Ingredients:
  • Chicken                      - ½ kg
  • Oil                                - 2 tbsp
  • Mustard seeds              - ¼ tsp
  • Cumin                           - ½ tsp
  • Cardamom                    - 1
  • Bay leaf                        - 1
  • Cinnamon                     - 2
  • Cloves                          - 3 to 4
  • Onion                           - 2
  • Turmeric pwd                - ½ tsp
  • Ginger garlic paste        - 1 tbsp
  • Green chilly                   - 1
  • Curry leaves                  - a few
  • Tomato                         - 2
  • Red chilly pwd              - 1 tsp
  • Coriander pwd               - 2 tsp
  • Cumin pwd                    - 1 tsp
  • Pepper corns                - 2 tsp
  • Salt to taste
  • Freshly chopped coriander leaves
Method:
  1. Wash and chop chicken to fine pieces.
  2. Heat oil in a heavy bottomed kadai / wok.
  1. Add mustard seeds, cumin seeds and wait to crackle.
  1. Add cardamom, cloves, cinnamon and bay leaf
  2. Saute for a while
  3. Add finely chopped onion.
  4. Add powdered salt and saute till light brown.
  1. Add turmeric pwd and ginger garlic paste.
  2. Saute for a minute till raw smell disappears.
  3. Add chopped green chillies, curry leaves.
  4. Give a good stir.
  5. Now add finely chopped tomatoes.
  6. Add red chilly pwd, coriander pwd, cumin pwd and saute well.
  1. Cook for 10 mins in low medium flame.
  2. Now you can see tomatoes are mashed well, the moisture is completely absorbed & oil separates out from the masala.
  1. Now add chicken pieces.
  2. Mix it with the above prepared chettinad masala together.

  1. Cover with a lid & cook for 5 to 7 minutes. ( or till chicken is cooked tender )
  2. Take care not to add water in this step for the chicken to cook, it will get cooked in the masala & chicken itself will let out its own moisture, while getting cooked.
  3. Meanwhile crush peppercorns to coarse pwd. ( freshly ground pepper enhances the taste)
  1. Open the lid, you can see the chicken has oozed out so much moisture, without adding any water.
  1. Check if the chicken is cooked tender.
  1. Now add crushed peppercorns.
  1. Mix well.
  1. You can enjoy the rich spicy aroma lingering all over , rocking your home.
  1. Finally , garnish with freshly chopped coriander leaves.
  1. Awesome Pepper Chicken Chettinad curry is ready to taste.
  1. Enjoy the spicy taste with Chapatti, Naan, Dosa  and  Rice..

  27. The chicken looks so good! That tip you give in step #19 about not adding water is so important. I often forget that chicken will release some of its own juices. I add water and my dish ends up with a diluted taste. Thank you! Great recipe.

  40. Jay, you have out done yourself on this. This looks INSANELY DELICIOUS! Holy crap. I've been wanting to make Chettinadd chicken and I kinda had an idea, but wasn't quite sure. Love the tip you suggested about not adding additional water. I sometimes did and sometimes don't.
QUESTION - did you use chicken breasts or thighs? Skinless? Please advise.

    Thanks.
