Ingredients:
·
Mushrooms halved -
1 cup
·
Grated coconut -
¼ cup
·
Cumin - 1 tsp
·
Fennel - ½ tsp
·
Coriander seeds -
1 tsp
·
Red chilly - 2 or 3
·
Curry leaves -
4 to 5
·
Cardamom - 1
·
Cloves -
2
·
Cinnamon - a small piece
·
Ginger garlic paste -1 tbsp
·
Cashewnuts - 5 to 6
·
Chopped onions -1
cup
·
Mashed tomato -
½ cup
·
Turmeric pwd -a pinch
·
Red chilly pwd -
½ tsp
·
Crushed black pepper -
½ to 1 tsp
·
Lemon juice -
few drops
·
Oil - 1 tbsp
·
Salt to taste
·
Fresh coriander leaves to garnish
Method:
1. Heat 1 tsp of oil in a non stickpan.
2. Add grated coconut, cumin, fennel,
coriander, red chillies, curry leaves, cardamom, cloves and cinnamon.
3. Roast in low medium flame for 3 to 4
mins.
4. Turn off flame.
5. Allow to cool and grind it to fine paste
by adding cashewnuts and enough water.
6. Heat oil in frypan.
7. Add sliced onions and saute until it
turns golden. Add ginger garlic paste and saute for a minute.
8. Add curry leaves and masala paste.
9. Saute well for a minute.
10. Now add mashed tomato.
11. Add turmeric pwd, salt and red chilly pwd.
12. Cook for 3 to 5 mins or until the oil
separates out from the masala.
13. Now add the halved mushrooms.
14. Add finely crushed fresh black
peppercorns.
15. Mix well and allow to cook in low medium
flame for 5 to 7 mins.
16. Once the mushrooms are done, squeeze few
drops of lemon juice.
17. Combine and turn off flame.
18. Garnish with freshly chopped coriander
leaves, split chillies and onions.
19. Delicious aromatic chettinad mushroom is
ready.
20. Serve hot with rice, roti or even as
stuffing to make sandwiches.
