Today's special recipe is a deep fried snack made of urad dal and pepper corns. Its very popularly known as Milagu Vadai or Anjaneyar Kovil Vadai. It got its name as its a traditional prasadam offered in Anjaneyar temple all over the world. In Tamil, its famous as மிளகு வடை. I usually prepare it for Hanuman Jayanthi festival and we would make a vada malai (garland) with this snack! Also it serves as a best healthy delicious Indian recipe served as a tea time snacks. I love to munch milagu vadai on cold rainy days along with garma garam masala chai:)

Ingredients

Urad dal - 1 cup

Rice flour - 2 tbsp

Crushed peppercorns - 2 to 3 tsp

Salt to taste

Oil to deep fry

Instructions

1.

Wash and soak urad dal in water for minimum 1 hour.

2.

Drain water completely and add urad dal to blender.

3.

Add salt and blend to coarse thick paste. ( grind without adding water)

4.

Transfer to mixing bowl.

5.

Add crushed pepper, rice flour and 2 tsps of oil.

6.

Mix completely.

7.

Take a small ball of the batter.

8.

Grease a butter sheet with oil.

9.

Place the ball and cover it up with another butter paper.

10.

Press it flat with any vessel to thin disc as shown in video.

11.

Make a small hole at the centre.

12.

Wet your hands with water and take the thin disc.

13.

Meanwhile heat oil in frypan.

14.

Drop the flattened batter in hot oil carefully.

15.

Fry 4 to 5 vadas in a batch.Take care not to overcrowd the oil.

16.

Deep fry until the milagu vadai turns crispy and golden on both sides.

17.

Drain from oil in kitchen tissue.

18.

Irresistably delicious spicy milagu vadai is ready.

19.

Store it in air tight container for long shelf life.
