Mixed Vegetable Sambar - it is quite popular among Indians and for those who wonder what it is? It is the most flavorful soup like dish, which is often eaten with rice as a main course along with some vegetable side dish and appalam / papad. Also it accompanies great with idly, dosa recipes. It is completely healthy as it provides proteins from pulses, anti-oxidants & lot of fibre from veggies and spices. Some of the veggies that suits best for sambar are carrot, pumpkin, brinjal, drumstick, potatoes, raddish, okra, broad beans, french beans, shallots, onions and tomato. This is the easy and quick method, I usually follow to make sambar as it is less time consuming. In this recipe, I used freshly prepared homemade Sambar Pwd. Ingredients

Toor dal - 1 cup

Chopped veggies - 1 bowl

Onion - 1

Tomato - 1

Tamarind - small piece

Oil -2 tsp

Mustard - ¼ tsp

Cumin - ½ tsp

Split urad dal - ½ tsp

Fenugreek seeds - ½ tsp

Green chilly - 1

Curry leaves - 6 to 7

Red chilly - 1

Hing / asafetida - a generous pinch

Turmeric pwd - ¼ tsp

Red chilly pwd - ¾ to 1 tsp

Coriander pwd - 1 ½ tsp

Sambar Pwd - 1 tsp

Fresh coriander leaves

Salt to taste

Instructions

1.

Chop all the colorful & nutritious veggies like carrot, potato, beans, brinjal, drumstick, radish, ladies finger, etc as per your own

choice and keep it ready.

Slice onion and tomato to fine slices.

4.

Wash and soak toor dal for 10 mins.

5.

Add enough water and pressure cook, till the dal is mushy and completely cooked.

Open the lid, mash the lentils and keep aside.

Keep thick tamarind paste by soaking tamarind in warm water for 10 mins and once the tamarind turns soft, squeeze the

tamarind and remove the pulp.

Now heat oil in a fry pan.

Add mustard, cumin, split urad dal, fenugreek seeds, green chilly, curry leaves, red chilly and hing.

Allow to splutter.

Add onion and fry till transculent.

Add mashed tomato and saute for a minute.

Now add turmeric pwd, red chilly pwd, coriander pwd, salt and combine.

Stir for a minute.

Now add the chopped veggies and stir well until the veggies are coated with the spice masala.

Add 1 cup of water and cook covered in medium flame for 4 to 5 mins.

Simmer for few more minutes.

Once the veggies are done, add the mashed dal.

Mix well.

Add some warm water if required to give a medium consistency for sambar.

Allow to boil for 3 to 4 mins.

Now add the thick tamarind juice and stir well.

Cook further for 2 mins.

Add sambar pwd, mix well and allow to boil.

Enjoy the aroma and flavors from the tempting mixture getting infused from the sambar.

Taste and adjust salt and seasonings.

Turn off flame.

30.

Garnish with freshly chopped coriander leaves.

Serve hot with steamed rice, idly, dosas, uthappams, etc.
