Tomato Dosa 

Here comes the very easy & quick tomato dosa recipe, which i prepared yesterday and my family loved it. It tastes too good & serves handy for quick dinner or breakfast. This instant no ferment dosa recipe is simple and you must give it a try. It has a mixed combo of spicy, tangy & delicious taste so it combines perfect with any chutney.  Check out the quick video recipe to prepare easy tomato dosa at home.

Ingredients

  • Raw rice - 1 cup
  • Ripe tomatoes - 3 or 4
  • Grated ginger - 1 tsp
  • Red chilli - 2
  • Sliced onion - 1/4 cup
  • Cumin seeds - 1 tsp
  • Coriander and curry leaves
  • Salt to taste
  • Oil to cook

Method

  1. Wash and soak rice in water for 4 hours.
  2. Drain water and set aside.
  3. Add rice to blender.
  4. Add grated ginger, red chilli, sliced tomatoes, cumin seeds and salt.
  5. Add 1/4 cup of water and grind to smooth batter.
  6. Transfer to mixing bowl.
  7. Add finely sliced onions, curry and coriander leaves.
  8. Mix well and set the batter ready.
  9. Heat a dosa griddle.
  10. Drizzle oil on hot pan.
  11. Take a ladle full of dosa batter and spread on concentric circles as shown in video.
  12. Cover and cook for few minutes in medium flame.
  13. Flip & cook on both sides until crispy.
  14. Once done, remove from heat.
  15. Spicy, tangy delicious tomato dosa is ready.
  16. Repeat the same for the rest of the batter.
  17. Enjoy hot.
  18. My favorite combo is tomato dosa with coconut chutney.
  19. It pairs up excellent with any dip /chutney of your choice.

Ingredients

  • Grated coconut - 1 cup

  • Hing / asafoetida pwd - a pinch

  • Split urad dal - 1/2 tsp

Method

  1. Grate coconut and keep it ready.
  2. In a blender add, roasted gram, grated coconut, grated ginger, green chilli, salt and grind to coarse mixture.
  3. Add 1/4 cup of water and grind to smooth chutney.
  4. Transfer to serving bowl.
  5. In a small pan, heat 1 tsp of oil.
  6. Add mustard, cumin, split urad dal, hing and curry leaves.
  7. Allow to splutter.
  8. Turn off flame.
  9. Add to chutney and mix.
  10. Healthy & traditional thengai chutney is ready.
  11. It pairs up excellent with idli, dosa, medu vada, pongal, kichadi, etc.

Ingredients

  • Ripe banana - 1
  • Egg - 1
  • Wheat or maida flour - 1 cup

  • Vanilla essence - 1 tsp

Method

  1. Beat an egg in mixing bowl.
  2. Add ripe bananas and mash well.
  3. Add wheat flour, sugar, cinnamon pwd, salt, vanilla essence, nutella and milk.
  4. Beat to smooth batter.
  5. Heat oil or butter in frypan.
  6. Take a ladle full of batter and pour in hot pan.
  7. Cook in medium flame on both sides.
  8. Remove from heat.
  9. Repeat the same for the remaining batter.
  10. Smear nutella on top of pancakes.
  11. Drizzle honey and garnish with banana slices and sugar balls.
  12. Yummilicious chocolate pancake is ready.
  13. Enjoy warm.

Its one of the kids favorite recipe. This popular street food is very easy to prepare at home within 25 mins. I prepare it very often and its absolutely delicious too. Ingredients

  • Oil - 2 tbsp
  • Potato - 1 big
  • Paneer - 100 g
  • Butter - 1 tbsp
  • Chapathi - 4
  • Onion - 1
  • Carrot - 1
  • Capsicum - 1/2
  • Turmeric pwd - 1/4 tsp
  • Red chilli pwd - 3/4 tsp
  • Coriander pwd - 1/2 tsp
  • Garam masala pwd - 1/2 tsp
  • Chat masala pwd - 1/2 tsp
  • Amchur pwd - 1/2 tsp
  • Coriander leaves
  • Salt to taste

Method

  1. Heat 1 tbsp of oil in frypan.
  2. Add sliced onions and toss for a minute.
  3. Add sliced carrots and capsicum.
  4. Add 1/2 tsp of salt, 1/2 tsp of red chilli flakes and a pinch of chat masala pwd.
  5. Toss in high flame.
  6. Remove and set aside.

To prepare inner stuffing:

  1. Heat 1 tbsp of oil in frypan.
  2. Add cumin seeds and wait to splutter.
  3. Add boiled and mashed potato.
  4. Toss good.
  5. Add finely grated paneer and toss.
  6. Add peas and coriander leaves.
  7. Combine good.
  8. Add turmeric pwd, red chilli pwd, coriander pwd, cumin pwd, garam masala pwd, chat masala pwd and amchur pwd.
  9. Mix the masala.
  10. Add 1/4 cup of water and allow to cook.
  11. Once the masala thickens, turn off flame and allow to cool.

To prepare Patties:

  1. Once the veg stuffing is cooled, knead it to thick dough as shown in video.
  2. Make small balls out of it.
  3. Pat it to thick flat shapes. (refer video)
  4. Place it in frypan.
  5. Drizzle oil and shallow fry until done.
  6. Remove and set aside.

