Egg Fried Rice is a classic Indo-Chinese dish made with lots of veggies & scrambled eggs. Its absolutely most adorable by kids & adults coz of its colour & tempting aroma.
It can be prepared in a jiffy and has a special place in my home. Also this easy meal is a great way to use up left over rice..& vegetables.

Ingredients

Basmati rice / long grained rice - 1 ½ cup

Pepper pwd - ½ tsp

Eggs - 3

Grated ginger & garlic - 1 tbsp

Onion - 1

Chopped carrot, capsicum, cabbage - 1 cup

(you can use any veggies like French beans, celery, peas, spring onions, cauliflower, etc)

Green chilly - 1

Vinegar - 1 tsp

Chilly paste - 1 tsp

Soya sauce - 2 tsp

White pepper pwd - 1 tsp

Salt to taste

Fresh coriander leaves

Instructions

1.

Wash and soak basmati rice in water for 20 mins

2.

Drain the water and cook the basmati rice by adding ½ cup of water and 1 tsp of oil

3.

Spread the cooked basmati rice in a wide bowl and allow to cool

Chop all the veggies and keep ready

5.

Add salt and pepper pwd to a small mixing bowl

6.

Add 2 tsp of water and mix well

7.

Beat the eggs and pour into the bowl

8.

Whisk well until it is mixed

9.

Heat 1 tsp of oil in a pan

10.

Add the egg mixture and keep tossing until is scrambled

11.

Keep the scrambled eggs aside

12.

Now heat 1 tbsp of oil in the same pan

13.

Add grated ginger and garlic and saute for a minute Add onions and toss well

14.

Add finely chopped veggies, salt and toss further for 2 minutes in medium flame

15.

Add vinegar, chilly paste, soya sauce and white pepper pwd

Mix well

Add cooked basmati rice

18.

Add scrambled eggs

19.

Fluff gently

20.

Take care not to break the rice grains

21.

Sprinkle freshly chopped coriander leaves and turn off the flame

That's it!! Delicious restaurant style Egg fried rice is ready

It tastes great as a meal on its own
