Ingredients

  • Paneer - 200 g
  • Yoghurt - 3 tbsp
  • Turmeric pwd - 1/4 tsp
  • Red chilly pwd - 1/2 tsp
  • Besan flour - 1 tbsp
  • Cumin pwd - 1/2 tsp
  • Ajwain - 1/2 tsp
  • Chat masala pwd - 1/4 tsp
  • Garam masala pwd - 1/2 tsp
  • Coriander pwd - 1 tsp
  • Pepper pwd - 1/4 tsp
  • Ginger garlic paste - 1 tsp
  • Tandoori masala pwd - 1/2 tsp
  • Oil - 1 tbsp
  • Lemon juice - few drops
  • Salt to taste

Method

  1. Wash and slice paneer to bite sized cubes.
  2. In a mixing bowl, add yoghurt, turmeric pwd, red chilly pwd, besan flour, cumin pwd, ajwain, chat masala pwd, garam masala pwd, coriander pwd, pepper pwd, ginger garlic paste, salt, tandoori masala pwd, oil and lemon juice.
  3. Mix it to smooth paste.
  4. Add paneer cubes and coat well with masala.
  5. Add sliced capsicum, onion and tomato.
  6. Mix and allow to marinate for minimum 1 hour.
  7. Soak bamboo skewers in water for 20 mins to avoid getting burnt.
  8. Now insert marinated paneer, onion, tomato and capsicum alternatively in skewers.
  9. Grease some masala & oil over it.
  10. Place the skewers in grill and keep in oven.
  11. Grill for 8 to 10 mins or until charred as shown in video.
  12. Healthy delicious grilled paneer tikka is ready.
  13. Serve hot with mint chutney or any dip of your choice.

Ingredients

To marinate

  • Boneless chicken - 1/2 kg
  • Turmeric pwd - 1/4 tsp
  • Red chilly pwd - 1/2 tsp
  • Pepper pwd - 1/2 tsp
  • Ginger garlic paste - 1 tsp
  • Lemon juice - few drops
  • Salt - 1/2 tsp

To make Popcorn chicken:

  • Milk - 1/4 cup
  • Egg - 1
  • Maida flour - 2 tbsp
  • Onion pwd - 1 tsp
  • Garlic pwd - 1/2 tsp
  • Pepper pwd - 1/2 tsp
  • Red chilly pwd - 1/2 tsp
  • Baking pwd - 1/4 tsp
  • Sugar - 1 tsp
  • Salt - 1/4 tsp
  • Bread crumbs - 1/4 cup
  • Oats - 2 tbsp
  • Oil to deep fry

Method

To marinate

  1. Clean, wash the chicken.
  2. Drain the water thoroughly.
  3. In a mixing bowl, add boneless salt, turmeric pwd, red chilly pwd, pepper pwd, ginger garlic paste, lemon juice and combine.
  4. Coat the chicken well with masala and marinate for 1 hour.

To make popcorn chicken.

  1. In bowl 1, add milk and egg.
  2. Beat until smooth.
  3. In bowl 2, add maida flour, salt, onion pwd, pepper pwd, garlic pwd, red chilly pwd, turmeric pwd, baking pwd and sugar.
  4. Mix well and set it aside.
  5. In bowl 3, add bread crumbs and oats.
  6. Mix completely and set aside.
  7. Now keep ready the marinated chicken and bowls.
  8. Take marinated chicken, roll in flour, dip in egg+milk mixture and coat it along with flour and bread crumbs as shown in video.
  9. Repeat the same for all the chicken pieces.
  10. Heat oil in frypan.
  11. Drop the chicken one by one in hot oil.
  12. Dont overcrowd the oil.
  13. Deep fry the chicken until it turns crispy and golden.
  14. Drain in kitchen tissue.
  15. Lipsmacking crispy homemade popcorn chicken is ready.

  • Bread slices - 5
  • Eggs - 2
  • Whole milk - 1/2 cup
  • Sugar - 1 tsp
  • Salt - 1/2 tsp
  • Cinnamon pwd - 1/2 tsp
  • Vanilla essence - 1/4 tsp

Method

  1. In a mixing bowl, add whole milk.
  2. Add salt, sugar, cinnamon pwd, vanilla essence and stir.

Ingredients

  • Potato big - 2 or 3
  • Corn flour - 3 tbsp
  • Pepper pwd - 1/2 tsp
  • Red chilly flakes - 1/4 tsp
  • Dried methi leaves - 1/2 tsp
  • Chat masala pwd - 1/2 tsp
  • Kashmiri red chilly pwd - 1/4 tsp
  • Salt - 1/2 tsp
  • Oil to deep fry

