Kohlapuri Chicken / Easy step by step recipe:
Kohlapuri Chicken is a spicy, real hot, exotic dish from the city of Kolhapur, Maharashtra state - India.
This famous chicken curry comes out a winner among all those who love the heat of red chillies incorporated with a blend of rich spicy aroma.
(The hot taste may be alarming for others who eats less spicy food, you can alter the spice level accordingly )

In this recipe, the marinated chicken is cooked in spicy, tasty kohlapuri masala prepared. The combination of fresh coconut, onions, tomatoes along with spices makes the masala unique and gives a great taste to the dish.
It goes really well with homemade light & fluffy chapti/ roti or with some naan..!
Here is the super tempting Kolhapuri chicken recipe..:)
Ingredients :
A. For Marination:
- Chicken drumsticks / leg pieces - 5
- Ginger garlic paste - 1 tbsp
- Red chilly pwd - 1 tsp
- Garam masala pwd - 1 tsp
- Turmeric pwd - ¼ tsp
- Lemon juice - 1 tbsp
- Salt to taste
B. To prepare Masala:
- Oil - 3 tbsp
- Cumin - 1 tsp
- Bay leaf - 1
- Green cardamom - 2
- Cloves - 3
- Black peppercorns - ½ tsp
- Star anise - 1
- Coriander seeds - 1 tsp
- Sesame seeds - 1 tsp
- Chopped garlic - 1 tsp
- Onion - 2
- Grated coconut pieces - 2 tbsp
- Tomato - 2
C. To prepare Gravy:
- Red chilly pwd - 1 tsp
- Garam masala pwd - ½ tsp
- Salt to taste
Method:
A. Marination:
- Wash chicken pieces well.
- Make a marinade of ginger garlic paste, red chilly pwd, garam masala pwd, turmeric pwd, salt & lemon juice.
- Rub well all pices on chicken and keep to marinate for about 30 minutes.
B. Masala Preparation
- In a non-stick pan, heat up oil.
- Add whole garam spices and saute for a minute.
- Sauté till spices start to change its color.
- Add sliced onion and cook for another 2 mins.
- Turn off heat and let it cool.
- Meanwhile add sliced tomatoes to blender and make a paste of it & keep aside.
- Now add onion masala ( step 8 ), and grind to smooth paste.
- If required add little water while grinding.
- Freshly ground spicy masala is ready.
C. To Prepare Gravy:
- Heat up oil, add tomato paste & ground masala paste.
- Sauté for a minute.
- Add red chilly pwd, garam masala pwd, salt and cook for just 5 mins.
- Add marinated chicken pieces, mix well.
- Add water to desired consistency, cover and cook for 10 to 15 mins.
- Stir once in a while and take care the gravy doesn’t sticks to bottom.
- Once the chicken is done and cooked tender, turn off flame.
- Hot and spicy kohlapuri chicken is ready to go..!
It tastes best with Chapati , tandoori roti, paratha or with naan..!
