Wheat Flour Dosa

Here comes the yet another healthy traditional dosa recipe of Indian cuisine. Its not only tastes heavenly delicious with a combo of sambar & chutney, its very quick to prepare too. It does not require fermentation process like regular dosa recipe. This instant quick recipe is prepared using wheat flour, rice flour, onion, spices- herbs. It makes an ideal breakfast / dinner or even for lunch box recipe. Enjoy this crispy wheat flour dosa by pairing it up with your favorite chutney.

Ingredients

  • Wheat flour - 1 cup
  • Rice flour - 1 cup
  • Rava / sooji or semolina - 1/4 cup
  • Curd or yoghurt - 3/4 cup
  • Grated ginger - 1 tsp
  • Sliced onion - 1/2 cup
  • Green chilli - 1 or 2
  • Fresh curry & coriander leaves
  • Oil to cook
  • Salt to taste

Method

  1. In a mixing bowl, add wheat flour, rice flour, rava, yoghurt or curd, cumin, salt, sugar and mix well by adding enough water.
  2. The consistency of the batter should be free flowing as shown in video.
  3. Add grated ginger, sliced onions, green chilli, curry leaves, coriander leaves and 2 tsp of oil.
  4. Mix well.
  5. Let the batter sit for 10 mins.
  6. Stir the batter good and adjust the consistency if the batter has turned thick by adding 1/2 cup of water.
  7. Heat a girdle.
  8. Drizzle oil in the girdle.
  9. Take a ladle full of batter and pour in hot girdle in concentric circles.
  10. Cook the dosa in medium flame until crispy.
  11. Flip off the next side and cook by drizzling oil to sides.
  12. cook until the dosa is crispy and golden on both sides.
  13. Remove from flame.
  14. Healthy delicious wheat flour dosa is ready.
  15. Enjoy hot with chutney & sambar.

Ingredients

  • Toor dal - 1 & 1/2 cups
  • Turmeric pwd - 1/2 tsp
  • Oil - 1 tbsp
  • Cumin seeds - 1/2 tsp
  • Red chilli - 2 or 3
  • Grated garlic - 1 tsp
  • Grated ginger - 1 tsp
  • Sliced green chilli - 1
  • Onion - 1
  • Tomato - 1
  • Red chilli pwd - 1/2 tsp
  • Garam masala pwd - 1/2 tsp
  • Dried fenugreek leaves - 1/2 tsp
  • Hing / asafoetida pwd - a pinch
  • Curry & coriander leaves
  • Salt to taste

Method

  1. Wash and soak toor dal in water for 5 mins.
  2. Drain water and add the toor dal to pressure cooker.
  3. Add 2 cups of water and mix.
  4. Add salt, turmeric pwd and combine.
  5. Pressure cook for 4 whistles or until dal is cooked soft.
  6. Once the pressure goes off, open the lid and mash it.
  7. Set it aside.
  8. Heat 1 tbsp of oil in frypan.
  9. Add cumin seeds, red chilli and toss.
  10. Add grated garlic, ginger, green chilli, curry leaves and saute.
  11. Add sliced onions and saute until onions turn transculent.
  12. Add freshly chopped coriander leaves and tomato.
  13. Saute for a minute.
  14. Add turmeric pwd, red chilli pwd, dried fenugreek leaves, garam masala pwd and asafoetida pwd.
  15. Mix the masala well.
  16. Its time to add the cooked dal.
  17. Add 1/2 cup of water and adjust the thickness of the dal.
  18. Stir good and let it boil.
  19. Turn off flame.
  20. Add a dallop of butter and sprinkle freshly chopped coriander leaves.
  21. Flavorful delicious homemade Dal fry is ready.
  22. Enjoy hot with roti, paratha, naan, etc.

Ingredients

  • Methi leaves - a small bowl.
  • Grated ginger - 1 tsp
  • Sliced onion - 1/4 cup
  • Turmeric pwd - 1/4 tsp
  • Red chilli pwd - 1/2 tsp
  • Ajwain - 1/2 tsp
  • Cumin seeds - 1/2 tsp
  • Coriander pwd - 1/2 tsp
  • Curd or yoghurt - 3 tbsp
  • Dried methi leaves - 1/2 tsp
  • Wheat flour - 2 cups
  • Oil - 1 tbsp
  • Butter - 2 tbsp
  • Salt to taste

Method

  1. Clean and wash methi leaves. 
  2. Drain water completely. (no need to chop the methi leaves, if the leaves are small)
  3. Add methi leaves to mixing bowl.
  4. Add grated ginger, sliced onion, salt, turmeric pwd, red chilli pwd, ajwain, cumin seeds, coriander pwd, sugar, curd or yoghurt, dried methi leaves and combine well.
  5. Add 1/2 cup of water and mix.
  6. Add enough wheat flour and knead to smooth dough.
  7. Add 1 tbsp of oil and knead well as shown in video.
  8. Let the dough rest for 5 mins.
  9. Make equal sized balls out of dough.
  10. Take a ball, dust it with flour and roll to thin round disc.
  11. Heat a frypan.
  12. Melt a tsp of butter in it.
  13. Place the paratha and fry on both sides until golden brown.
  14. Remove from flame.
  15. Repeat the same for all the dough balls.
  16. Lipsmacking delicious methi paratha is ready.
  17. Enjoy hot with any curry or raitha.

