Carrot Halwa / Diwali Sweet Recipes

Today is a day for celebration…!!!
Yes, today is my Mom and Dads wedding Anniversary...!
We wish to celebrate my parents wedding anniversary starting with their blessings,  cutting  a  vanilla cake  and sharing sweets with relatives. Then we plan to make a visit to our native temple…! 
I want to tell my parents,
You have been a wonderful parents and I’m proud being your daughter. I love you both too much and we pray to God for so many years for you two together with good health, happiness &  lots of love ..!!
I prepared this  delicious treat   Carrot Halwa  to celebrate this loving moment..:)
·         Carrots                                      - ½ kg
·         Ghee                                        - 3 tbsp
·         Cashew nuts                             - 8
·         Raisins                                     - 12
·         Sweetened condensed milk        -  150 g
·         Sugar                                        -  ½ cup
·         Cardamom pwd                          - ½ tsp
·         Almond                                     - 5
·         Pistachio                                   - 4
1.     Wash and grate the carrot to fine flowers.
2.     Heat ghee in a deep frying pan.
3.     Roast cashew nuts and raisins to golden.
4.     Take aside and reserve.
5.     Add grated carrot and sauté well.
6.     Keep stirring in low flame for 5 mins.
7.     Add milk and cook covered for further 5 mins.
8.     Now add sugar, cardamom pwd and combine.
9.     Cook till the sugar has dissolved and the halwa starts thickening.
10.  Add roasted golden cashew, raisins and ghee.
11.  Simmer for 2 to 3 mins.
12.  Stir  until the halwa is well blended and leaves the sides of the frypan.
13.  Remove from heat and arrange in serving dish.
14.  Garnish with grated almond and pistachio slices.

15.  Now, delicious carrot halwa ready to give a taste....:)

Sweet Corn Pulav / Easy Pulao Recipes

Sweet Corn Pulav:
Sweet corn pulav is a flavored rice  made with corn, vegetables, basmati rice and various Indian spices.  Today , I triled  this tasty and healthy rice recipe for lunch and it came out so well..!
My kids love the color of the rice dish and the golden yellow sweet corns. This recipe is very simple and gets ready very quickly. Sure everyone at home love this complete one pot dish. 
Also, this is very nutritious because of all the vegetables and sweet corn kernels in it.  It tasted delicious  with onion raitha and spicy gravy...! 
Hope you would enjoy this culinary bliss of delicious &  tasty meal…!
·         Basmati rice                               - 2 cups
·         Fresh corn or frozen whole corn - 1 cup        
·         Ghee                                         -  2 tbsp
·         Spring onion                              - 3
·         Ginger                                       - small piece
·         Garlic                                        - 4 cloves
·         Green chilly                               - 2 to 3
·         Onion                                        - 2
·         Capsicum                                  - 1
·         Carrot                                        - 1
·         Garam masala pwd                    - ½ tbsp
·         Salt to taste
·         Freshly chopped coriander leaves                                                                       
1.     Wash Basmati rice and soak in water for 5 minutes.
2.     Cook the rice. Allow to cool and spread in a bowl. Take care each grain of the cooked rice should be separate and non sticky.
3.     Cook the tender sweet corn kernels and keep aside.
4.     Chop all the veg into thin slices.
5.     Chop the leaves of spring onion.
6.     Make a paste of ginger, garlic and green chilly.
7.     Heat ghee in a thick bottomed pan.
8.     Add chopped onions and fry till golden.
9.     Add the ground paste and sauté till raw smell disappears.
10.  Now add all the chopped veg and cook for 3 to 4 mins.
11.  Now add garam masala pwd, salt and combine.
12.  Add the cooked sweet corn, rice and fluff gently.
13.  Garnish with freshly chopped coriander leaves.
14.  Serve hot with papad and spicy gravy.
15.  Yummy n tasty Sweet corn pulav ready to enjoy.

Pomegranate Juice

Pomegranate Juice:

This  is a delicious,  natural and very healthy juice. Pomegranate contains high amount of anti oxidants that are beneficial to our health. Its great flavor and nutritious benefits attracts all,  who seek natural health foods.

Pomegranates lowers blood pressure and decrease stroke risk. It helps in killing harmful bacteria and increases bone density.

 I  love the refreshing taste and make this quite often  at home often, instead of purchasing the juice at shop.  It makes a cooling and healthful  summer drink.

Try this easy and very healthy juice ..!


·         Ripe pomegranate                      - 1 cup
·         Sugar                                        - 1 tsp
·         Water                                       - ½ cup


1.     Cut and take the pomegranate seeds.
2.     Put it in a blender and blend with little water and sugar.
3.     Whisk till frothy.
4.     Strain and serve chill.

