Carrot Payasam (Kheer) -Thai Kiruthigai Festival
Carrot Payasam / Kheer is a rich & creamy carrot milk pudding ...!!
This is one of my favorite recipe , which is easy & quick to prepare. It provides health, nutrition while tasting great.
The recipe requires use of fresh carrots rich in B carotene, vitamin A, dietary fibres and anti oxidants.

Today , we prepared this nutritious dessert as an offering to God for Thai Krithigai Pooja .
All Krithigais are days of prayers to Lord Muruga, but the Krithigai of this " Thai " month is one of the most important days. Special poojas, abishekam are performed to the Lord Muruga in temples on this day...!!
Try this delicious carrot kheer or payasam & enjoy the healthy taste...:)
- Carrots - 2 or 3
- Milk - 2 cups
- Cashew - 5 to 6
- Raisins - 6
- Ghee - 1 tbsp
- Cardamom pwd - a generous pinch
- Sugar - 5 tbsp
- Saffron - few strands
- Almond, pistachios for garnishing
Method:
- Wash & peel the skin of carrots.
- Grate them to pieces.
- Pressure cook with ½ cup milk until soft.
- Let cool.
- Roast cashews & raisins to golden in the ghee.
- Blend the carrots till smooth.
- Transfer this in a thick bottomed pan, add the rest of the milk.
- Mix well and cook in low medium heat.
- Add the cardamom pwd, sugar and let cook further for 4 to 5 mins.
- Switch off the heat, add the roasted nuts.
- Powder the pistachios, almond, roughly and sprinkle on top just before serving.
- Serve warm or chilled with few saffron strands garnishing
- Lipsmacking healthy carrot payasam ready to taste..:)

ReplyDeleteThats what I love about food. Same ingredients can be used in variety of recipes providing them a new definition each time:)My mom also makes carrot kheer (gajrela) which looks absolutely different but I am sure both payasam and gajrela are incredible in taste!!:)

ReplyDeleteYou won't believe, I made this yesterday but the recipe was just a bit different in the sense that I microwaved the carrots with water instead of milk, but I loved the steaming with milk even more...lovely pictures too. :)
