chop curry and coriander leaves to fine pieces.
7.      Add it to the batter.
8.      Mix well.
9.      Add rava and rice flour.
10.   Heat oil in the frypan.
11.    Wet your hands with water, place a ball of batter, pat it flat and make a small hole in the centre.
12.   Drop it carefully in hot oil.
13.   Deep fry until crisp and golden.
14.   Drain the vadai and store it in kitchen tissue.
15.   Crispy, crunchy vadai is ready.
16.   Enjoy hot with spicy sambar and chutneys.
