Today's sweet recipe Pineapple kesari is one of the signature dish of south Indian cuisine. Its a famous menu in marriages, functions & parties. It can be prepared in few minutes and the taste is mind blowing with pineapple flavor. It needs minimum ingredients rava, pineapple, ghee and sugar as main ingredients. If you're a lover of pineapple fruit, then this delicious sweet dessert is for you. Enjoy!

Ingredients

Pineapple chunks - 1 cup

Rava or sooji or semolina - 3/4 cup

Sugar - 1 cup

Ghee - 4 to 5 tbsp

Cardamom pwd - 1/4 tsp

Yellow food color - 1/4 tsp (optional)

Cashewnuts - 8 to 10

Raisins - 10

Instructions

1.

Clean and slice pineapple to small chunks.

2.

In a pan, heat 1 tbsp of ghee.

3.

Add rava and roast in low flame for 3 to 4 mins.

Remove and set aside.

5.

Heat 2 tbsp of ghee in same pan.

6.

Add cashewnuts and raisins.

7.

Roast it to golden and take it aside.

8.

Now add pineapple chunks and roast it in the ghee.

Roast for few minutes.

10.

Add 2 cups of hot water and cook covered for few minutes.

11.

Once the pineapple chunks are soft, add the roasted rava and stir.

Add 2 & 1/2 cups of hot water and cook.

Cook covered in medium flame.

Its time to add sugar, cardamom pwd and yellow food color. (optional)

Stir quickly.

The sugar dissolves and starts thickening.

18.

Keep stirring the kesari until it starts rolling on the sides.

19.

Turn off flame and garnish with roasted cashewnuts and raisins. (on cooling, the kesari thickens more, so turn off flame in this stage.)

20.

Transfer to serving bowl.

Lipsmacking flavorful delicious pineapple kesari is ready.
