Peanut Rice

Peanut Rice:
Peanut rice is a delicious South Indian  rice. It is very simple to prepare and tastes excellent with a combination of  roasted pappad or hot potato chips. You can also make it with leftover rice. The rich aroma of this recipe makes your heart go nuts for peanuts :))
To speak about the nutritional facts, peanuts are very good source of Vit E, niacin, folate, protein, manganese and monounsaturated fats. And this dish makes a healthy snack food and an ideal lunch box menu. Give it a Try..!
  • Peanut                          - 1 cup
  • Red chilly                      -  5
  • Raw rice                        - 2 cup
  • Urad dal                        - ¼ cup
  • Bengal gram dal            - ¼ cup
  • Gingely oil                    - 1 tbsp
  • Asafoetida                    - ½ tsp
  • Ghee                            - 1 tbsp
  • Mustard                        - ¼ tsp
  • Curry leaves                  - handful
  • Salt to taste
  1. Wash and soak raw rice for 10 mins and pressure cook it.
  2. Once the pressure goes off, add 1 tbsp of gingerly oil, mix well and spread it in a wide bowl. Allow to cool.
  3. Take a dry pan, add peanuts and roast until fragrant
  4. Take it aside and allow to cool.
  5. Add urad dal, Bengal gram dal, red chilly, asafoetida and fry.
  6. Take it aside and allow to cool.
  7. Transfer to a mixer and grind to coarse pwd.
  8. Now add peanuts  and further grind for 4 seconds.
  9. Add this coarse pwd to the cooked white rice and mix gently.
  10. Heat  1 tbsp ghee in a fry pan.
  11. Temper with mustard, urad dal, Bengal gram dal, red chilly, curry leaves and asafetida pwd.
  12. Drop this to the peanut rice and stir well to combine.

  1. Tasty n Healthy, Peanut rice is ready to be served.

Modhagam Sweet

Modhagam Sweet:
Modhagam sweet is one simple, easy, tasty recipe and very healthy too. This sweet is prepared for the festival Vinayagar Chathurti, and is a favorite for Lord Ganesha. Its made out of rice flour, and the inside stuffing is prepared using thengai poornam and crushed healthy ingredients. As you see, this sweet came out awesome, (to my surprise :) ) and here I am giving the recipe of the mouth watering Mothagam sweet ! Try and enjoy now !   
·         Raw rice                        - 2 cup
·         Gingely oil                    - 1 tbsp
·         Badam nut                    - 4
·         Cashew                        - 6
·         Fried gram                    - ½ cup
·         Peanut                          - ¼ cup
·         Sesame seeds              - ¼ cup
·         Cardamom                    - 2
·         Jaggery pwd                 - 1 cup
·         Ghee                            - 2 tbsp
·         Coconut flowers            - ½ cup
·         Salt to taste
To Prepare Outer layer:
  1. Wash raw rice and soak it for 6 to 8 hours.
  2. Drain water from it completely, dry it in a clean cotton towel.
  3. Dry it, such that the rice grains are separated from each other.
  4. Grind rice grains to fine smooth flour.
  5. Sieve this flour to remove any granules present in it.
  6. Put this flour in a cloth (slightly sprinkle water to the cloth) and boil it in an idly cooker for 12 to 15 mins.
  7. Allow to cool, the boiled rice flour is ready.
  8. Now take 1 tb water in a bowl, add 1 tbsp gingely oil, salt to it and allow to boil.
  9. Add the rice flour to this, by stirring continuously until it comes to spongy dough.
  10. Our outer layer for modhagam sweet  is ready
To prepare Inside stuffing:
  1. Take  badam, cashew, fried gram, groundnut, sesame seeds and cardamom in a blender.
  2. Grind to coarse pwd.
  3. Add jaggery pwd and further grind for few seconds.
  4. Add ghee to pan, heat it.
  5. Add coconut flowers and roast in low flame, till it is crispy.
  6. Add the above coarse pwd, roast further in low flame.
  7. Allow to cool and make lemon sized sweet balls of it.
  8. Keep it aside.
  9. Take the outer covering dough, make a small ball of it.
  10. Pat it flat, stuff the sweet balls inside, cover it and make the round shape with tip extruding.
  11. Boil in idly cooker for 12 to 15 mins.

