Strawberry Popsicles

Its Summer time!!! Its time to relish homemade yummy popsicles that is super easy to prepare at home. Today let me share the easy quick recipe to prepare strawberry ice cream with pure fresh strawberries. The amount of sugar added can be altered according to the sweetness of the strawberry. Kids love this perfect delicious fruit flavored popsicles & be prepared to enjoy the sweet smiles of your loved ones:)


Preparation time:  10 mins

Ingredients

  • Strawberry - 10 to 12
  • Honey - 2 tbsp
  • Sugar - 3 to 4 tbsp
  • Vanilla essence - 1/2 tsp
  • Yoghurt - 1 cup

Method

  1. Clean and wash strawberries.
  2. Drain water completely and slice into halves.
  3. Add to blender.
  4. Add honey and blend to smooth puree.
  5. Keep the strawberry puree aside.
  6. Now take yoghurt or curd in a bowl.
  7. Add vanilla essence and sugar.
  8. Beat to smooth consistency.
  9. Now fill 1/4 portion of ice cream mould with strawberry puree.
  10. Top with sweetened yoghurt.
  11. Again pour 2 tbsp of strawberry puree and top with yoghurt.
  12. Repeat the same for all the moulds.
  13. Freeze in refrigerator overnight or preferably 6 to 8 hours.
  14. Next day, show the moulds in running water for a minute and take the ice cream out of the mould.
  15. Delicious strawberry ice cream / strawberry popsicles are ready to enjoy.
  16. Serve immediately.
  17. Enjoy the lovely smiles of your kids by tasting the homemade strawberry popsicles.

It tastes super delicious with roti, paratha, naan, kulcha or even with biryani, fried rice. Trust me, its quite easy to prepare this creamy addictive paneer tikka masala can be prepared at home very easily just like we taste in restaurants. The recipe consists of 2 parts. First to make grilled paneer tikka and second step is to prepare the lovely vibrant gravy in which the juicy paneer chunks are soaked in. Try this heavenly masala recipe today at your home!

Ingredients


To make paneer tikka:

  • Paneer - 200 g
  • Yoghurt - 3 tbsp
  • Turmeric pwd - 1/4 tsp
  • Red chilly pwd - 1/2 tsp
  • Besan flour - 1 tbsp
  • Cumin pwd - 1/2 tsp
  • Ajwain - 1/2 tsp
  • Chat masala pwd - 1/4 tsp
  • Garam masala pwd - 1/2 tsp
  • Coriander pwd - 1 tsp
  • Pepper pwd - 1/4 tsp
  • Ginger garlic paste - 1 tsp
  • Tandoori masala pwd - 1/2 tsp
  • Oil - 1 tbsp
  • Lemon juice - few drops

To make masala

  • Oil - 2 tbsp
  • Cinnamon - 1
  • Cloves - 4
  • Bay leaf - 1
  • Onion - 1
  • Tomato - 2 to 3
  • Ginger garlic paste - 1 tbsp
  • Tomato ketchup - 2 tbsp
  • Turmeric pwd - 1/4 tsp
  • Red chilli pwd - 1 tsp
  • Coriander pwd - 1 tsp
  • Cumin pwd - 1/2 tsp
  • Chat masala pwd - 1/2 tsp
  • Corn flour - 1 tbsp
  • Fresh cream - 50 ml
  • Salt to taste
  • Fresh coriander leaves

Method


To make Paneer Tikka

  1. Wash and slice paneer to bite sized cubes.
  2. In a mixing bowl, add yoghurt, turmeric pwd, red chilly pwd, besan flour, cumin pwd, ajwain, chat masala pwd, garam masala pwd, coriander pwd, pepper pwd, ginger garlic paste, salt, tandoori masala pwd, oil and lemon juice.
  3. Mix it to smooth paste.
  4. Add paneer cubes and coat well with masala.
  5. Add sliced capsicum, onion and tomato.
  6. Mix and allow to marinate for minimum 1 hour.
  7. Soak bamboo skewers in water for 20 mins to avoid getting burnt.
  8. Now insert marinated paneer, onion, tomato and capsicum alternatively in skewers.
  9. Grease some masala & oil over it.
  10. Place the skewers in grill and keep in oven.
  11. Grill for 8 to 10 mins or until charred as shown in video.
  12. Healthy delicious grilled paneer tikka is ready.
  13. Keep it aside.

