Vada Curry Recipe

Ingredients

To make pakodas (vada)

  • Kadalai paruppu (gram dal) - 1 cup
  • Saunf - 1/2 tsp
  • Red chilly - 1
  • Fresh coriander leaves
  • Salt to taste
  • Oil to deep fry

To make Vada curry:

  • Oil - 1 tbsp
  • Cumin - 1/2 tsp
  • Onion sliced - 1 cup
  • Ginger garlic paste - 1 tbsp
  • Green chilly - 2 
  • Fresh coriander leaves
  • Turmeric pwd - 1/4 tsp
  • Red chilly pwd - 1 tsp
  • Coriander pwd - 1 & 1/2 tsp
  • Fresh lemon juice - few drops
  • Salt to taste

Method

  1. Wash and soak kadalai paruppu (gram dal) in water for 2 hours.
  2. Drain water completely.
  3. Add it to blender.
  4. Add salt, saunf, red chilly and grind to coarse batter.
  5. Transfer to mixing bowl.
  6. Add freshly chopped coriander leaves.
  7. Mix well.
  8. Heat oil in fry pan.
  9. Drop the batter in batches.
  10. Deep fry in hot oil.
  11. Fry in medium heat until the pakoras are crispy and golden.
  12. Drain in kitchen tissue.
  13. Add the crispy pakodas to bowl and add 1/2 cup warm water to it.
  14. Heat oil in frypan.
  15. Add cumin and wait to splutter.
  16. Add sliced onions and saute.
  17. Add ginger garlic paste and toss.
  18. Add sliced tomatoes, green chilly and coriander leaves.
  19. Cook for few minutes.
  20. Turn off flame. Add it to blender and grind to smooth paste.
  21. Heat 1 tsp of oil.
  22. Add bay leaf, cardamom, cloves, cinnamon and curry leaves.
  23. Add freshly ground masala paste and stir.
  24. Cook for a minute.
  25. Add thick coconut paste and combine.
  26. Add soaked pakodas by draining water and mix.
  27. Cook covered for few minutes.
  28. Taste and adjust salt & seasonings.
  29. Squeeze few drops of lemon juice and turn off flame.
  30. Garnish with coriander leaves.
  31. Heavenly delicious vada curry is ready.
  32. It makes an ideal combo with idli, dosa, chapati etc.

SURA MEEN PUTTU / SHARK FISH PUTTU / EASY VIDEO RECIPE

Ingredients

  • Sura (shark) fish - 1/2 kg
  • Turmeric pwd - 1/4 tsp
  • Red chilly pwd - 1 tsp
  • Green chilly - 2
  • Oil - 3 tbsp
  • Sliced onions - 1 cup
  • Ginger garlic paste - 1 tbsp
  • Fresh coriander leaves
  • Salt to taste

Method

  1. Clean and wash shark (sura) fish thoroughly.
  2. Drain water.
  3. Take it in a bowl.
  4. Add turmeric pwd, salt and 1 cup of water.
  5. Cook covered for 10 mins or until done.
  6. Turn off flame and allow to cool.
  7. Peel off the skin and mash it by removing the middle bone.
  8. In a mixing bowl, add turmeric pwd, red chilly pwd and 1/2 tsp salt.
  9. Add cooked and mashed fish and mix completely.
  10. Let it marinate for 10 mins.
  11. Heat oil in frypan / kadai.
  12. Add finely sliced onions and stir.
  13. Saute until light brown.
  14. Add sliced green chilly and coriander leaves.
  15. Saute for 2 mins.
  16. Add marinated fish and toss.
  17. Toss in high flame for few minutes.
  18. Drizzle oil to the sides.
  19. Keep flame in low and roast the fish for 10 mins.
  20. Stir once in a while.
  21. Once the puttu is done, sprinkle freshly chopped coriander leaves.
  22. Turn off flame.
  23. Irresistably delicious traditional sura puttu is ready.
Enjoy hot with rice dishes or with roti.

  1. Slice onion, tomatoes and keep ready.

  3. Add red chillies and saute.
  4. Add sliced onions, tomatoes, saunf, garlic and salt.
  5. Saute for few minutes.
  6. Turn off flame.
  7. Allow the ingredients to cool.
  8. Add to blender and grind to smooth paste.

