Happy Diwali / How to make Gulab Jamun / Step-by-Step Recipe / Easy Diwali Sweets:

Dear Friends, Wish you all Happy Diwali in advance. To enjoy the festive mood, I am sharing here one of the India’s most favorite dessert Gulab Jamuns !!! who doesn’t love it?  Everybody would be addicted to the taste of this mouthwatering special dessert. 
The simple recipe consists of preparing soft spongy milky balls and soaked in rose scented sugar syrup. I have prepared this recipe with readymade gulab jamun pwd. This is an easy and quick way to make. You can also view here to see the traditional method of preparing  Jamun.
Here goes the very simple recipe of ever popular dessert Gulab Jamun.

·           Jamoon pwd                        -  200 g
·           Butter                                   - 1 tsp
·           Sugar                                   - 2 cups
·           Water                                   - 2 cups
·           Cardamom pwd                    - ¼ tsp
·           Saffron strands                    - a few
·           Rose essence                      - few drops
·           Oil                                       - to deep fry
·           Grated almond, cashew, pistachio nuts for garnishing.
1.      In a wide plate sieve gulab jamoon pwd to remove any lumps if any.
2.      Add a little water, 1 tsp of butter and rub with palms gently to make a smooth, soft and sticky dough.
3.      Cover and Keep aside for 10 mins.
4.      Meanwhile we can prepare a sugar syrup.
5.      Take 2 cups of sugar in a wide bowl.
6.      Add 2 cups of water and stir well.
7.      Bring it to boil with continous stirring in low flame.
8.      Keep boiling until sugar syrup starts to thicken.
9.      Once it reaches one thread / string consistency, turn off flame.
10.    Clear the syrup by removing the scum, if any.
11.    Add cardamom pwd, saffron strands and rose essence.
12.    Grease your hands with oil and divide the dough to equal sized balls are of small lengthy shape of your choice.

13.    Heat oil / ghee in a frypan or kadai.
14.    Drop a small piece of the dough to check if the oil is hot enough. The dough ball should rinse and raise immediately to the surface of the oil and start frying.
15.    Add the balls and deep fry on low heat until golden in color.
16.    Keep stirring regularly so jamoons get brown evenly.

17.    Drain it in a paper tissue.
18.    Drop them in the hot sugar syrup.
19.    Do the same for the rest of the jamoon balls.
20.    Allow them to soak for minimum 30 mins.
21.    Transfer to serving plates with grated almond, cashew and pistachio nuts.
22.    Serve hot, cold or at room temperature.
23.    Enjoy lipsmacking gulab jamoons.
·         Take care the temperature of the oil should be in low while frying the jamoons else the outer surface will turn brown with inside being uncooked.
·         You can also stuff grated nuts inside the dough ball and fry.  It tastes absolutely irresistible.

Hello Friends, Today I am here with yet another crispy snack variety which is great for Diwali time. Ring Murukku or Chekodi is no doubt every kids favorite murukku.  Kids used to have these rings in their fingers and enjoy munching. 
This famous South Indian snack pairs up awesome with evening hot cuppa coffee / tea. It is very quick to prepare at home with few ingredients. It is made with rice flour, butter, moong dal, red chilly pwd, cumin seeds and sesame seeds. It can also be flavored with ajwain or black pepper and with hing. 
Try this super crunchy, spicy Ring murukku recipe at your home and enjoy your tea time..:)

·           Rice flour                 - 1 cup
·           Water                      - 1 cup
·           Butter                      - 2 tsp
·           Yellow Moong dal     - 1 ½ tbsp
·           Red chilly pwd          - 1 tsp
·           Cumin                      - 1 tsp
·           Hing                         - a pinch
·           Sesame seeds          - 2 tsp
·           Salt to taste
·           Oil to fry
1.      Wash  and soak the moong dal for 1 hour.
2.      Drain and keep aside.
3.      In a frypan, add water and heat it.
4.      When its boiling, add butter, salt and soaked moongdal.
5.      Mix well.
6.      Add the rice flour and stir with a ladle.
7.      Turn off flame and continue stirring.
8.      Once it forms a dough stage, cover it with a lid and set aside for 10 mins or till it cools down.
9.      Now add the red chilly pwd, cumin, hing and sesame seeds.
10.    Knead to  smooth dough by adding a tsp of oil.
11.    Divide it to small balls.
12.    Take a ball and roll it to lengthy threads.
13.    Cut it to 4 to 5 cm approx length and join the ends.
14.    Press slightly to ring shape as shown in the pic.
15.    Repeat the same for the rest of the dough.
16.    Cover the rings with damp cloth to prevent from dryness.
17.    Heat a pan or kadai with oil.
18.    Once the oil is very hot, drop the murukku in batches.
19.    Turn the flame to medium and fry till both sides of the murukku are evenly brown and crisp.
20.    Strain it in the paper towel.
21.    Spicy, crispy Ring Murukkus are ready.
22.    Store it in an air-tight container for shelf life.

Kasi Halwa is one of the most scrumptious halwa, which will melt-away the moment you put it in your mouth. 
This popular South Indian traditional sweet is made with white pumpkin, sugar, ghee and nuts. The preparation is very simple and is usually enjoyed during weddings, festivals and special ceremonies. 
Here goes the easy yet delicious recipe for you to try at home..:)

·         White pumpkin grated                       - 2 cups
·         Sugar                                               - 1 cup
·         Cashew nuts                                     - 7 or 8
·         Ghee                                                - 3 tbsp
·         Khoya                                              - 1 tbsp
·         Food color (optional)                        - a pinch
·         Cardamom pwd                                - a pinch
·         Saffron strands                                - a few
1.     Peel off the skin of white pumpkin, remove the seeds and shred the inner fleshy part. 

2.     Squeeze out the excess water from the grated pumpkin completely through a strainer. ( do not throw the water. We can use the nutritious water in cooking )
3.     Soak cashew in warm water for 5 mins and slice it to thin pieces.
4.     Heat a pan, add a tbsp of ghee.
5.     Add the shredded pumpkin, saute well.
6.     Cook covered for five minutes or until the raw smell disappears.  The pumpkin should be cooked soft.
7.     Toss well in high flame.
8.     Once it is cooked, the pumpkin will turn glossy and transparent.
9.     At this stage, add sugar and mix well.
10.  The halwa becomes a little watery but keep heating it stirring continuously.
11.  Now you can see the sugar has come to sticky consistency.
12.  Add khoya and combine.
13.  Mix a pinch of food color in 1 tsp of milk and add it to the halwa.
14.  Now add  2 tbsp of ghee and stir continuously in low flame.
15.  It will start forming a mass and leaves the sides of the pan.
16.  Once it reaches the sticky halwa consistency, turn off flame. Add cardamom pwd and saffron strands.
18.  Garnish with cashew nut slices.
19. Transfer it to serving bowl and enjoy.
20.  Serve hot or warm. Both tastes equally delicious.