Rava Kichadi Recipe 

Rava kichadi is one of the healthy delicious south Indian breakfast recipe. Its very popular because of its melt-in-mouth taste and divine spicy aroma. I just love the fantastic combo of delicious rava kichadi along with coconut chutney and I can eat it for any meal of the day. Its a quite popular recipe in South Indian weddings too. Ingredients

  • Rava - 1 cup
  • Carrots, beans, peas - 1 cup (sliced)
  • Ghee - 3 tbsp
  • Oil - 2 tbsp
  • Cashewnuts - 5 to 6
  • Bay leaf - 1
  • Cumin - 1/2 tsp
  • Cinnamon - 1
  • Cloves - 4
  • Cardamom - 1
  • Saunf - 1/2 tsp
  • Grated ginger - 1 tsp
  • Green chilli - 3 to 4
  • Curry leaves - a few
  • Onion - 1
  • Tomato - 1
  • Turmeric pwd - 1/4 tsp
  • Coriander leaves to garnish
  • Salt to taste

Method

  1. Slice vegetable and set it ready.
  2. Heat 1 tsp of ghee in frypan.
  3. Add rava and roast it in low flame for 5 mins.
  4. Set it aside.
  5. Heat 2 tbsp of ghee and 2 tbsp of oil in fry pan.
  6. Add cashewnuts and roast it to golden.
  7. Remove and set aside.
  8. Add bay leaf, cinnamon, cloves, cardamom, cumin and saunf.
  9. Allow to sizzle.
  10. Add grated ginger, sliced green chilli, curry leaves and toss.
  11. Add sliced onions, salt and saute until transculent.
  12. Add sliced tomato and cook until soft.
  13. Add diced carrots, beans, peas and saute in high flame for a minute.
  14. Add turmeric pwd and combine.
  15. Add 1/2 cup of hot water and stir.
  16. Cook the vegetables by covering with a lid in high flame for 2 mins.
  17. Now add the roasted rava and combine well.
  18. Add 2 & 1/2 cups of hot water and mix.
  19. Cook covered in medium flame.
  20. Once its done, turn off flame.
  21. Garnish with roasted cashewnuts and freshly chopped coriander leaves.
  22. Transfer to serving plate.
  23. Lipsmacking delicious rava kichadi is ready.
  24. Serve hot with coconut chutney or any chutney of your choice.
  25. Enjoy!

Ingredients

  • Basmati rice - 1 & 1/2 cups
  • Saffron strands - a few
  • Milk - 3 to 4 tbsp
  • Eggs - 3 to 4
  • Oil - 1 tbsp
  • Turmeric pwd - 1/4 tsp
  • Red chilli pwd - 1/2 tsp
  • Garam masala pwd - 1/2 tsp
  • Salt to taste

To make biryani

  • Ghee - 2 tbsp
  • Oil - 2 tbsp
  • Cumin - 1/2 tsp
  • Saunf - 1/2 tsp
  • Pepper corns - 1 tsp
  • Cloves - 4
  • Cinnamon - 1
  • Bay leaf - 1
  • Cardamom - 2
  • Star anise - 1
  • Green chilli - 2 to 3
  • Ginger garlic paste - 1 tbsp
  • Mint & coriander leaves - handful
  • Yoghurt or curd - a small cup
  • Red chilli pwd - 3/4 tsp
  • Garam masala pwd - 1/2 tsp
  • Coriander pwd - 1 tsp
  • Biryani masala pwd - 1/2 tsp
  • Fried onions - 2 tbsp
  • Salt to taste

Method

  1. Wash & soak basmati rice in water for 5 mins.
  2. Drain water and set aside.
  3. In a small cup, add saffrons and 3 tbsp of milk.
  4. Let the saffrons soak in milk.
  5. Boil eggs and deshell it.
  6. Make slits on the egg.
  7. Heat oil in frypan.
  8. Add the boiled eggs and saute in low flame.
  9. Add turmeric pwd, red chilli pwd, salt and garam masala pwd.
  10. Saute good.
  11. Turn off flame and set the eggs aside.

