Carrot Pakora Recipe | Crispy Carrot Pakoda - Easy Video Recipe

Ingredients

  • Grated carrot - 1 cup
  • Rice flour - 2 tbsp
  • Gram flour / besan flour (kadala maavu) - 4 tbsp
  • Sliced onion - 1/2 cup
  • Green chilli - 1
  • Red chilli pwd - 1/2 tsp
  • Ginger garlic paste - 1 tsp
  • Grated ginger - 1 tsp
  • Cashewnuts - 7 
  • Ghee - 1 tsp
  • Curry leaves
  • Coriander leaves
  • Salt to taste
  • Oil to deep fry

Method

  1. Wash and peel off the skin of carrots.
  2. Grate to fine shreds.
  3. Add grated carrot to mixing bowl.
  4. Add sliced green chilli, onion, grated ginger, curry, coriander leaves, cashewnuts and mix.
  5. Add ginger garlic paste, salt, red chilli pwd and mix.
  6. Add rice flour, besan flour (kadala maavu), ghee and mix.
  7. Knead to thick mixture without sprinkling water. The moisture in the carrot and onion are enough to bind the mixture.
  8. Knead to thick dough.
  9. Heat oil in frypan.
  10. Take a small ball out of the dough and drop it in batches in hot oil as shown in video.
  11. Deep fry in medium flame.
  12. Once the pakoras turn crispy, drain in kitchen tissue.
  13. Repeat the same for the remaining dough.
  14. Yummilicious crispy carrot pakoras are ready.
  15. Enjoy hot with garam garam coffee/ tea.

Ingredients

  • Grated beetroot - 1 cup
  • Gram dal / kadala paruppu - 1 cup
  • Toor dal - 1/4 cup
  • Sliced onion - 1/4 cup
  • Red chilli - 2
  • Grated ginger - 1 tsp
  • Saunf pwd - 1/2 tsp
  • Curry leaves
  • Coriander leaves
  • Salt to taste
  • Oil to deep fry
Method
  1. Wash and peel off the skin of beetroot.
  2. Grate to fine shreds.
  3. Wash and soak gram dal (kadala paruppu) and toor dal separately in water for 1 hour.
  4. Drain water.
  5. Add the dal to blender.
  6. Add salt, saunf pwd, grated ginger, red chilli and grind to coarse mixture. Take care not to add water while grinding.
  7. Transfer the mixture to mixing bowl.
  8. Add chopped onion, grated beetroot, curry leaves, coriander leaves, rice flour and mix well.
  9. Make small balls out of it and pat it flat to vada shape.
  10. Heat oil in fry pan or kadai.
  11. Drop the vadas carefully one at a time.
  12. Take care not to overcrowd the oil.
  13. Deep fry the vadas in medium flame.
  14. Once the vadas turn crispy on both sides, drain from oil in kitchen tissue.
  15. Repeat the same for the remaining batter.
  16. Colorful, healthy delicious beetroot vadas are ready in no time.
  17. Enjoy hot with garma garam coffee/tea.

Ingredients

  • Paneer - 200 g
  • Cooked peas - 1 cup
  • Oil - 1 tbsp
  • Butter - 1 tbsp
  • Onion - 2
  • Tomato - 2
  • Ginger - small piece
  • Garlic - 4
  • Cashewnuts - 5 to 6
  • Turmeric pwd - 1/4 tsp
  • Red chilli pwd - 1 tsp
  • Coriander pwd - 1 tsp
  • Garam masala pwd - 1/2 tsp
  • Cumin pwd - 1/2 tsp
  • Dried fenugreek leaves - 1/2 tsp
  • Coriander leaves
  • Salt to taste

Method

  1. Wash and cube paneer and set aside.
  2. Slice all the vegetables and keep ready.
  3. Heat 1 tbsp of oil in frypan.
  4. Add cumin and wait to splutter.
  5. Add grated ginger, garlic and saute.
  6. Add sliced onion, salt and saute until light brown.
  7. Add sliced tomato and cook until oil separates.
  8. Add cashewnuts and mix.
  9. Turn off flame and allow to cool.
  10. Transfer the ingredients to blender.
  11. Grind to smooth paste without adding water.
  12. Melt butter in pan.
  13. Add the masala paste from the blender and stir.
  14. Add turmeric pwd, red chilli pwd, garam masala pwd, cumin pwd and coriander pwd.
  15. Combine the masala.
  16. Add 1/2 tsp of sugar (optional)
  17. Add 1 cup of water and cover and cook until the gravy reaches thick consistency.
  18. Add cubed paneer and cooked peas. (i used frozen peas, so added directly)
  19. Add dried methi (fenugreek) leaves pwd.
  20. Cover and cook in low flame for 5 to 7 mins.
  21. Turn off flame.
  22. Garnish with freshly chopped coriander leaves.
  23. Creamy flavorful delicious Matar paneer is ready.
  24. Enjoy hot with roti, phulka, chapati, naan or even with biryani, fried rice, etc.