Method

  1. Wash & peel the skin of potatoes.
  2. Chop it to thin lengthy slices.
  3. Spread them in a plate and sprinkle salt to it.
  4. Mix well and set aside for 5 minutes.
  5. You can see the potatoes has let out water.
  6. Drain the water and place the slices in the tissue paper.
  7. Wipe off the wetness and set aside.
  8. In a mixing bowl, add corn flour, pepper pwd, red chilly flakes, dried methi leaves, chat masala pwd and red chilly pwd.
  9. Mix well.
  10. Sprinkle the masala pwd over the potato slices.
  11. Coat well with masala.
  12. Let it marinate for 5 minutes.
  13. Heat oil in frypan.
  14. Once the oil is hot, add the potato slices to it.
  15. Deep fry in high flame for 2 to 3 minutes.
  16. Now reduce the flame to low and deep fry until crisp & golden.
  17. Drain in kitchen tissue to remove excess oil.
  18. Lipsmacking delicious masala french fries is ready.
  19. Serve immediately with tomato ketchup or any dip of your choice.

  • Roasted peanuts - 1 & 1/2 cup
  • Salt - 1/2 tsp
  • Sugar - 1 tbsp
  • Honey - 1 tbsp

Method

  1. Roast peanuts to golden.
  2. Allow to cool.
  3. Add peanuts to blender and add salt, sugar.
  4. Blend to smooth powder.
  5. Add honey, oil and blend to fine paste.
  6. If required add little more oil and blend until it turns smooth consistency.

Ingredients

To make dough

  • Wheat flour - 2 cups
  • Cumin seeds - 1/2 tsp
  • Ajwain - 1/4 tsp
  • Turmeric pwd - 1/4 tsp
  • Red chilly pwd - 1/2 tsp
  • Coriander leaves - handful

To make egg bhurji

  • Oil - 1 tbsp
  • Butter - 1 tbsp
  • Cumin seeds - 1/2 tsp
  • Green chilly - 1
  • Sliced onions - 1/2 cup
  • Ginger garlic paste - 1/2 tsp
  • Turmeric pwd - 1/4 tsp
  • Red chilly pwd - 1/2 tsp
  • Garam masala pwd - 1/2 tsp
  • Eggs - 2 to 3
  • Fresh coriander leaves 
  • Fresh lemon juice - few drops
  • Salt to taste

Method

To make dough

  1. Add 1 cup of warm water in mixing bowl.
  2. Add salt, cumin seeds, ajwain, turmeric pwd, red chilly pwd and coriander leaves.
  3. Mix well.
  4. Add wheat flour and knead to smooth soft dough.
  5. Add oil and knead well.
  6. Let the dough rest for 10 mins.

To make Egg Bhurji stuffing

  1. Heat oil in fry pan.
  2. Add cumin seeds and wait to splutter.
  3. Add sliced onions and green chilly.
  4. Add salt and toss.
  5. Add ginger garlic paste and saute for a minute.
  6. Add turmeric pwd, red chilly pwd, garam masala pwd and saute.
  7. Beat eggs and add to the mixture.
  8. Scramble the eggs in high flame.
  9. Sprinkle freshly chopped coriander leaves.
  10. Turn off flame.
  11. Squeeze few drops of lemon juice.
  12. Mix well.
  13. Inner egg bhurji stuffing is ready.

To make paratha:

  1. Make small balls out of the dough.
  2. Take one ball, dust with flour.
  3. Roll it to thick small disc.
  4. Place 2 tbsp of egg bhurji and seal the edges of the disc as shown in video.
  5. Pat it flat and roll it to thick parathas.
  6. Repeat the same for all parathas.
  7. Now heat a frypan.
  8. Drizzle oil to it.
  9. Place the paratha and fry on both sides, until it turns golden and cooked.
  10. Remove from flame.
  11. Lipsmacking healthy delicious egg paratha is ready.
  12. Enjoy hot with yoghurt, pickle or any curry of your choice.

  13. Once it is cooked on both sides, remove from flame.

  15. Serve hot with drizzling honey & with a dallop of butter.

  • Mutton pieces  - 1/2 kg
  • Oil - 2 tbsp
  • Ginger garlic paste - 1 tbsp

  • Tomato sliced - 1 cup
  • Turmeric pwd - 1/4 tsp
  • Red chilly pwd - 1 tsp
  • Yoghurt - 1 tbsp
  • Cumin - 1/2 tsp
  • Bay leaf - 1
  • Cinnamon - 1
  • Cloves - 4
  • Curry leaves - a few
  • Coriander pwd - 1 tsp
  • Cumin pwd - 1/2 tsp
  • Saunf pwd - 1/4 tsp
  • Garam masala pwd - 1/2 tsp
  • Pepper pwd - 3/4 tsp
  • Dried fenugreek leaves - 1/2 tsp
  • Mint & coriander leaves - handful
  • Salt to taste