5.     Delicious and fresh pomegranate juice ready to taste...:)

Dal Makhani / Kali Dal / Healthy Side Dish Recipes for Roti

Dal Makhani:
Dal makhani is a treasured staple  food  from Punjabi’s Cuisine. This popular dish, which is available in every Indian restaurant, is rich in protein  &  tastes awesome and spicy. 
In this recipe, the black urad dal and red kidney bean is cooked on low heat in tomato puree and fresh cream. And I love  the rich creamy texture and  thick consistency.  This dish combines ideal with chapati, roti, naan or rice.
Enjoy this most characteristic signature dish of Punjab  now..!
·         Black urad dal                           - 1 cup
·         Rajma                                       - ¼ cup
·         Curd                                         - ½ cup
·         Fresh cream                              - ½ cup
·         Oil                                            - 2 tbsp
·         Cumin                                       - ½ tsp
·         Ginger garlic paste                    - 1 tbsp
·         Onion                                       - 2
·         Green chilly                               - 2
·         Tomato puree                            - ½ cup
·         Turmeric pwd                            - ¼ tsp
·         Red chilly pwd                          - 1  tbsp
·         Coriander pwd                           - ½ tbsp
·         Garam masala pwd                    - ½ tbsp
·         Butter                                       - 2 tbsp
·         Salt to taste
·         Freshly chopped coriander leaves
1.     Clean and soak the black urad dal and rajma overnight.
2.     Cook it with water and little  salt in pressure cooker until it is soft.
3.     Over cook it so that the dal is completely mashed.
4.     Add 1 cup of curd and fresh cream and stir in medium flame for 5 minutes.
5.     Heat oil in a fry pan.
6.     Add cumin and wait to splutter.
7.     Add ginger garlic paste and sauté for a minute.
8.     Add chopped onion and fry till transculent.
9.     Add green chillies,  tomato puree and fry till oil separates.
10.  Add turmeric pwd, red chilly pwd, coriander pwd and salt.
11.  Sauté for a minute.
12.  Add dal mixture and combine well.
13.  Cook on medium flame for 4 to 5 mins.
14.  Remove from flame .
15.  Add garam masala pwd and butter.
16.  Mix and garnish with freshly chopped coriander leaves.
17.  Enjoy  hot with chapatti, roti, naan or rice...:)

Sura Puttu /Shark Puttu /Shark Mince Fry - Fish Recipes

Shark puttu is a very tasty and  famous recipe from South Indian Cuisine. This is my favorite dish and love the hot and spicy taste of my Mom’s recipe. She used to prepare this more often for us.  
It tastes delicious as side dish with rice, chapattis or bread.
Try this quick and easy Indian authentic recipe and enjoy..!
·         Shark                            - ½ kg
·         Oil                                - 2 tbsp
·         Onion                           - 2
·         Ginger garlic paste        - 1 tbsp
·         Green chillies                - 3 or 4
·         Turmeric pwd                - ¼ tsp
·         Freshly chopped coriander leaves
·         Salt to taste
1.     Wash the shark pieces.
2.     Boil water in a bowl and cook the shark pieces by adding a pinch of salt and turmeric pwd.
3.     Once the shark flesh is cooked, ( approximaterly 5 to 8 mins ) turn off flame.
4.     Allow to cool and peel off the skin.
5.     Remove the bones and thorns of the fish.
6.     Scramble the cooked flesh and keep aside.
7.     Heat oil in a fry pan.
8.     Add chopped onion and fry till golden.
9.     Add ginger garlic paste and sauté for a minute in low flame.
10.  Add green chillies slit lengthwise and stir.
11.  Now add the mashed fish flakes, salt, turmeric pwd and stir gently.
12.  Keep the flame moderate and sauté well.
13.  Keep turning over frequently approximately for 5 mins.
14.  Fry  until the puttu lets out  an appetizing aroma and turns golden brown.
15.  Turn off the flame.
16.  Add freshly chopped coriander leaves and stir well.
17.  Delicious n spicy Sura puttu ready to serve hot,
18.   It tastes divine with hot onion sambar rice..:)

Bread Upma / Healthy Breakfast Ideas

Bread upma is a healthy and easy to make dish.  It's  a very good break fast menu or can be even had as evening snack. 
I make this often enough as it is quite easy to make & tastes delicious..! in this recipe,  Fresh bread is sliced to small pieces and cooked in oil and spices.
Here is the simple and tasty recipe…:)
·         Bread                                       - 7 to 8 pieces
·         Oil                                            - 1 tbsp
·         Mustard                                    - ¼ tsp
·         Red chilly                                  - 1 or 2
·         Cumin                                       - ½ tsp
·         Curry leaves                              - 4 to 5
·         Asafetida                                  - a pinch
·         Urad dal                                    - ½ tsp
·         Onion                                       - 1
·         Tomato ketchup                        - 1 tbsp
·         Turmeric pwd                            - a pinch
·         Sugar                                       - 1 tsp
·         Salt to taste
1.     Trim the edges and cut bread to small pieces.
2.     Heat oil in a fry pan.
3.     Temper with mustared, cumin, red chilly, curry leaves, asafetida and urad dal.
4.     Add chopped onions and fry till golden.
5.     Add a tbsp of tomato ketchup , turmeric pwd, salt and combine.
6.     Add bread pieces and sauté for a minute.
7.     Add sugar and mix well.
8.     Remove from flame.
9.     Garnish with freshly chopped coriander leaves.
10.  Serve hot with chutney or sauce.
11.  Healthy n delicious bread upma ready to enjoy..!
