Badam ka Halwa / Almond Fudge / Step by Step Recipe

Today is our Wedding Anniversary...!   To celebrate this sweet occasion, I wished to prepare my Hubby’s favorite dessert Badam Halwa, and very happy, when it turned out to be perfect. 
I love my DH as he is always affectionate, understanding, caring and makes me feel special and valuable… I admire his wonderful mind, beautiful soul and the cute surprises he reserves for me..:))
This halwa made of almonds, milk, sugar and clarified butter  is a rich, scrumptious, mouth watering delicacy and quick to make.
This is how I prepared  this sweet, smooth, melt in mouth dessert…:)
  • Badam / Almond                       - 1 cup
  • Milk                                          - 1 cup
  • Saffron strands                         - a few
  • Ghee                                        - 1 cup
  • Sugar                                       - 2 cup
  • Cardamom pwd                         - ¼ tsp
  1. Soak almonds in hot water for ½ an hour.
  1. Peel off the skin.
  1. Grind to fine paste with milk in a blender.
  2. Soak saffron strands in 2 tbsp of warm milk.
  3. Take  a non stick kadhai .
  4. Add 4 tbsp ghee and allow to heat.
  1. Now add almond paste and stir in low flame.
  1. Cook for 5 to 7 mins.
  1. Once it thickens, add remaining milk, saffron soaked in milk and stir well.
  1. Cook further for 3 to 4 mins or till it thickens in low flame.
  2. Now add sugar and cardamom pwd .
  1. Stir continuously in low flame.
  2. The sugar dissolves and the mixture turns liquid.
  1. Continue stirring till the mixture thickens and attains halwa consistency.
  1. Add remaining ghee and mix well.
  1. Garnish with almond slices and saffron strands.
  1. Enjoy  hot n delicious badam halwa now...:)

Spicy Chicken Biryani

Tonight, I prepared spicy chicken biryani , using my Andhra friend, Shakira's recipe. And it came out so delicious! Cooking biryani in hot n spicy taste is often reserved for very special occasions like weddings, parties or holidays. In this recipe, the chicken pieces are marinated in spice mixture and cooked with basmati rice in simmer. This recipe is very famous and trade mark of South Indian Cuisine.
Here is the simple n yummy recipe…!
  • Chicken                         - ½ kg
  • Basmati rice                  - 2 cups
  • Yoghurt                         - 1 cup
  • Ginger garlic paste        - 2 tbsp
  • Red chilly pwd              - 1 tbsp
  • Garam masala pwd        - 2 tsp
  • Turmeric pwd                - ¼ tsp
  • Oil                                - 4 tbsp
  • Clarified butter              - 3 tbsp
  • Cloves                          - 2
  • Cinnamon                     - 2
  • Cardamom                    - 2
  • Bay leaf                        - 1
  • Onion                           - 3
  • Green chilly                   - 1 or 2
  • Mint leaves                   - handful
  • Tomato                         - 2
  • Lemon juice                  - 1 tbsp
  • Salt to taste
  • Chopped coriander leaves
  1. Wash the chicken pieces and drain the water completely.
  2. Wash and soak basmati rice for 5 mins.
  3. Drain and keep it aside.
  4. Make a paste of  yogurt, ginger garlic paste, red chilli pwd, salt , garam masala pwd and turmeric pwd.
  5. Marinate the chicken pieces in this paste for 3 to 4 hours.
  6. Heat oil and clarified butter in a thick bottomed pan.
  7. Add cloves, cumin, cardamom, cinnamon and bay leaves.
  8. Wait to splutter.
  9. Add chopped onion pieces and sauté till it turns soft and transculent.
  10. Add green chillies slit lengthwise, mint leaves and sauté for a minute.
  11. Add chopped tomato and fry till is cooked.
  12. Add remaining garam masala pwd, lemon juice, salt and sauté well.
  13. Add the marinated chicken pieces.
  14. Combine well.
  15. In a pressure cooker, heat a tbsp of ghee.
  16. Add basmati rice and sauté gently for a minute.
  17. Transfer the contents from fry pan and add 3 ½ cups of water.
  18. Mix and pressure cook the rice for one whistle.
  19. Simmer for 5 mins and turn off the flame.
  20. Once the pressure goes off, fluff the biryani gently.
  21. Garnish with freshly chopped coriander and mint leaves.
  22. Serve hot with onion raita, chicken 65 or any gravy.