To make Tikka masala:

  1. Heat 2 tbsp of oil in frypan
  2. Add bay leaf, cinnamon and cloves.
  3. Allow to splutter.
  4. Make a paste out of 1 onion and add the onion paste to the pan.
  5. Fry until paste turns light brown.
  6. Add ginger garlic paste and saute.
  7. Add tomato puree and cook until oil separates.
  8. Add turmeric pwd, red chilli pwd, coriander pwd, cumin pwd and chat masala pwd.
  9. Combine the masala.
  10. Cover and cook for 2 mins.
  11. Add tomato ketchup and mix.
  12. Make a thin paste out of 1 tbsp of corn flour and 1/4 cup of water.
  13. Add the corn flour paste to the masala and stir.
  14. Add fresh cream and give a quick stir.
  15. Add the grilled paneer and toss in high flame.
  16. Turn off flame.
  17. Garnish with freshly chopped coriander leaves.
  18. Delicious restaurant style paneer tikka masala is ready.
  19. Serve hot with roti, naan, paratha or even with rice dishes.

Palak Paratha

Palak Paratha is one of the flavorful and best paratha recipe that can be prepared for dinner. It can be prepared in a jiffy and tastes heavenly with a combo of pickle and raitha. We know palak is loaded with vitamins, fibres and minerals. In this recipe the palak puree or spinach puree is combined with wheat flour and spices and kneaded to smooth dough and prepared paratha. Its an excellent way to include healthy greens in our diet that too tasty!

Ingredients

  • Palak (keerai / spinach) - 1 bowl
  • Green chilli - 2
  • Grated ginger - 1 tsp
  • Garlic - 3
  • Besan flour - 2 tbsp
  • Wheat flour - 2 cups
  • Ajwain pwd - 1/2 tsp
  • Oil - 2 to 3 tbsp
  • Butter - 2 tsp
  • Salt to taste

Method

  1. Clean and wash palak. Slice to pieces.
  2. Boil 4 to 5 cups of water in pan.
  3. Add palak and allow to boil for 2 to 3 mins.
  4. Turn off flame.
  5. Drain palak from water.
  6. Add it to blender.
  7. Add green chilli, ginger and garlic.
  8. Add 1/4 cup of water and grind to smooth paste.
  9. Transfer the paste to mixing bowl.
  10. Add salt and besan flour.
  11. Give a quick mix.
  12. Add wheat flour little by little and knead.
  13. Add oil and knead to smooth soft dough.
  14. Cover the dough with damp cloth and allow to rest for 5 mins.
  15. Divide the dough into equal sized balls.
  16. Take a ball, pat it flat.
  17. Dust with flour and roll it to thick round disc.
  18. Repeat the same for the rest of the dough.
  19. Melt a tsp of butter in frypan.
  20. Place the paratha in the hot pan and cook on both sides.
  21. Drizzle oil to the sides and roast until golden brown.
  22. Remove from flame.
  23. Aromatic delicious palak paratha is ready.
  24. Serve hot with pickle and raitha.

Chilli parotta is one of my favorite in restaurants. I finally gave a try at home and it turned out awesome. If you have parottas in hand, then this classic dish can be prepared in minutes. It is prepared with shredded parotta cooked in capsicum, onions and aromatic spices. It pairs up excellent with onion raitha. Here goes the quick recipe!