Egg biryani is a very popular Indian recipe and Indian cuisine is famous for its mouth watery flavours, use of natural herbs and spices. 
Tonight, I prepared Egg Biryani in the style called ‘Pakki Biryani’,   here the rice and the egg are cooked separately and then combined in the final step. 
It tasted awesome with the combination of onion raita. You can make it extra spicy by adding more green chilly. 
Here, is the easy recipe for you and enjoy the delicious biryani...:)
·         Eggs                            - 4
·         Raw rice                        - 2 cup
·         Onion big                      - 2
·         Tomato                         - 2
·         Green chilly                   - 2
·         Turmeric pwd                - ¼ tsp
·         Red chilly pwd              - 1 tbsp
·         Ginger garlic paste        - 1 tbsp
·         Ghee                            - 1 tbsp
·         Oil                                - 3 tbsp
·         Garam masala pwd        - ½ tbsp
·         Coriander leaves           - handful
·         Salt to taste
1.     Wash and soak raw rice in water and strain it.
2.     Pressure cook ( make sure not to overcook it) and spread it in a wide bowl.
3.     Add 1 tbsp oil, mix well ( this keeps rice non sticky) and allow to cool.
4.     Break and drop the eggs and beat to blend together.
5.     Heat ghee and oil in a fry pan, add onion, green chilly, chopped tomato and toss it.
6.     Once the tomatoes are cooked, add turmeric pwd, red chilly pwd, ginger garlic paste, garam masala pwd and salt.
7.     Fry well till it turns to thick curry and oil separates.
8.     Add ¼ tb water  and allow to cook for 5 mins.
9.     Add beaten egg, mix and allow to cook in low flame.
10.  Gently stir it and continue cooking for some more mins.
11.  Once the egg masala turns golden and fragrant, add this to the steamed white rice.
12.  Mix gently. Serve hot with fresh chopped coriander sprinklings.

Raggi Puttu is my favorite breakfast. Its a tasty and easy to prepare South Indian dish. Also it makes a delicious and energy filling  breakfast. This dish is very healthy, as it is steam cooked and free from oil. Raggi cereal, is a must one that we should include in our everyday food, coz of its nutritional values and health concern. It is loaded with protein, carbohydrates, minerals, calcium, fibres, iron and phosphorous. 100 g Raggi can provide us 370 calories. Here is the easy recipe for you. Chhole Masala is a North Indian Curry made with chick peas and aunthentic Indian spices. This can be prepared from fresh tomatoes, onions, garlic and ginger. This curry is hearty and flavorful, yet it is low in fat and cholesterol. Chick peas is an excellent source of carbohydrates, protein and zinc. 100 g of chick peas provide us 164 calories. This wonderful filling spicy curry with rich aroma makes an ideal side dish with Batura, Chapati, Poori or Roti. Try this easy to follow recipe of Chhole Masala today and let me know what you think !
·         Chenna                         - 1 cup
·         Onion                           - 2
·         Tomatoes                     - 3
·         Garlic                            - 6 pods
·         Coriander pwd               - 1 tbsp
·         Red chilly pwd              - 1 tbsp
·         Turmeric pwd                - ½ tsp
·         Chhole masala pwd       - 1  tbsp
·         Green chilly                   - 1 or 2
·         Ginger                          - 1/2 inch
·         Chat masala pwd           - ½ tbsp
·         Fresh lemon juice          - 1 tbsp
·         Coriander leaves           - handful
·         Salt to taste
1.     Soak chenna ( white chick peas ) overnight.
2.     Cook and keep it aside.
3.     Heat oil in a pan.
4.     Fry chopped onion till golden brown.
5.     Add coriander pwd, red chilly pwd and saut√©.
6.     Add turmeric pwd and chhole masala pwd.
7.     Saute for 4 mins in low flame.
8.     Add chopped tomato, green chilli, garlic and grated ginger. Fry well.
9.     Now add cooked chick peas.
10.  Add salt, cook for 5 mins in medium flame.
11.  For flavor, add chat masala pwd.
12.  Remove from flame. Add 1 tbsp fresh lemon juice.
13.  Garnish with chopped coriander leaves and onion rings.
14.  Serve hot with Batura, Chapati, poori

Banana Milk Shake:
Banana Milk Shake is a delicious tasy drink. As this is my kids favorite milk shake, I would love to prepare  frequently at home. Its very easy to prepare this nutritious drink. Bananas are great source of phosphorous, calcium, potassium, Vit A, C, E, B6 and niacin. A ripe banana supplies more than 90 cal and is a healthy source of carbohydrates. It makes a perfect, quick and filling breakfast at times. Here is the easy recipe to delight your tastebuds !   

·         Ripe Bananas                - 2
·         Chilled Milk                   - 500 ml
·         Sugar                           - 2 tbsp
·         Vanilla Essence             - 2 drops
·         Crushed ice                   - 1 cup
1.     Boil Milk in low flame, so that it thickens to half of its content.
2.     Remove from flame, once it attains room temperature, refrigerate it.
3.     Peel the bananas, break it to small pieces.
4.     Transfer it in blender, add chilled milk and blend.
5.     Add sugar, vanilla essence and crushed ice and blend, until the shake is smooth and foamy.
6.     Add a tbsp of finely chopped banana pieces in a glass tumbler.
7.     Pour the foamy milk shake to the tumbler, mix well.
8.     Serve it very chill.
9.     Yummy! Enjoy your tasty healthy drink.