Ingredients

  • Sliced onion - 1 cup
  • Rice flour - 2 tbsp
  • Besan flour ( gram flour or kadalai maavu) - 1 cup
  • Butter - 1 tbsp
  • Red chilly pwd - 1 tsp
  • Hing / asafetida pwd - a pinch
  • Green chilly - 1
  • Crushed garlic pods - 4
  • Broken cashew - 2 tbsp
  • Curry leaves - a few
  • Fresh coriander leaves
  • Salt to taste
  • Oil to deep fry

Method

  1. Slice onions and keep ready.
  2. In a mixing bowl, add sliced onions, green chilly, curry leaves and mix.
  3. Add crushed garlic pods, broken cashewnuts and combine.
  4. Add butter, besan flour, rice flour, hing, salt and red chilly pwd.
  5. Add freshly chopped coriander leaves.
  6. Mix well without adding water.
  7. Cover it with lid and let it rest for 10 mins.
  8. The moisture let out by onions is enough to bind the mixture.
  9. Mix thoroughly.
  10. Heat oil in a fry pan.
  11. Add the onion mixture in batches as shown in video.
  12. Deep fry in medium flame.
  13. Flip it to ensure the pakoda is cooked evenly on both sides.
  14. Once the onion pakoda is crisp and golden, drain in kitchen tissue.
  15. Crunchy, yummy onion pakoda is ready.
  16. It makes an irresistable snack along with hot cup of coffee or chai.

Dry fish fry is always my favorite and love to have it as a side dish with hot onion sambar rice. This recipe is sooper simple that even beginners can give a try. The whole frying process will get completed in 15 mins. It makes a perfect non-veg starter dish or as a side dish for variety rice and curd rice. Ingredients

  • Nethili / dry fish - 1/2 kg
  • Oil - 2 to 3 tbsp
  • Turmeric pwd - 1/4 tsp
  • Red chilly pwd - 1 tsp
  • Pepper pwd - 1/4 tsp
  • Salt to taste

Method

  1. Clean and wash the dry fish (nethili) thoroughly.
  2. Drain the water completely.
  3. Add turmeric pwd, red chilly pwd, pepper pwd and little salt.
  4. Mix well. Let it marinate overnight or minimum 3 hours.
  5. Heat oil in frypan.
  6. Add the nethili along with masala.
  7. Cook in medium flame for 5 mins.
  8. Continue stirring once in a while.
  9. Reduce the flame to low and cook the nethili until crisp or approximately 15 mins.
  10. Once the nethili is done and cooked crispy & dry, turn off flame.
  11. Lipsmacking delicious nethili fry is ready.
 

It makes a lipsmacking combo with rasam, sambar, dal curry or with curd rice.

Ingredients

  • Mutton - 1/2 kg
  • Onion - 2
  • Tomato - 2
  • Turmeric pwd - 1/4 tsp
  • Red chilly pwd - 1 tsp
  • Coriander pwd - 2 tsp
  • Pepper pwd - 1 tsp
  • Ginger garlic paste - 1 tbsp
  • Oil - 1 tbsp
  • Pepper corns - 1 tsp
  • Red chilly - 2
  • Garam masala pwd - 1/2 tsp
  • Chicken masala pwd - 1/2 tsp
  • Fresh lemon juice - few drops
  • Salt to taste
  • Coriander & mint leaves

Method

  1. Clean and wash mutton pieces. Drain water completely.
  2. Add mutton to pressure cooker.
  3. Add sliced onion, mashed tomato, ginger garlic paste, turmeric pwd, red chilly pwd, coriander pwd and salt.
  4. Add 1/2 cup of water and mix well.
  5. Close the lid and pressure cook till mutton is done.
  6. Heat oil in fry pan.
  7. Add peppercorns and red chilly.
  8. Saute for a minute.
  9. Add sliced onions, green chilly and saute until transculent.
  10. Add coriander pwd, garam masala pwd and chicken masala pwd.
  11. Mix well.
  12. Add cooked mutton along with water.
  13. Stir and allow to cook until masala thickens.
  14. Add freshly ground pepper pwd.
  15. Squeeze few drops of lemon juice.
  16. Turn off flame.
  17. Garnish with sliced coriander leaves.
  18. Spicy hot delicious Mutton Pepper fry is ready.
  19. Enjoy with sooper soft chapati, roti, paratha or rice dishes.