  • Parotta - 3
  • Onion - 1
  • Green capsicum - 1/2 
  • Red capsicum - 1/2
  • Oil - 2 tbsp
  • Cumin - 1/2 tsp
  • Ginger garlic paste - 1 tbsp
  • Green chilli - 2
  • Turmeric pwd - 1/4 tsp
  • Red chilli pwd - 1/2 tsp
  • Garam masala pwd - 1/2 tsp
  • Cumin pwd - 1/2 tsp
  • Red chilli sauce - 2 tsp
  • Tomato ketchup - 2 tsp
  • Salt to taste
  • Coriander leaves to garnish

Method

  2. Roast parottas to golden in frypan.
  3. Slice to fine pieces as shown in video.
  4. Set it aside. 
  5. Heat 2 tbsp of oil in frypan.
  6. Add cumin and allow to splutter.
  7. Add green chilli and toss.
  8. Add ginger garlic paste and saute for a minute.
  9. Add sliced onion, salt and toss in high flame.
  10. Add cubed green capsicum and red capsicum
  11. Toss good.
  12. Add turmeric pwd, red chilli pwd, cumin pwd, garam masala pwd, tomato ketchup and red chilli sauce.
  13. Combine good.
  14. Add sliced parotta and give a quick stir.
  15. Cover and cook in low flame for 4 to 5 mins.
  16. Turn off flame.
  17. Garnish with freshly chopped coriander leaves.
  18. Yummilicious homemade chilli parotta is ready.

Just the name, Paal Ice ...makes me remember the lovely summer vacation days that we used to enjoy it almost daily. Hope most of you have similar childhood memories with this milk popsicles. This creamy smooth delicious ice cream can be prepared at home easily. It tastes divine with the flavor of cardamom and vanilla essence. Check out this simple video recipe that take you through simple process of preparing homemade paal ice cream. Enjoy!

Ingredients

  • Whole milk - 1 litre
  • Corn flour - 1 tbsp
  • Fresh cream - 2 to 3 tbsp
  • Sugar - 1/2 cup
  • Cardamom pwd - a pinch
  • Vanilla essence - 1 tsp

Method

  1. Add whole milk to pan.
  2. Heat in low flame with stirring.
  3. Let it boil until the milk thickens and reduce to half of its volume.
  4. In a small bowl, add 1 tbsp of corn flour and add little water and mix it to thin paste.
  5. Add corn flour paste to milk and stir.
  6. Add fresh cream, sugar and cardamom pwd and stir.
  7. Add vanilla essense and stir for 2 more mins.
  8. Turn off flame and allow to cool.
  9. Pour in ice cream moulds.
  10. Freeze overnight in refrigerator.
  11. Next day...show the moulds in running water for few seconds, to remove the ice cream from the moulds.
  12. That's it...lipsmacking creamy delicious homemade paal ice cream is ready!

She prepares this mutton bone soup frequently & is very nutritious, great appetizer & tastes divine. In this south Indian style soup recipe, the mutton bones to cooked soft along with aromatic spices and tempered with bay leaf, cinnamon & cloves. The spice level is mild & you can alter it according to your taste & preference.

Ingredients

  • Mutton bones - 250 g
  • Onion - 1/2
  • Tomato - 1
  • Ginger garlic paste - 1 tsp
  • Turmeric pwd - 1/4 tsp
  • Red chilli pwd - 1/2 tsp
  • Pepper pwd - 1/2 tsp
  • Toor dal - 1 tbsp
  • Oil - 1 tsp
  • Bay leaf - 1
  • Cinnamon - 1
  • Cloves - 4
  • Salt to taste
  • Curry & coriander leaves

Method

  1. Clean and wash mutton bone pieces.
  2. Add it to cooker.
  3. Add sliced onion, tomato, curry & coriander leaves.
  4. Add ginger garlic paste.
  5. Add turmeric pwd, red chilli pwd, toor dal and salt.
  6. Add 4 to 5 cups of water and stir.
  7. Cover & pressure cook for 4 whistles in high flame.
  8. Simmer the flame and cook for another 10 to 12 mins. 
  9. Turn off flame.
  10. Once the pressure goes off, open the lid and mash the contents.
  11. You can see the mutton bones are cooked perfect as shown in video.
  12. Heat 1 tsp of oil in frypan.
  13. Add cinnamon, cloves, bay leaf and curry leaves.
  14. Allow to splutter.
  15. Add the seasonings to mutton soup and stir.
  16. Add pepper pwd and turn off flame.
  17. Add freshly chopped coriander leaves.
  18. Serve hot.
  19. It tastes lipsmacking delicious with all the goodness of it.