To prepare Frankies (veg rolls)

  1. Melt a tsp of butter in frypan.
  2. Place the chapatis and roast it for a minute.
  3. Set it aside.
  4. Repeat the same for all the chapatis.
  5. Lets prepare rolls - Take a chapati, smear with butter.
  6. Sprinkle red chilli flakes and chat masala pwd.
  7. Add freshly chopped coriander leaves.
  8. Add the sauted onions, carrot & capsicum (step 6)
  9. Add the fried veg pattie and top with more coriander leaves.
  10. Now fold the bottom part of chapati.
  11. Fold the sides to form a wrap as shown in video.
  12. Wrap it with aluminium foil.
  13. Healthy delicious veg frankie rolls are ready.
  14. It tastes yummy by itself or along with tomato ketchup or any dip of your choice.
  15. Enjoy warm.

Ingredients

  • Whole milk - 1/2 litre
  • Almonds - 10 (soaked & skin peeled)
  • Cashewnuts - 7
  • Pistachios - 10
  • Saffron strands - a few
  • Raw sugar or palm sugar - 4 to 5 tbsp
  • Cardamom pwd - a pinch
  • Turmeric pwd - a pinch
  • Pepper pwd - a pinch
  • Cloves - 2
  • Cinnamon - 1
  • Cardamom - 1

Method

  1. Take 1/2 cup of milk in a small bowl.
  2. Add cashew, badam (peeled), pistachios in the bowl.
  3. Allow to soak for 10 to 15 mins.
  4. In a small cup, take 2 tbsp of milk.
  5. Add few saffron strans and allow to soak.
  6. Now add 2 & 1/2 cups of whole thick milk to pan.
  7. Heat in medium flame.
  8. Once the milk starts boiling, add cinnamon, cloves and cardamom.
  9. Stir well and boil in low flame for 10 mins or until milk reduces to half of its volume.
  10. Meanwhile add the soaked nuts to blender.
  11. Add few little milk and grind to fine smooth paste.
  12. Once the milk is thickened well, remove the cardamom, cinnamon and cloves.
  13. Stir the milk and add the saffron soaked milk.
  14. Add the nuts paste from the blender.
  15. Add turmeric pwd, raw sugar, cardaom pwd and stir.
  16. Once the milk starts boiling, stir and turn off flame.
  17. Garnish with chopped nuts.
  18. Serve warm or chilled.
  19. Healthy flavorful delicious homemade masala pal is ready.

Tomato Thokku Recipe | Easy Thakkali Thokku Recipe | Side Dish for Idli, Dosa, Chapati

Tomato Thokku:  

Tomato chutney or thokku is a popular recipe of South Indian cuisine. Once the tomato season is on with ripe tomatoes abundant and cheap at market, my mom prepares this delicious thakkali thokku at home. It is one of the delicious side dish with any Indian dishes like roti, chapati, idli, dosa, upma and even for steamed rice. The juicy ripe tomatoes are cooked along with flavorful spices to thick masala. In this video recipe, I will show you how to make heavenly delicious tomato thokku. Enjoy!

Ingredients

  • Tomato - 4 to 5
  • Onion - 2
  • Oil - 2 tbsp
  • Mustard - 1/4 tsp
  • Cumin - 1/2 tsp
  • Split urad dal - 1/2 tsp
  • Chana dal - 1 tsp
  • Garlic - 4
  • Ginger paste - 1/2 tsp
  • Turmeric pwd - 1/4 tsp
  • Red chilli pwd - 1 tsp
  • Coriander pwd - 1 & 1/2 tsp
  • Cumin pwd - 1/2 tsp
  • Garam masala pwd - 1/2 tsp
  • Saunf pwd - 1/2 tsp
  • Ghee - 1 tsp
  • Sugar (optional ) - 1/2 tsp
  • Curry leaves
  • Coriander leaves
  • Salt to taste
Method
  1. Wash and slice onion and tomato
  2. Heat oil in frypan.
  3. Add mustard, cumin, split urad dal and wait to splutter.
  4. Add chana dal, curry leaves and saute.
  5. Add grated garlic and saute for a minute.
  6. Add finely sliced onion, salt and toss until onions are transculent.
  7. Add mashed tomato, ginger paste and cook until oil separates.
  8. Add turmeric pwd, red chilli pwd, coriander pwd, cumin pwd, hing and saute.
  9. Cover & cook for few minutes.
  10. Stir once in a while (without adding water), until the masala thickens.
  11. Add saunf pwd, sugar 1/2 tsp (optional) and a tsp of ghee.
  12. Mix well and turn off flame.
  13. Garnish with fresh coriander leaves.
  14. Flavorful delicious Thakkali thokku is ready.
  15. Transfer to serving bowl.
  16. It pairs up great with chapati, roti, poori, idli, dosa or even with steamed rice.