Ingredients

  • Broccoli - 1 small size
  • Butter - 1 tbsp
  • Sliced onion - 1/2 cup
  • Sliced potato - 1/4 cup
  • Grated garlic - 1 tbsp
  • Almond nuts - 7 to 8
  • Whole milk - 1 cup
  • Pepper pwd - 1/2 tsp
  • Sugar - 1/2 tsp (optional)
  • Salt to taste

Method

  1. Clean, wash and chop the broccoli to fine florets.
  2. Drain water and set aside.
  3. Soak almond in warm water for 5 mins.
  4. Drain water and peel the skin and set aside.
  5. Melt butter in cooker or thick pan.
  6. Add grated garlic and saute.
  7. Add sliced onions, potatoes and saute for a minute.
  8. Add broccoli and toss in high flame.
  9. Add 1/2 tsp of salt and 1 cup of hot water.
  10. Stir good.
  11. Pressure cook for 1 whistle.
  12. Turn off flame and wait till the pressure goes off.
  13. Open the lid and you can see the broccoli is cooked soft as shown in video.
  14. Drain and water and reserve.
  15. Add the broccoli to blender.
  16. Add almonds and grind to smooth paste.
  17. If required add very less water to enhance grinding.
  18. Transfer the broccoli paste to sauce pan.
  19. Add the drained water (step 14) and adjust the thickness of the soup.
  20. Add 1 cup of thick whole milk and stir.
  21. Now keep the sauce pan in flame and cook the soup in medium flame.
  22. Add pepper pwd, salt and sugar (optional)
  23. Allow the soup to boil for a minute.
  24. Turn off flame.
  25. Creamy delicious healthy Broccoli soup is ready.
  26. Enjoy hot with buttered toast.

Ingredients    Cooking Time 20 mins

  • Grated paneer - 1 cup
  • Potato - 1
  • Corn flour - 3 tbsp
  • Sliced onion - 1/2 cup
  • Green chilli - 1
  • Sliced capsicum - 2 tbsp
  • Ginger paste - 1/2 tsp
  • Red chilli pwd - 1/2 tsp
  • Coriander pwd - 1 tsp
  • Garam masala pwd - 1/2 tsp
  • Amchoor pwd or dry mango pwd - 1/2 tsp
  • Maida or all purpose flour - 1 tbsp
  • Salt to taste
  • Coriander leaves

Method

  1. Grate paneer and take it in a mixing bowl.
  2. Add boiled and mashed aloo and mix.
  3. Add sliced onion, green chilli, capsicum, coriander leaves and mix.
  4. Add ginger paste, corn flour, red chilli pwd, coriander pwd, amchur pwd, salt and mix.
  5. Knead well to smooth dough.
  6. Make small balls out of the dough.
  7. Pat it flat and coat with bread crumbs.
  8. Repeat the same for all the balls and set aside.
  9. Now lets prepare the second outer coating paste with corn flour and maida flour.
  10. In a small cup, add 1 tbsp of maida flour, 1 tbsp of corn flour, salt, 1/4 tsp pepper pwd and 1/4 tsp of red chilli pwd.
  11. Add little water and mix to thick paste.
  12. Dip the patties in the flour paste and coat with bread crumbs again.
  13. Arrange in plate.
  14. Heat oil in frypan.
  15. Place the patties in the oil and shallow fry.
  16. Also its optional to deep fry the patties in hot oil. But I prefer healthy version of shallow frying the cutlets always.
  17. Fry until the cutlets turn crispy and golden on both sides.
  18. Yummilicious paneer cutlets are ready.
  19. Enjoy hot with tomato ketchup or any dip of your choice.