Ingredients

  • Spinach chopped - 1 cup
  • Besan flour - 1/2 cup
  • Rice flour - 1 tbsp
  • Turmeric pwd - 1/4 tsp
  • Red chilly pwd - 1 tsp
  • Coriander pwd - 1 & 1/2 tsp
  • Cumin pwd - 1/2 tsp
  • Garam masala pwd - 1/2 tsp
  • Ajwain - 1/4 tsp
  • Baking soda - a pinch
  • Chopped coriander leaves - 2 tbsp
  • Sliced green chilly - 1 or 2
  • Crushed garlic - 3 to 4
  • Broken cashewnuts - 2 tbsp
  • Ghee - 1 tsp
  • OIl to deep fry
  • Salt to taste

Method

  1. Wash and chop spinach to fine pieces.
  2. Add spinach to mixing bowl.
  3. Add besan flour, rice flour, turmeric pwd, red chilly pwd, coriander pwd, cumin pwd, garam masala pwd, ajwain, baking soda, salt and chopped coriander leaves.
  4. Add sliced green chilly, crushed garlic, broken cashewnuts, ghee and mix well.
  5. Sprinkle water little by little and knead to thick dough.
  6. cover and allow the dough to rest for 10 mins.
  7. Heat oil in frypan.
  8. Add the spinach dough in hot oil in batches.
  9. Take care not to overcrown the oil.
  10. Deep fry in medium flame.
  11. Once the pakoda turns golden and crispy, drain in kitchen tissue.
  12. Crispy delicious spinach pakoda is ready.
  13. It makes an excellent tea time snack.

Ingredients

To marinate

  • Boneless chicken - 400 g
  • Egg - 1
  • Red chilly pwd - 1 tsp
  • Oil - 2 tsp
  • Corn flour - 2 tbsp
  • Salt as needed

To make gravy

  • Onion cubed - 1 cup
  • Sliced green chilly - 2 to 3
  • Grated garlic - 1 tsp
  • Grated ginger - 1 tsp
  • Sliced capsicum (green, red & yellow) - 1/2 cup 
  • Chopped spring onions - 1/4 cup
  • Vinegar or fresh lemon juice - 1/2 tsp
  • Soy sauce - 1 tbsp
  • Tomato ketchup - 2 tbsp
  • Pepper pwd - 1/2 tsp
  • Red chilly pwd - 1/2 tsp
  • Sugar - 1/2 tsp
  • Corn flour - 2 tbsp
  • Fresh corinader leaves
  • Salt to taste

Method

  1. Clean and wash boneless chicken.
  2. Drain water completely.
  3. Add beaten egg, salt, red chilly pwd, oil and corn flour.
  4. Mix well with chicken.
  5. Allow to marinate for 2 hours.
  6. Slice all veggies and set ready.
  7. Heat oil in frypan.
  8. Drop the marinated chicken in hot oil.
  9. Deep fry until the chicken is crisp and golden.
  10. Drain in kitchen tissue and set aside.
  11. Heat 1 tbsp of oil in frypan.
  12. Add grated garlic and ginger.
  13. Toss for a minute.
  14. Add sliced green chilly.
  15. Add cubed onions and toss till light brown in high flame.
  16. Add cubed capsicum and fry.
  17. Add soya sauce, tomato ketchup and vinegar.
  18. Mix the contents well.
  19. Add sugar, pepper pwd, red chilly pwd and little salt. (take care the soy sauce has salt in it)
  20. Mix corn flour in 1/2 cup of water and make it to thick paste.
  21. Pour the corn flour paste to the gravy and cook in high flame.
  22. Add 1/2 cup of water and adjust the gravy to desired consistency. (for chilly chicken gravy version)
  23. Add crispy fried chicken to the gravy and toss in high flame for a minute.
  24. Turn off flame.
  25. Garnish with chopped coriander and spring onions.
  26. Restaurant style spicy chilli chicken is ready to relish.
  27. Enjoy hot with fried rice, noodles, biryani or roti dishes.