Zeera rice or Jeera rice is an irresistably flavorful rice dish from North Indian cuisine. This is mildly spiced & tastes great with a rich aroma of cumin and other spices. Ingredients

  • Basmati rice - 1 & 1/2 cups
  • Cumin seeds - 1 tsp
  • Cumin pwd - 1/2 tsp
  • Oil - 2 tbsp
  • Ghee - 1 tbsp
  • Green chilli - 4
  • Lemon juice - few drops
  • Fresh coriander leaves
  • Salt to taste

Method

  1. Wash & soak basmati rice in water for 10 mins.
  2. Drain water and set aside.
  3. Heat 6 cups of water in a thick bottomed pan.
  4. Once the water starts boiling, add the basmati rice.
  5. Add 1/2 tsp of salt, 1/2 tsp of oil and few drops of lemon juice.
  6. Stir and cook.
  7. Once the rice is cooked soft, turn off flame.
  8. Drain the water and set the rice grains aside.
  9. Heat 1 tbsp of ghee and 2 tbsp of oil in a fry pan.
  10. Add cashewnuts, roast to golden.
  11. Drain and set aside.
  12. Add cumin seeds and wait to splutter.
  13. Add split green chillies and saute.
  14. Add cooked basmati rice, salt, cumin pwd and tsp of ghee.
  15. Toss the rice gently in high flame.
  16. Cook in low flame for 5 mins.
  17. Turn off flame.
  18. Garnish with freshly chopped coriander leaves & roasted cashewnuts
  19. Irresistably flavorful delicious jeera rice is ready.
  20. Serve hot with any veg or non-veg curry of your choice.
  21. My favorite combo is with gobi manchurian:)

Rasam is one of the delicious & integral part of South Indian cuisine. This flavorful tomato rasam is very simple to prepare yet tastes lipsmacking delicious. It tastes mildly hot & spicy with a tempting tangy flavor of tomatoes. It pairs up excellent with steamed rice or simply serves as a soup for any meals. Ingredients

  • Tomato - 3
  • Ghee - 1 tsp
  • Oil - 1 tsp
  • Mustard - 1/4 tsp
  • Cumin - 1/2 tsp
  • Split urad dal - 1/2 tsp
  • Curry leaves - a few
  • Garlic - 3 to 4
  • Red chilli - 2
  • Asafoetida / hing - a pinch
  • Turmeric pwd - 1/4 tsp
  • Rasam pwd - 1/2 tsp
  • Coriander pwd - 1/2 tsp
  • Cumin pwd - 1/2 tsp
  • Pepper pwd - 1/2 tsp
  • Jaggery (optional) - a small piece
  • Tamarind - a small ball
  • Fresh coriander leaves
  • Salt to taste

Method

  1. Wash and slice tomatoes.
  2. Soak small ball of tamarind in 1/2 cup of warm water for 10 mins. Extract thick juice out of it and set aside.
  3. Heat a tsp of oil & a tsp of ghee in pan.
  4. Season with mustard, cumin, split urad dal, curry leaves and wait to splutter.
  5. Add grated garlic, red chilli and saute.
  6. Add sliced tomatoes, salt and cook until tomatoes are mushy.
  7. Add hing, rasam pwd, turmeric pwd, coriander pwd, cumin pwd and pepper pwd.
  8. Add jaggery (optional ) and mix.
  9. Add tamarind water, salt and stir.
  10. Add 2 cups of water and adjust the consistency of the rasam.
  11. Allow the rasam to boil.
  12. Once the rasam starts boiling, turn off flame.
  13. Garnish with fresh coriander leaves.
  14. Transfer to serving bowl.
  15. Flavorful delicious tomato rasam is ready!
  16. Enjoy hot with steamed rice or simply as a soup for any meal.

This is my grandma's signature home remedy for the treatment of cold, cough, throat pain and fever. Kashayam means a water decotion of a herbs or spices or mixed together. This kashayam serves as an excellent remedy to releive from cold. The mild pepper flavor and strong flavor imparted from ginger along with sweet taste from jaggery tastes divine and your kids will ask for more. The addition of tulsi & neem leaves helps to boost immunity and fights the viral infections and promote the well-being. Check out this easy video recipe to prepare traditional kashayam at home.

Ingredients

  • Grated ginger - 3 tbsp
  • Pepper - 1 tsp
  • Cumin - 1 tsp
  • Cinnamon - 1
  • Cloves - 2
  • Turmeric pwd - 1/2 tsp
  • Raisins - 1 tsp
  • Basil or tulsi leaves
  • Tender neem leaves
  • Jaggery (optional ) - a small piece
  • Salt - 1/4 tsp

Method

  1. Heat 3 cups of water in a saucepan.
  2. Add cinnamon, cloves and allow to boil.
  3. Add grated ginger and stir.
  4. Add pepper, cumin and allow to boil.
  5. Add turmeric pwd, salt, raisins, jaggery (optional) and stir.
  6. Add fresh tender neem leaves and basil leaves.
  7. Let the kashayam boil for 6 to 8 mins in low flame.
  8. Turn off flame.
  9. Cover with lid and let the kashayam cool for 10 mins so the flavors get well infused.
  10. Strain the kashayam in cups.
  11. Healthy kashayam is ready.
  12. Enjoy warm. It helps to cure cold, fever, throat pain and cough.