Ingredients   Cooking Time: 20 mins

  • Eggs - 3 to 4
  • Oil - 1 & 1/2 tbsp
  • Turmeric pwd - 1/2 tsp
  • Red chilli pwd - 3/4 tsp
  • Pepper pwd - 1/2 tsp
  • Cumin seeds - 1/2 tsp
  • Green chilli - 1
  • Sliced onion - 1 cup
  • Ginger garlic paste - 1 tsp
  • Mashed tomato - 1 cup
  • Coriander pwd - 1 tsp
  • Saunf pwd - 1/2 tsp
  • Garam masala pwd - 1/2 tsp
  • Dried fenugreek leaves - 1/2 tsp
  • Salt to taste
  • Coriander leaves to garnish

Method

  1. Boil eggs, remove the shell.
  2. Make slits on the egg and take it in a bowl.
  3. Add salt, turmeric pwd, red chilli pwd and pepper pwd.
  4. Coat the egg well with the spice powders.
  5. Let it marinate for 5 mins.
  6. Heat 1 tsp of oil in frypan.
  7. Add the marinated eggs and roast in low flame for few minutes.
  8. Remove and set the eggs aside.
  9. Heat 1 tbsp of oil in frypan.
  10. Add cumin seeds and wait to splutter.
  11. Add sliced green chilli and saute.
  12. Add sliced onions aned salt.
  13. Saute until onions turn transculent.
  14. Add ginger garlic paste and fry.
  15. Add mashed tomato and cook until oil separates.
  16. Add turmeric pwd, red chilli pwd, coriander pwd, saunf pwd and saute.
  17. Add 1/2 cup of water and cook.
  18. Once the masala thickens, add garam masala pwd and dried fenugreek leaves.
  19. Toss good.
  20. Add roasted eggs and combine with the masala.
  21. Let it cook for another 5 mins in low flame.
  22. Spicy delicious egg masala is ready.
  23. It pairs up excellent with roti, chapati, biryani, pulao, etc.

Ingredients     Cooking Time: 20 mins

  • Tomato - 4 or 5
  • Onion - 1
  • Butter - 1 tbsp
  • Cinnamon - 1 small piece
  • Bay leaf - 1
  • Cloves - 2
  • Grated ginger - 1 tsp
  • Grated garlic - 1 tsp
  • Carrots & beetroot sliced - 1/2 cup
  • Mint & coriander leaves - a few
  • Sugar - 1/2 tsp
  • Pepper pwd - 1/2 tsp
  • Corn flour - 1 tbsp
  • Salt to taste

Method

  1. Melt butter in a pressure pan.
  2. Add cinnamon, bay leaf and cloves
  3. Saute until it crackles.
  4. Add grated garlic, ginger and saute.
  5. Add sliced onion and salt.
  6. Saute for a minute.
  7. Add sliced carrots, beetroots and toss in high flame.
  8. Add sliced tomato and cook for 2 minutes.
  9. Add mint leaf and coriander leaves.
  10. Add 1/2 cup of water and stir.
  11. Cover and pressure cook for 2 to 3 whistles.
  12. Once the pressure goes off, mash the contents.
  13. Allow to cool.
  14. Transfer to blender and grind to smooth paste.
  15. Filter the tomato paste and add it to pan.
  16. Heat the tomato puree in medium flame.
  17. Add 1/4 cup of water and adjust the consistency of the soup.
  18. Add salt, sugar and pepper pwd.
  19. To 1 tbsp of corn flour add water and mix to smooth thin paste.
  20. Add this corn flour paste to soup and stir.
  21. Let the soup boil for 5 mins in low flame.
  22. Turn off flame.
  23. Restaurant style creamy delicious tomato soup is ready.
  24. Enjoy hot or warm by garnishing with crispy, cheesy bread chunks on top.

Today's post is a traditional favorite snack from South Indian cuisine. It makes an excellent tea time snack and also a popular street food. It is originated in Karnataka and are quite famous in restaurants. My mil is an expert in preparing this golden crispy bondas. The main ingredients required are all purpose flour, rice flour, curd, green chilli, ginger, etc.

Ingredients   Cooking Time: 30 mins

  • Maida or all purpose flour - 1 cup
  • Rice flour - 1/4 cup
  • Curd or yoghurt - 1 cup
  • Grated coconut - 1 tbsp
  • Green chilli - 1
  • Grated ginger - 1 tsp
  • Cumin - 1 tsp
  • Coriander leaves
  • Salt to taste
  • Oil to deep fry

Method

  1. In a mixing bowl, add maida flour, rice flour and mix.
  2. Add cumin seeds, sliced green chilli, grated ginger, grated coconut, coriander leaves, baking soda and salt.
  3. Mix well.
  4. Add curd and combine.
  5. Add water little by little and mix to smooth dough.
  6. The consistency of the batter should be as shown in video.
  7. Let the batter sit for 30 mins.
  8. Heat oil in frypan.
  9. Wet your hands and take a small portion of the dough and drop it on hot oil.
  10. Repeat the same as such 4 to 5 bondas can be fried at a time.
  11. Deep fry on medium flame until the bondas turn golden brown and crispy.
  12. Drain from oil and take the bondas in kitchen tissue.
  13. Yummilicious mysore bondas are ready.
  14. Enjoy hot with chutney & sambar.