Method
  1. Heat oil in frypan.
  2. Add cumin seeds and saute.
  3. Add sliced green chilli and onions.
  4. Add salt and saute for few mins.
  5. Add ginger garlic paste and saute.
  6. Add grated carrots and cabbage.
  7. Toss in high flame.
  8. Add turmeric pwd, red chilli pwd, chat masala pwd and sugar.
  9. Saute good and cook covered in low flame for 5 mins.
  10. Add finely sliced capsicum and tomatoes.
  11. Cook for a minute.
  12. Add tomato ketchup and saute.
  13. Add freshly chopped coriander leaves and turn off flame.
  14. Allow the spicy masala to cool.
  15. Heat a griddle.
  16. Melt a tsp of butter.
  17. Roast bread slices to golden and crispy.
  18. Set the roasted bread in plate.
  19. Add a tbsp of spicy masala and spread evenly.
  20. Repeat the same on all the bread slices.
  21. Sprinkle grated cheese on top of it as shown in video.
  22. Cut the bread into halves.
  23. Yummilicious, spicy bread masala toast is ready.
  24. It makes a tummy filling & tongue tickling snack or breakfast dish.
  25. Pairs up excellent with tomato ketchup or any dip of your choice.

Hello friends, i got quite a lot of emails for "Mango Pachadi" recipe, so here you go with this authentic, delicious & simple recipe. Mango Pachadi is one of the very special recipe prepared for Tamil New Year which falls on 14th April. It tastes heavenly delicious with sweetness, sourness & tanginess. Its prepared with raw mangoes and jaggery & tempered with mustard seeds, red chilli & neem flowers. Am happy to share my mom's signature recipe of mango pachadi here with you all:)

Ingredients

  • Raw mango - 1
  • Powdered jaggery - 1 cup
  • Turmeric pwd - a pinch
  • Oil - 2 tsp
  • Mustard - 1/4 tsp
  • Cumin - 1/2 tsp
  • Split urad dal - 1/2 tsp
  • Asafoetida pwd or hing - a pinch
  • Red chilli - 2
  • Curry leaves - a few
  • Neem flowers - a few
  • Salt to taste

Method

  1. Grate mango to fine shreds.
  2. Powder jaggery & set it aside.
  3. Heat a kadai or frypan.
  4. Add a tsp of oil.
  5. Add grated mango and saute for 2 mins.
  6. Add salt and turmeric pwd.
  7. Add 1/2 cup of water and toss.
  8. Cover & cook in low flame for 5 mins.
  9. Once the mango is cooked well, add powdered jaggery and stir.
  10. The jaggery dissolves and starts thickening.
  11. Cook for few more mins.
  12. Once the mixture is thickened, turn off flame.
  13. Heat 1 tsp of oil in a small frypan.
  14. Add mustard, cumin, split urad dal, curry leaves, hing and red chilli.
  15. Allow to splutter.
  16. Turn off flame.
  17. Add few fresh or dried neem flowers.
  18. Fry good.
  19. Add to mango pachadi and mix.
  20. That's it...authentic delicious mango pachadi is ready.
  21. Enjoy the tongue tickling taste.
  22. It pairs up well with rice dishes or even with idli, dosa & roti.

The  Mango season is nearing its end, yet delicious and juicy mangoes like Alphonso, Neelam and banganapalli are available at market. I love fresh mangoes blended with milk & sugar . 
This cool n tempting drink goes well with light lunch & it is very nutritious with high calorie content. 
Try preparing this tasty mango recipe at home..:)
Ingredients:
·         Ripe sweet mangoes                  -  2
·         Milk                                          - 1 cup
·         Mango ice cream                       - 1 dollop
·         Ice crushes                               - ½ cup
·         Sugar                                        - 1 or 2 tbsp
Method:
1.     Blend all the above ingredients.
2.     Serve chilled topped with a scoop of mango ice cream.
 Now enjoy the delicious homemade mango milkshake.