Mixed Sprouts Masala | Side dish for Roti

Mixed Sprouts Masala:
Mixed Sprouts Masala is one of my favourite and tastes excellent. Frequently, I prepare this for dinner as side dish for chapattis. The combination of mixed sprouts will give different texture, flavor, color , giving the masala a appetizing healthy flavor.  This  is a hearty “ well balanced “ dish and quick to make.
Sprouts are deliciously fresh, colourful and provides us highest amount of vitamins, minerals, proteins, fibre and enzymes. They improve the efficiency of digestion. You can sprout them at home or it is available at all leading Indian departmental stores
Here is the easy recipe to enhance our healthy diet..!!
  • Mixed Sprouts                          - 100 g ( available in Indian departmental stores )
  • Oil                                            - 2 tbsp
  • Onion                                       - 2
  • Tomato                                     - 2
  • Red chilly                                  - 2 or 3
  • Ginger garlic paste                    - 1 tbsp
  • Cloves                                      - 2
  • Cinnamon                                 - 1
  • Cumin                                       - ½ tsp
  • Chana masala pwd                    - 1 tbsp
  • Red chilly pwd                          - ½ tbsp
  • Coriander pwd                           - ½ tbsp
  • Turmeric pwd                            - ¼ tsp
  • Salt to taste
  • Fresh coriander leaves
  1. Boil the mixed sprouts with a cup of water, pinch of salt & turmeric pwd in pressure cooker for one whistle.
  2. The dal should be cooked tender , but not mushy.
  3. Take a thick fry pan.
  4. Add oil and heat it.
  5. Add chopped onion and sauté to golden.
  6. Add ginger, garlic paste and sauté till raw smell disappears.
  7. Add red chilly and chopped tomato.
  8. Fry further for 2 mins.
  9. Allow to cool and grind to coarse paste.
  10. In the fry pan, heat oil.
  11. Add cloves, cinnamon and cumin seeds.
  12. Allow to splutter.
  13. Add this ground coarse paste.
  14. Combine well.
  15. Add chana masala pwd, red chilly pwd, coriander pwd, salt and combine well.
  16. Keep the flame low and allow to cook for 2 mins.
  17. Finally add the cooked sprouts.
  18. Mix and allow it to simmer for 5 mins with a closed lid.
  19. Take it off the stove and serve hot with chopped coriander leaves garnishing.
  1. Combines excellent with chapatti, puri, roti, dosa and with naan...:)

Milagu Vadai / Peppercorn Fritters

Milagu Vadai:

This is a very famous South Indian recipe. Milagu Vadai also famously called as Anjaneyar Vadai or Hanumar Kovil Vadai, since this is a special offering for Lord Anjeneya.

This Milagu Vadai is pretty simple to prepare with very few ingredients and tastes divine with a cup of  hot coffee on a chilly day..!

Here comes the recipe of crispy fried snack …:))

  • Urad dal                        - 1 cup
  • Pepper corn                  - 1 tsp
  • Cumin                           - ½ tsp
  • Curry leaves                  - 7 or 8
  • Rice flour                      - 1 tsp
  • Ghee                            - 1 tsp
  • Oil to fry
  • Salt to taste


  1. Wash and soak the urad dal for 2 hours.
  2. Drain the water completely.
  3. Grind to coarse paste, adding pepper corns, salt, cumin.
  4. Add drops of  water, that is enough to grind in blender.
  5. Take the thick coarse batter in a bowl.
  1. Heat oil in fry pan.
  2. Add chopped curry leaves, rice flour, ghee  to the batter and mix well.
  3. Take small lemon sized ball out of batter.
  4. Pat it flat on a greased plastic sheet.
  5. Drop gently in hot oil.
  6. Deep fry in medium heat.
  7. Once it turns crisp and golden color on both sides, take it out.
  8. Place it on kitchen tissue to remove excess oil.
  1. Yummy & healthy snack ready to enjoy with hot coffee.