To make biryani

  1. In a non-stick vessel or thick bottomed pan, heat oil and ghee.
  2. Add cumin, saunf, bay leaf, cinnamon, cardamom, cloves, peppercorns, star anise and saute.
  3. Add sliced green chilli and ginger garlic paste.
  4. Saute in high flame for a minute.
  5. Add sliced onions, salt and saute until onions turn transculent.
  6. Add freshly chopped mint and coriander leaves.
  7. Add sliced tomato and saute until the tomatoes are cooked soft.
  8. Add curd or yoghurt and stir.
  9. Add red chilli pwd, garam masala pwd, biryani masala pwd, coriander pwd and combine.
  10. Add basmati rice and combine gently with the masala.
  11. Add 2 & 1/2 cups of hot water and combine.
  12. Cook covered with a lid in high flame for 3 to 4 mins.
  13. Fluff gently and turn the flame to low.
  14. Cook for another 10 mins.
  15. Now fluff the rice gently (see video) and add the spicy roasted eggs.
  16. Sprinkle some freshly chopped mint and coriander leaves.
  17. Sprinkle fried onions for flavor.
  18. Add the saffron soaked milk and a tbsp of ghee.
  19. Cover and cook the biryani in low flame for another 5 to 7 mins.
  20. Turn off flame.
  21. Irresistably delicious egg biryani is ready.
  22. Serve hot with onion raitha or any curry of your choice.

Ingredients

To prepare dal:

  • Toor dal - 1 & 1/2 cup
  • Oil - 2 tbsp
  • Cumin seeds - 1/2 tsp
  • Green chilli - 2
  • Curry leaves - a few
  • Garlic - 4 to 5
  • Ginger - a small piece
  • Bay leaf - 1
  • Onion - 1 big
  • Tomato - 2
  • Turmeric pwd - 1/4 tsp
  • Hing / asafoetida pwd - 1/4 tsp
  • Salt to taste

To prepare Tadka

  • Ghee - 2 tbsp
  • Oil - 1 tbsp
  • Cumin seeds - 1/2 tsp
  • Grated garlic - 1 tbsp
  • Dried fenugreek leaves - 1 tsp
  • Red chilli - 2
  • Red chilli pwd - 1/2 tsp

Method

  1. Wash and soak toor dal in water for 10 mins.
  2. Heat oil in pressure cooker.
  3. Add cumin seeds, wait to crackle.
  4. Add green chilli, curry leaves and saute.
  5. Add chopped garlic, ginger, bay leaf and toss in high flame.
  6. Add finely sliced onions and saute.
  7. Add salt and saute onions until they're slightly browned.
  8. Add mashed tomatoes and cook until oil separates.
  9. Add turmeric pwd, hing and stir.
  10. Add soaked toor dal and combine.
  11. Add enough hot water and cover and pressure cook for 4 to 5 whistles.
  12. Once the pressure goes off, open lid and mash the dal.
  13. Set it aside.

Lets prepare Tadka

  1. Heat 2 tbsp of ghee and 1 tbsp of oil in a small frypan.
  2. Add cumin seeds and allow to crackle.
  3. Add grated garlic and saute.
  4. Add red chilli, dried fenugreek leaves and red chilli pwd.
  5. Turn off flame.
  6. Pour the hot tadka (seasonings) over the dal.
  7. Add freshly sliced coriander leaves and stir.
  8. Cover the dal with lid and set it aside for 5 mins. This enhances the flavor of tadka to mix with dal.
  9. Transfer to serving bowl.
  10. Flavorful delicious dal tadka is ready.
  11. Enjoy hot with roti, paratha, naan, etc.

Ingredients

  • Pineapple chunks - 1 cup
  • Rava or sooji or semolina - 3/4 cup
  • Sugar - 1 cup
  • Ghee - 4 to 5 tbsp
  • Cardamom pwd - 1/4 tsp
  • Yellow food color - 1/4 tsp (optional)
  • Cashewnuts - 8 to 10
  • Raisins - 10

Method

  1. Clean and slice pineapple to small chunks.
  2. In a pan, heat 1 tbsp of ghee.
  3. Add rava and roast in low flame for 3 to 4 mins.
  4. Remove and set aside.
  5. Heat 2 tbsp of ghee in same pan.
  6. Add cashewnuts and raisins.
  7. Roast it to golden and take it aside.
  8. Now add pineapple chunks and roast it in the ghee.
  9. Roast for few minutes.
  10. Add 2 cups of hot water and cook covered for few minutes.
  11. Once the pineapple chunks are soft, add the roasted rava and stir.
  12. Add 2 & 1/2 cups of hot water and cook.
  13. Cook covered in medium flame.
  14. You can see the rava is cooked soft. (see video)
  15. Its time to add sugar, cardamom pwd and yellow food color. (optional)
  16. Stir quickly.
  17. The sugar dissolves and starts thickening.
  18. Keep stirring the kesari until it starts rolling on the sides.
  19. Turn off flame and garnish with roasted cashewnuts and raisins. (on cooling, the kesari thickens more, so turn off flame in this stage.)
  20. Transfer to serving bowl. 
  21. Lipsmacking flavorful delicious pineapple kesari is ready.
  22. Enjoy warm or chilled.