Method

  1. Clean, wash the mutton pieces.
  2. Drain water thoroughly and set aside.
  3. Heat oil in frypan.
  4. Add ginger garlic paste and saute in high flame.
  5. Add sliced onions and salt.
  6. Toss until onions turn light brown.
  7. Add green chilly, tomatoes and cook till soft.
  8. Add turmeric pwd, 1/2 tsp red chilly pwd and yoghurt.
  9. Mix well until the masala incorporates.
  10. Add mutton pieces and stir.
  11. Allow to cook for few minutes along with masala.
  12. Turn off flame.
  13. Transfer the contents to pressure cooker.
  14. Add 1 cup of water and stir.
  15. Cook the mutton for 4 whistles in high flame.
  16. And turn the flame to simmer and cook for 10 mins or until the mutton is done.
  17. Heat oil in kadai or fry pan.
  18. Add cumin and wait to splutter.
  19. Add bay leaf, cinnamon and cloves.
  20. Wait to splutter.
  21. Add curry leaves
  22. Add cooked mutton along with water.
  23. Add turmeric pwd, 1/2 tsp red chilly pwd, coriander pwd, cumin pwd, saunf and garam masala pwd.
  24. Allow to boil until the masala thickens.
  25. Add freshly ground pepper pwd.
  26. Sprinkle chopped mint and coriander leaves.
  27. Once the curry attains desired consistency, turn off flame.
  28. Sprinkle dried fenugreek (methi) leaves.
  29. Flavorful, hot and spicy kadai mutton is ready.
  30. It pairs up excellent with roti or rice dishes.

Ingredients

  • Mixed veggies chopped - 1 cup
  • Butter - 1 tbsp
  • Garlic sliced - 1 tsp
  • Pepper pwd - 1/2 tsp
  • Sugar - 1 tsp
  • Corn flour - 1 & 1/2 tbsp
  • Salt to taste
  • Fresh coriander leaves

Method

  1. Melt butter in frypan.
  2. Add grated garlic and fry till light brown.
  3. Add sliced onions, spring onions, carrot, beans, cauliflower and saute. (Also you can add any veggies of your choice)
  4. Saute well.
  5. Add 2 cups of water and cook the veggies covered.
  6. Add fresh sweet corn, peas and stir.
  7. Cook for 2 more minutes.
  8. Add sliced spring onion greens.
  9. Add salt, pepper pwd and sugar.
  10. Mix well and allow to boil.
  11. Turn flame to low and add corn flour paste. ( add 1 tbsp of corn flour with 1/2 cup of water and make a smooth paste)
  12. Stir well and turn off flame.
  13. Garnish with red chilly flakes and chopped coriander leaves.
  14. Rich n creamy delicious restaurant style healthy Vegetable soup is ready.
  15. Enjoy hot.

  8. Allow the ingredients to cool.
  9. Transfer to blender and grind to smooth powder.
  10. That's it...andhra style spicy paruppu podi is ready.

  • Fresh mint & coriander leaves - 1/2 cup
  • Salt to taste

Method

  1. Clean, wash and chop mutton liver to bite sized pieces.
  2. Heat oil in frypan.
  3. Add saunf pwd, bay leaf and saute.
  4. Add finely chopped onions and toss till transculent.
  5. Add ginger garlic paste and fry until the raw smell disappears.
  6. Add sliced tomatoes and cook until soft.
  7. Add turmeric pwd, red chilly pwd, coriander pwd, salt and pepper pwd.
  8. Stir well.
  9. Add mutton liver pieces and toss well with masala in high flame.
  10. Add freshly chopped mint & coriander leaves.
  11. Add 1 cup of water and cook mutton covered.
  12. Turn the flame to low and fry the mutton until the masala thickens.
  13. That's it ...traditional mutton liver pepper fry is ready.
  14. Garnish with fresh coriander leaves.

Ingredients

  • Gram dal (kadalai paruppu) - 1 & 1/2 cup
  • Keerai (spinach)  - 1 cup
  • Sliced onions - 1/2 cup
  • Cinnamon pwd - 1/4 tsp
  • Garam masala pwd - 1/4 tsp
  • Saunf (fennel) pwd - 1/4 tsp
  • Red chilly - 2 to 3
  • Garlic pods - 3 
  • Besan flour - 1 tbsp
  • Oil to deep fry
  • Salt to taste

Method

  1. Wash and soak gram dal (kadalai paruppu) in water for 2 hours.
  2. Drain water completely and set aside.
  3. Clean and wash keerai (spinach) and chop to fine pieces.
  4. Slice onions to small pieces.
  5. Add soaked gram dal to blender.
  6. Add cinnamon pwd, garam masala pwd, saunf, salt, red chilly and garlic.
  7. Grind to coarse batter without adding water.
  8. Transfer to mixing bowl.
  9. Add finely chopped keerai, sliced onions, besan flour and combine.
  10. Make the batter to small balls.
  11. Heat oil in frypan.
  12. Take one ball, pat it flat and drop in hot oil.
  13. Deep fry on medium flame.
  14. Flip it once in a while to ensure the vadas are cooked on both sides.
  15. Once the vadai is crisp and golden, remove in kitchen tissue.
  16. Irresistably delicious keerai vadai is ready.
  17. Enjoy this healthy snack along with piping hot cup of evening tea/ coffee.