How to make Dahi Vada / Dahi Bhalla Recipe / Easy Chat Recipes

Dahi Vada Recipe 

Chats are always a yummy favorite of everyone. Dahi bhalla is a popular north Indian chat recipe that makes a filling & nutritious evening snack. The delicious and fluffy bhallas (vadas) are prepared and then soaked in chilled sweetened curd and garnished with green & sweet chutneys with aromatic spices sprinkled all over. The softness & the sponginess of the dahi soaked vada tastes amazingly delicious. Check out this all-time favorite dahi bhalla chat recipe here!

Cooking time:  30 mins

Ingredients

  • Urad dal - 1 cup
  • Green chilli - 1
  • Grated ginger - 1 tsp
  • Hing / asafoetida pwd - a pinch
  • Yoghurt or curd - 3 cups
  • Sugar - 1 tsp
  • Green chutney - 1 tbsp
  • Sweet chutney - 1 tbsp
  • Red chilli pwd - to garnish
  • Cumin pwd - to garnish
  • Chat masala pwd - to garnish
  • Salt to taste
  • Oil to fry

Method
To make Vada

  1. Wash & soak urad dal in water for 1 hour.
  2. Drain water and add the urad dal to blender.
  3. Add grated ginger, green chilli, salt and hing.
  4. Grind to smooth soft batter.
  5. Sprinkle little water if required.
  6. The batter should be airy and light. 
  7. Transfer the batter to mixing bowl.
  8. Heat oil in a kadai or frypan.
  9. Wet your hands with water and take a small portion of batter (as shown in video) & drop carefully in hot oil.
  10. Fry 5 to 6 vadas in a batch. Try not to overcrowd the oil.
  11. Deep fry until the vadas are crispy & golden.
  12. Drain the vadas from hot oil and keep in kitchen tissue to remove excess oil.
  13. Yummy Vadas with crispy exterior and soft chewy inside is ready.
  14. Soak the crispy vadas in warm water for 5 to 10 mins.
  15. Squeeze the water gently and take it aside.

Lets prepare curd:

  1. Take thick chilled curd in mixing bowl.
  2. Add 1/2 tsp of salt and 1 tsp of sugar to it.
  3. Beat to smooth consistency.

To make Dahi bhalla

  1. Add the soft spongy vadas in curd.
  2. Mix well.
  3. Let it soak for minimum 20 mins

To Serve:

  1. Take the soaked vadas along with dahi in serving bowl.
  2. Add enough curd to it.
  3. Add a tsp of green chutney and sweet chutney on top of it.
  4. Sprinkle red chilli pwd, cumin pwd and chat masala pwd.
  5. Serve warm or chilled.
  6. Yummilicious Dahi bhalla is ready.
  7. Enjoy!

  • Sliced green capsicum - 2 tbsp
  • Green chilli - 1
  • Olives - 1 tbsp
  • Jalapeno - 1 tbsp
  • Sweet corn - 2 tbsp
  • Pizza sauce - 2 to 3 tbsp
  • Italian seasoning - 1 tsp
  • Mixed herbs - 1 tsp
  • Red chilli flakes - 1 tsp
  • Pepper pwd - 1/2 tsp
  • Salt to taste

Method

  1. Add 1 cup of warm water in a mixing bowl.
  2. Add 1/2 tsp of salt and sugar.
  3. Stir well to dissolve.
  4. Add wheat flour little by little and knead to smooth soft dough.
  5. Add a tbsp of oil and knead soft.
  6. Cover the dough with a wet cloth and let the dough rest for 5 mins.
  7. Now knead the dough again and divide to equal sized balls.
  8. Set it aside.
  9. In a frypan, heat 1 tbsp of oil.
  10. Add sliced green chilli and onions.
  11. Saute for a minute.
  12. Add sliced red capsicum and green capsicum.
  13. Toss for a minute and turn off the flame.
  14. Add sweet corn and mix.
  15. Let it cool down.
  16. Add it to mixing bowl.
  17. Add sliced jalapenos, olives and mozarella cheese.
  18. Add italian seasoning, mixed herbs, red chilli flakes and pepper pwd.
  19. Give a quick stir. 
  20. Cheesy stuffing is ready.
  21. Take a dough ball and roll it to thin round discs.
  22. Smear 1 tbsp of pizza sauce on it.
  23. Place 2 to 3 tbsps of stuffing (as shown in video) and spread.
  24. Now close one side of the paratha to the other end and seal the edges.
  25. Heat oil in griddle.
  26. Place the stuffed paratha carefully.
  27. Cook on both sides until it's golden brown.
  28. Remove from griddle.
  29. Slice it to half.
  30. Cheesy...gooey pizza paratha is ready.
  31. Kids enjoy this healthy stuffed paratha along with tomato ketchup or any dip of their choice.

