Vegetable Cutlet is an easy delicious snack recipe made of mixed boiled veggies and spices. This healthy snack tastes crispy outside with soft chewy inside. Ingredients

For Veg Masala

Oil - 1 tbsp

Onion - 1

Potato - 1/2

Carrot - 1

French beans - 10

Peas - 1/2 cup

Garlic pwd - 1/2 tsp

Cumin pwd - 1/2 tsp

Turmeric pwd - 1/4 tsp

Red chilli pwd - 3/4 tsp

Coriander pwd - 1 tsp

Garam masala pwd - 1/2 tsp

Amchur pwd - 1/2 tsp

Maida flour - 1 tbsp

Poha - 2 tbsp

Coriander leaves

Salt to taste

To Make Maida Paste

Maida flour - 2 tbsp

Corn flour - 2 tbsp

Oil - 1 tsp

Salt - 1/2 tsp

To Make Veg Cutlets

Bread crumbs - 1 cup

Oil to deep fry

Instructions

To Make Veg Masala

Heat 1 tbsp of oil in frypan.

3.

Add onions and toss until light brown.

4.

Add sliced potatoes, carrots, french beans, peas and saute in high flame.

Cover & cook in low flame for 10 mins. Stir once in a while. (No need to add water. The moisture in veggies is enough for cooking)

Cook until the veggies are cooked soft.

7.

Add salt, garlic pwd, cumin pwd, turmeric pwd, red chilli pwd, coriander pwd, garam masala pwd, amchur pwd and parsley.

Toss good.

Add maida flour and soaked poha. This helps to bind the mixture.

Mix the masala good.

Turn off flame.

Add freshly chopped coriander leaves. Mash the contents.

Set it aside.

To Make Maida Paste

Take maida flour and corn flour in a small bowl.

Add salt and oil.

Add little water and mix to smooth paste as shown in video.

Set it aside.

To Make Veg Cutlet:

Keep bread crumbs ready.

Take a small portion of the veg mixture (step 12) and roll it.

Plat it flat to small thick disc.

Dip it in maida paste.

Roll with bread crumbs and arrange in plate.

Repeat the same for the rest of the veg mixture.

Heat oil in frypan.

Fry the cutlets in hot oil in medium flame.

Deep fry until the veg cutlets are cooked crispy and golden.

Drain from oil in kitchen tissue.

30.

Lipsmacking delicious veg cutlets are ready.
