And coming to today’s special recipe, Mysore
Pak, it is a delectable rich dessert from Southern India. It is mainly made
with chickpea flour, ghee and sugar. This is my all time favorite sweet and I
always enjoy preparing this.
Its a fail proof recipe and hope all
mysore pak lovers will enjoy their dream
come true after trying this easy recipe. The correct measurements are the
secret to get this traditional sweet in soft melt-in-the mouth texture.

Ingredients:
·
Gram flour / Besan flour / Kadalai Maavu - 1 ½ cup
·
Sugar -
1 ¼ cup
·
Ghee -
¼ cup
·
Cooking oil -
¾ cup
Method:
1.
Sieve the besan flour and take it in a mixing
bowl.
2.
Add 2 tsp of hot oil and mix well.
3.
Make sure there are no lumps in it.
4.
Keep it aside.
5.
Grease a plate or any cake tin with oil and
keep ready.
6.
Meanwhile heat the remaining oil and ghee in a pan.
7.
Lets prepare sugar syrup now.
8.
Take sugar in a non-stick pan.
9.
Add water just enough to immerse the sugar.
10.
Keep the flame in low and keep stirring the
sugar syrup.
11.
Continue stirring till the sugar syrup reaches
one string consistency. ( rolling consistency)
12.
To check the one string consistency, add a
drop of sugar syrup in a small cup of water, the sugar should form a mass at
the bottom of the water. And it will form a string like consistency, if you take it in between two finger

Now add the besan flour to the sugar syrup little
by little with continous stirring.
14.
Keep stirring with a wooden ladle as shown in
the pic and make sure there is no lumps formed.
15.
Now add the hot oil (step 10) little by
little with continous stirring.
16.
The mixture turns frothy.
17.
Continue stirring by adding the oil until the
whole things starts to come together.
18.
It will start to collect at the base and
change colour.
19.
This is the stage to turn off the flame.
20.
Immediately pour the thick mixture into the
greased plate.
21.
Bang the tray lightly to allow the mass to
spread all over and looks evenly spread.
22.
Allow to cool for 5 to 7 minutes.
23.
Now cut the pieces with a greased knife.
24.
Once it is completely cooled, ( approx 20
mins) take the pieces out.
Homemade soft n tasty Mysore Pak is ready.
Enjoy warm or chilled.
25. Enjoy preparing this delicious Mysore Pak for special
occasions and traditional festivals.
26.
Store in an airtight container.
