Spicy delicious Onion Uthappam is one of the very famous South Indian breakfast recipe. It tastes divine with a tempting aroma of onions & veggies over a thick pan cake prepared with fermented rice lentil batter. This super tasty uthappam makes a healthy option for your kids lunch box also. Its very filling for the stomach and healthy too. You can learn how to prepare Uthappam with this simple video recipe!

Ingredients

To prepare dosa batter:

Par boiled rice or idli rice - 3 cups

Urad dal - 1 cup

Fenugreek seeds - 1 tsp

Salt to taste

To make Uthappam:

Dosa batter - 1 cup

Sliced onion - 4 to 5 tbsp

Green chilli - 1

Grated carrot - 2 tbsp

Coriander leaves chopped - 1 tbsp

Chopped cashewnuts - 1 tbsp

Chopped tomato - 2 tbsp

Sambar pwd or red chilli pwd - 1/2 tsp (click here to view how to make sambar pwd at home)

Cumin pwd - 1/2 tsp

Salt to taste

Oil to drizzle

Instructions

1.

To prepare Dosa Batter ( Click here to view the stepwise recipe to make dosa batter)

2.

Wash & soak 3 cups of idli rice (parboiled rice) in water.

Soak urad dal and fenugreek seeds in water for 6 hours.

4.

Grind it to smooth paste and add salt.

5.

Mix well with hands.

6.

Let the batter ferment for minimum 10 hours.

Mix well. Dosa batter is ready!

To prepare Uthappam

Heat a griddle.

Grease with oil.

Pour 2 ladle full of dosa batter and spread to thick round shape as shown in video.

Drizzle gingely oil to sides.

13.

Sprinkle finely chopped onion.

14.

Sprinkle sliced green chilli, coriander leaves, grated carrot, chopped cashewnuts, tomato.

15.

Sprinkle salt, cumin pwd and sambar pwd. ( sambar pwd gives good aroma & flavor to uthappam)

16.

Drizzle oil on top.

17.

Cook it on low flame for 3 mins.

18.

Flip it to other side and cook for a minute.

19.

Remove from griddle.

20.

Delicious and spicy south Indian style Onion uthappam is ready.

It pairs up excellent with sambar & chutney.
