Milagai Bajji is one of the favorite tea time snack of South India. This chilli bajji tastes amazingly delicious with right mix of spicy & flavorful ingredients. Being born & brought up in Chennai, I'm a great fan of this crispy milagai bajji. Its one of my hot favorite snack, whenever we go to marina beach. The combo of spicy milagai bajji & garma garam coffee tastes divine. Preparing this irresistable snack at home is quite easy. Check out the video recipe here!

Yield - 3 servings

Ingredients

Big chilli / bajji milagai / mirchi - 6 to 8

Gram flour / kadalai maavu - 1 cup

Rice flour - 2 tbsp

Baking soda - 1/2 tsp

Turmeric pwd - 1/4 tsp

Red chilli pwd - 1 tsp

Cumin pwd - 1/2 tsp

Saunf pwd - 1/2 tsp

Salt to taste

Oil to deep fry

Instructions

1.

Wash and dry chillies.

2.

Make a slit and deseed them.

3.

In a mixing bowl, add gram flour, rice flour, baking soda, turmeric pwd, red chilli pwd, cumin pwd, salt and saunf pwd.

4.

Mix well.

5.

Add water little by little and mix to thick smooth batter.

6.

The batter consistency should be thick and free flowing as shown in video.

7.

Heat oil in frypan.

8.

Take a chilli, dip it in batter and drop carefully in hot oil.

9.

Deep fry in medium flame.

10.

Once the milagai bajji is golden and crispy, drain from oil in kitchen tissue.

11.

Repeat the same for all the chillies.

12.

Lipsmacking spicy delicious chennai beach style milagai bajji is ready.

13.

Enjoy hot with red chutney or any dip of your choice.