Ingredients

  • Jaggery - 1 cup
  • Lemon - 1/2
  • Cardamom pwd - 1/2 tsp
  • Sukku (dry ginger) pwd - 1/2 tsp
  • Jadhikkai (nutmeg) pwd - 1/2 tsp
  • Cold water - 3 to 4 cups
  • Tulsi (Basil ) leaves - a few

Method

  1. Add powdered jaggery to mixing bowl.
  2. Add 1 cup of water and stir.
  3. Once the jaggery is dissolved completely, strain the jaggery water and remove the impurities in a strainer.
  4. Add the clean jaggery water to bowl.
  5. Add cardamom pwd, dry ginger pwd (sukku pwd), nutmeg pwd (jadhikkai pwd) and combine.
  6. Squeeze the juice out of half lemon.
  7. Crush few tulsi leaves and add to the panakam.
  8. Stir good.
  9. Now add 2 to 3 cups of cold water and mix.
  10. That's it ..delicious & healthy summer cooler recipe ..Panakam is ready.

Egg Fried Rice

Ingredients

  • Basmati Rice - 1 cup
  • Eggs - 2 to 3
  • Oil - 2 tbsp
  • Onion - 1
  • Spring onions chopped - 1 cup
  • Carrot - 1
  • Green chilli - 2
  • Grated ginger - 1 tsp
  • Grated garlic - 2 tsp
  • Lemon juice - few drops
  • Soya sauce - 1 tsp
  • Vinegar - 1 tsp
  • Salt to taste
Method
  1. Wash & soak basmati rice in water for 10 mins.
  2. Drain water & set aside.
  3. Heat a thick bottomed pan.
  4. Add 4 to 5 cups of water to it and allow to boil.
  5. Add the basmati rice to it.
  6. Add 1/2 tsp of salt, 1 tsp of oil and squeeze few drops of lemon juice.
  7. Stir and cook.
  8. Once the rice starts boiling, stir gently and cook.
  9. You can see the rice is cooked after approximately 5 mins as shown in video.
  10. Turn off flame.
  11. Strain the cooked basmati rice in strainer and drain the water.
  12. Spread the rice in a bowl and allow to cool.
  13. In a small mixing bowl, add 2 tbsp of water.
  14. Add 1/2 tsp of salt, a pinch of turmeric pwd, 1/2 tsp of pepper pwd and 1/4 tsp of red chilli flakes.
  15. Stir well.
  16. Break the eggs and drop into mixing bowl.
  17. Beat it well.
  18. Heat 1 tbsp of oil in frypan.
  19. Add the egg mixture and cook.
  20. Scramble the eggs in medium flame.
  21. Turn off flame and take aside the scrambled eggs.
  22. Heat 2 tbsp of oil in frypan.
  23. Add grated garlic, ginger and green chilli.
  24. Toss for a minute.
  25. Add sliced onions, salt and toss.
  26. Add sliced capsicum, spring onions white and diced carrots.
  27. Saute the veggies in high flame.
  28. Add soya sauce and vinegar.
  29. Toss good.
  30. Add scrambled eggs and cooked basmati rice.
  31. Keep tossing until the rice is well fried.
  32. Turn off flame.
  33. Sprinkle freshly chopped spring onion (green) and coriander leaves.
  34. Lipsmacking flavorful delicious Egg fried rice is ready.
  35. Enjoy hot with any curry of your choice.
